Key Terms:

Slaughter - Dresses live animals

Process - Further fabricates Meat and/or Poultry Products derived from dressed

carcasses

Raw Ground - grinds raw products, such as hamburger, fresh sausage

Raw Not Ground - produces cuts of meat and/or poultry products, such as steaks,

roasts, pork chops, chicken breasts

Cooking - produces Ready-to-Eat meat and/or poultry products by the application

of heat, such as barbecue, chili, cooked sausages

Curing - produces meat and/or poultry products preserved by salt, such as corned

hams, side meat, bacon.

Drying - produces meat and/or poultry products preserved by dehydration, such as

beef jerky, dried sausages

Smoking - produces meat and/or poultry products seasoned / cooked by theapplication of smoke derived from hardwoods, sawdust, etc., such as smoked

sausages, smoked hams
