Sun Dried Tomato and Parmesan Crumbed Veal Strips Serves 2 Ingredients

• ¼ Cup sun dried tomatoes, finely chopped

• ¼ Cup finely chopped fresh herbs. Parsley, Basil.

• 1 Cup fresh Breadcrumbs

• ¼ Cup grated Parmesan cheese

• 2 veal fillets, cut into thick strips

• ½ Tbs olive oil

• 2 eggs

Combine sundried tomatoes, fresh herbs and Slice veal into thin strips. Bread crumbs.

Lightly whisk egg and coat veal strips with egg. Press bread crumbs into veal and place on oven Tray lined with baking paper.
