Divya patel Assignment 1 Observation SUBWAY Rules and conventions: SUBWAY eat fresh is an American fast food franchise, I usually go once a week to my aunt subway and help her clean up. It is located in downtown charlotte. It is a pretty busy place during lunchtime. There are rules and instruction that are followed by employees. They make sure to wash their hands frequently after touching something or taking a different order. They have to ensure to clean the table and counters. Another thing employees have to keep in mind is that, they have greet the customers and ask them what they want in their sandwich have to be careful listening to the customers. In addition, they have to make sure everything is ready before the customer’s walks in such as all the vegetables and meat are ready to serve and cookies and chips are prepared to hand to the customers. While making the sandwich they make sure put limited amount of quantities in their food, Moreover, in the morning they have to make sure to check the temperature of the refrigerator to record on notebook and put label on every opened bag of vegetable, meat and cookies. While, during catering they have to checkmark the label of ingredients that the customer wants in their sandwich. All employees are responsible of QSCH” stands for QUALITY, SERVICE, CLEANLINESS, and HOSPITALITY. Lastly, the dress code for both man and women All team members must wear a full uniform at all times. They can wear black khaki pants and no jeans are allowed. They should tie their hair or a cap should be worn while making the food. Any makeup worn must be light and dangling jewelry is not allowed. Smoking is not permitted in any area of the shop and gum chewing is not acceptable while on duty. Actors- Actors are people who play significant roles within a figured world. Actors in subway would be the employees and customers following the rule and the conventions. Artifacts- an object made by a human being, typically an item of cultural or historical interest. Artifacts in subway would be cups, soda machine, toaster, register, tables, and chips stand. Discourse community- These are groups, which share common interests and techniques within in the figured world. Discourse community at subway would be the employees and the customers working together as they communicate with each other. Literacy practice- Literacy practice is combining all the actors; artifacts and discourse community that include the construction of knowledge, values, attitudes, and beliefs of working together. Literacy practice at subway would be the customers, employee and values merging together in a figure world.

Divya  patel  Assignment  1  Observation  -­‐  SUBWAY   The Observation 1- Subway 12:00pm – The employees was ready to make sandwiches for customers. One customers walked in asked for turkey sandwich, right after another customers walked it and asked for a meat ball sandwich. Employees asked if they want to toast the bread and also asked for the ingredients. They started to have more customers and some people were sitting and eating at subway and some people were taking they meal somewhere else. 12:05 pm - There were a lot of Customers at subway during this time. It was actually lunchtime and mostly the majority of people were business type. Moreover, the one of the employees had to clean the tables. While on the other side at the counter two employees and manager were helping the customers. I saw on of the customers used coupons as I was sitting I could here things what the customers is asking for. 12:10 pm– This time it was the same environment but few more customers’ including the other one present. It was actually started to make a big line inside the store. They employers kept on going with customers they were multitasking because they would take two customers at a time and remember they order. 12:15 pm- Two kids walks with their mom and they ask for kids’ meal but I have notice that their mom picked the ingredients for them. On going with others customers they ask for extra thing like napkins and a small cup of water, which the subway people don’t charge for. 12:20 pm- The customers were getting lesser and many people were sitting talking after they were done eating their food. Employers were in the back organizing things. A customers walks and but no one was at the counter I was going to tell the employee to come out but they got out by looking the camera and also hearing the open door ring sound. 12:25 pm- there wasn’t a lot of customers I saw couple of people getting up and getting out and some of them wear also getting refilling their drinks. The manager got a phone class; I assumed that was for catering because she was checklist in from of her. Meanwhile many few customers wear watching TV and the two kids were eating their meal. 12:30 pm- at this time, the employee was moping the floor and another one was cleaning the table. The two kids on the other side wear playing games on their iPod. The manager was taking out money from the register and cleaning it. There were just few customers at the counter and was waiting for their food to be ordered.

