Edgewood View Edgewood Country Club
January was a very busy and productive month for the Edgewood Staff. During the first week of the month while the Club was closed for yearly maintenance, we were successful at accomplishing many needed projects throughout the property. During this same time frame, the completion of the squash court flooring renovation/replacement took place. Many members have commented on how nice the new flooring is performing from a playability perspective. I’m also hearing members say their legs and body do not seem to be as fatigued once they finish their matches. 100% of this renovation was made possible through donations gathered from members. Once again, thank you to all who contributed to this specific project. As I write, the Edgewood Country Club’s food and beverage team is in the midst of participating in our second Charleston Restaurant Week event. Much like last year our facility has proven to be a very popular choice for many in the area to experience. In five nights we are projecting to serve over 350 guests! We have received multitudes of wonderful comments from our guests with many expressing their excitement and gratitude to have the chance to experience our dining facilities. On a side but connected note … during this event we have received many membership inquiries and have given out several membership packets to perspective new members! As we move into February please keep ECC in mind when making your Valentines dinner plans with your sweetheart. Chef Dennis has planned a fantastic evening filled with wonderful food ... With Valentines falling on a Friday this year we will fill up quickly! Call early to make your reservation before this limited seating event fills up! As discussed in last month’s article, Dr David Clayman, ECC’s Food, Service & Entertainment Committee Chair, created a sub-committee specifically to focus on Member Events. The committee, made up of Dr. Clayman, Beth Robey, Rachel Securro-Holcomb, Joy Doss, and Cynthia Stump met during January. Many great events are being discussed but more planning still needs to happen. The goal is to meet again in February and finalize some additional events. You will note further into this publication a yearly calendar of events for the entire Club is outlined. This preliminary outline is a work in progress with expectations of adding events in the coming weeks. We will update this calendar in the March newsletter. Until then, I look forward to seeing you at Edgewood throughout February. Shane

Lots of events, and menu changes going on this month at ECC! Come in and try the new lunch and dinner menu add-ons. Be sure to look out for a Grill menu
overhaul in March also, with new burgers and sandwiches. As we all have new goals and desires to be more physically fit as part of the New Year’s resolutions, I
decided to help promote that this month. Eating lighter doesn’t have to mean depriving yourself. Here’s a great recipe for an entrée-salad combination that will tantalize your taste buds and leave you content. The slightly hot and sweet flavors
of the soy and wasabi vinaigrette drizzled over a grilled swordfish with baby salad greens and roasted potatoes make a wonderful lunch or dinner entrée.
Roasted Vegetable and Garbanzo Croquette’s Seasoned and roasted medley of vegetables, blended with garbanzo beans rolled in panko breadcrumbs, and fried to perfection. Served

FROM THE SUPERINTENDENT
The greens have been mowed and rolled already in January. This will continue as long as the weather stays mild. The bunkers edging and shaping back to their original size and shape has been completed and sand will be installed in March. I would like to thank Jeffords corporation for the use of the Bobcat excavator which made easy work of the bunkers. Jefferd’s Corp. has some great equipment to make the job easier! Now we will finish up equipment repair and maintenance and turn our attention to tree trimming and limb removal. Spring is just around the corner! Kenny Eggleston Golf course superintendent
January was not as cold as it could have been and we have had very little snow. There were, however, some strong wind storms which blew down 2 large pines 1 fruit tree and a lot of tree limbs laying around the course.