Divya  patel  Assignment  1  Observation  -­‐  SUBWAY   Observation 2- Subway 2:00pm – This time change location inside the subway. I saw a huge change; there were not a lot of customers coming at this time. I was sitting and observing the employees most of the time. I was actually hungry at that time so I got myself a sandwich. While the employees was making my sandwich two customers walks in was just looking at the menu. 2:05pm – After getting my food, the two customers was still taking time deciding what there going to eat, so the employer told them to let her know when they’re ready, by the time they decided one customers walks in and the two people let him go first. After few second the two people finally decided to order and begin to tell the workers. 2:10pm– While I was eating my food, another customers come to ask directions, but he didn’t get any food. The two people finally had their food and were eating at the table. One thing I noticed about them is that they both had muscle. I can tell because they didn’t take any drinks except water. 2:15pm- Customers didn’t really showed up for up to five minutes but the employers were just working and cleaning thing, there was a storage for bread so they started to make more bread and but lying they up in the tray and putting it in to the oven. 2:20pm- while the bread was on baking process, the employers came out to check for sweet tea, she cleaned the tea maker and added more sugar and tea. Later on, she went back to the counter to keep an eye on the bread. Then she went back in the room to wash the containers. 2:25pm – There was no customer coming so she decided to wash the container in the back, one of the other customers was putting the vegetables in to the fresh containers. She took put more tomatoes, lettuce, bell pepper and onions. She went in to front and started cleaning tables with sanitizers. 2:30pm- after, she finished cleaning the table, since there were no customers coming so she made her own food, and told the other employer that she going to eat and took her break time. A customer walked in while she was eating but the other employer took care of them. Observation 3- Subway 10:00 am – This time I came in the morning, the store actually opens up at 9:30 am but as I came in I was actually inside the counter and watching the employer do their work. They first wore the apron and pull there hair back, then they also put a cap on for safely and lastly they washed their hands with soap. The first chore they did was to take out all the ingredients from the freezer and put it at the back od counter and take out all the empty container in front of them.

Divya  patel  Assignment  1  Observation  -­‐  SUBWAY   10:05 am – Moreover, one of the employees was taking out cookies and she started to place them in the pan and put them the oven at a right temperature. She was doing the same thing with the breads. She stated to place them and put them in the over at a right temperature. On the other side, another employers was making meatballs, she put them in the oven to warm them. 10:10 am – There was no customers that walked in but all the employees started to add all fresh vegetables in to the container and they started placing them at the counter, while a customers walk in one of the employees took care of it while others were working. 10:20 am -Customers didn’t really showed up for up to five minutes but the employers were just working and cleaning thing, there was a storage for bread so they started to make more bread and but lying they up in the tray and putting it in to the oven, soon after they also checked the bathroom and tables to make sure it cleaned for customers to used it. 10:25 am – Moving on to the next task they took out the old containers and put them near the sink. One of the employees started washing them with warm water. On the other side another employee was cleaning the knives and washing them with warm water. She also checked if they need more sauces in bottle. In addition she also checked if chips need to place in the rack, she saw few missing so she put extras on the rack. 10:30 am – after putting chips she started making sweet tea, she took the container out and washed with water and stated to measure the right about of sugar and tea. Later on, one customer walks in and an employee started making sandwiches for them. After a while few other customers stated to come and that’s how their day stared with few customers. Interview questions (The manager) 1. How the environment is like while working? - The environment is mostly busy with on going customer’s everyday especially during lunchtime. 2.What a normal day according to you? Every signal day is normal as lunchtime being busy and the rest time is just few customers. 3. What kind of task do you have to do daily? Basically, being a manager I have to take of things, such as if the tables are clean, the counter are organized, all the ingredients are there. 4.What kind of music do you play in stores? We usually play instrumental music that calms down the customers.

Work it always tiring but with interacting and meeting with all customers you don’t really feel your working. 7. How do you deal with rude customers? I barely see rude people at my store but if there is any I usually take it in a clam way. 8. How do you interact with different people everyday? She loves talking to people and make them happy by making food. 9. How do you keep things organize? The best way for me to organize is to keep checklists that actually help me keep on going with my daily work. 10. What is the active time the day? I would probably say mornings and lunch time because time just pass by and you don’t even feel it.
