weekend, at least, the decision is made easier as the best of the East End's bounty—from top restaurants and chefs to leading wineries, breweries, purveyors and more—are brought under one roof with Dan's GrillHampton and Dan's Taste of Two Forks.

Now entering its fourth year as the leading foodie festival in the Hamptons, the weekend at Sayre Park in Bridge-hampton will again celebrate our culinary culture with two evenings all served up under the new moniker "Dan's Taste of Summer."

"The phrase itself excites me," says Nick & Toni's Execu-tive Chef Joseph Realmuto, who has participated in every

"The first thing that pops into mind is the great products like heirloom tomatoes, corn, lettuces and, of course, the great seafood. We are surrounded by some of the best farms—like Balsam, Quail Hill, Amber Waves Farm—who have the most unbelievable vegetables, besides being able to grow our own right behind Nick & Toni's.

"Also the freshness of the fish that hits the back door is the best quality one could ask for, and now we have Dock to Dish, which has opened the doors to availability and freshness," Realmuto adds. "What more could a chef ask for?"

pits eight New York City chefs against eight of their counterparts from the East End in a combination of heated cooking competi-tion and tasting event. As GrillHampton guests stroll the tent, they get to watch 16 grilling gurus at work, and they also get the opportunity to indulge in the chef's creations and vote for their favorite food of the night.

A panel of food-savvy judges will also be voting their top dishes, just as they did last summer when Rumba Rum Bar's David Hersh took home the People's Choice honors, New York City's Elizabeth Karmel of Hill Country Barbecue won Judges Pick, and Team Hampton reigned supreme overall. Hersh and Karmel will be back to defend their titles, but they'll be facing a hungry lineup of new chefs in addition to those returning from the first battle.

"Revenge is sweet," says Billy Oliva, Executive Chef of Delmonico's of Southampton. He will be coming back with victory on his mind, and also a sense of anticipation shared by the guests who look forward to seeing chefs from acclaimed restaurants up-close and personal. "[A] great part of these events is getting to see our returning custom-ers and interact with them in fun and unique settings," Oliva says.

Guests at GrillHampton this year can look forward to meeting the host of the epic grilling battle—Robert Irvine, star of Food Network's Restaurant Impossible. "It's going to be a great night—lots of fun, great food. I love the idea of the competition, of the chefs having a good time and still bringing out the best in each other," says Irvine, who's known for inspiring chefs to always bring their A-game.

"It's like the Rolls-Royce of food under one tent," said Zakarian, who has been balancing his new role as Culinary Director for The Plaza between his role as Chef/Partner of The Lambs Club and various TV duties.

In addition to the dozens of restaurants, Taste of Two Forks also showcases the abundance of local artisanal purveyors that help make the East End a true foodies paradise. Participants will include Amagansett Sea Salt Co., Anke's Fit Bakery, Hampton Coffee Co., and Joe & Liza's Ice Cream. To wash down all the delectable treats, East End-based wineries, including Bedell, Castello di Borghese, Jamesport, Jason's, Lieb, Macari, Martha Clara, One Woman, Palmer, Raphael and Suhru, will be pouring.

T he craft beer explosion has taken the nation by storm—and despite its reputation as a wine region, Long Island has been no exception. Both forks have established their own craft breweries,

brewpubs and artisanal beer stores in recent times, and this summer, the draft list is looking more varied than ever.

R ive rhead’s f i r s t b rewery, Long IreLand (longirelandbrewing.com), will be celebrating its fifth anniversary this year by releasing their annual Summer Ale. “It’s a golden ale and it’s brewed with Pilsner malt, wheat malt and dried lemon peel, so it’s got a nice little citrus hint in the back of it that’s light and crisp,” says Long Ireland co-founder Greg Martin, noting that it will be available in six packs of 12 oz. bottles this year. Long Ireland will also have its flagship Celtic Ale and popular Breakfast Stout available for the drinking. The tasting room is open Thursday and Friday from 3–7 p.m. and Saturday and Sunday from 1–6 p.m.

Also turning five this year, greenPorT Harbor brewIng (harborbrewing.com) is planning to mark the occasion

with a grand opening party at their new Peconic location on Saturday, July 12 from 3–8 p.m., featuring three bands and local food trucks. While the brewery will be up and running by July, the new space will be far from complete.

“The production space will be operating, and we will be conducting tours, so people will be able to see the system in it’s completion,” says co-founder Rich Vandenburgh. “The tasting room will be open and functioning, albeit in a kind of a rustic, initial-stage setting.” A larger brewery space means more variety. “With the opening of the bigger production brewery, we’re going to be using the Greenport space as a pilot brewery for smaller, more experimental beers,” says co-founder John Liegey. “It would be great to build a little bit of a treasure chest of beers for the summer and for the party.” Greenport Harbor released their Summer Ale in May, which will be followed by a Citrus IPA in June, and their Anniversary Ale in time for their celebration. They’ve also put out their popular Hopnami Double IPA, which hasn’t been seen in more than two years.

The summer of celebrations continues with Riverhead’s Crooked Ladder brewIng ComPany (crookedladderbrewing.com), which is planning its first anniversary party for July. In the mean time, Crooked Ladder’s brewers will be kicking off the season with their summer series of beers. The first beer in the series is the Summeritis, a golden ale brewed from Crystal Hops, giving it a crisp, citrus flavor that’s perfect for a hot day. “I’m planning, for one of the months, on doing a Hefeweizen, probably in July,” says Crooked Ladder’s co-founder and head brewer Duffy Griffiths, “and then a Belgian witbier following that, just for something a little bit different.” (Read more about CLB on page 80.)

The newest brewery to hit the scene is Riverhead’s mousTaCHe brewIng ComPany (moustachebrewing.com). Founded in 2012 and named for owner Matthew Spitz’s iconic handlebar moustache, the brewery carries a wide range of styles. Spitz and fellow owner, his wife Lauri, pride themselves on their revolving menu of craft beers made from fresh, local ingredients. This summer, they

will be featuring their Mojito Pale Ale, which is a pale ale brewed with fresh mint and limes.

Also founded in 2012, monTauk brewIng ComPany (montaukbrewingco.com) is making waves with its cans-only Driftwood Ale and Summer Ale, both of which may earn lucky buyers a token redeemable for a free tasting at the brewery itself. Founder and brewer Vaughan Cutillo tells us that the brewery will be featuring live patio music every Saturday throughout this summer, alongside numerous art openings in its renowned Gallery Taproom (including a July showing of photographer Daniel Russo’s work).

Southampton’s only local brewery, the souTHamPTon PubLICk House (publick.com) maintains its status as a highly popular brewpub while also exporting its celebrated beers nationwide. The Publick House will continue to offer All Night Friday Happy Hour throughout the summer (beginning at 10 p.m.), and currently boasts its Imperial Porter and Biere de Mars on tap alongside its year-round offerings.

Breweries are popping up all across Long Island, and both forks boast their own local favorites. I visited Crooked Ladder Brewing Company in Riverhead and the Southampton Publick House in order to see what the buzz is about (and maybe get one for myself).

The souThampTon puBLiCk house

The southampton Publick House is a friendly neighborhood staple, and it offers a wide range of food, beer and cocktails to keep its patrons in high spirits. This brewpub only serves its own beer (brewed in-house and available both on draft and bottle-distributed by Manhattan Beer), but no one’s complaining.

Bartender Chris Brady started me off with the Publick House’s signature tasting flight, featuring five year-round favorites and three seasonal brews. The flight began with the Double White Ale, Publick House’s flagship

brew, a witbier with a spicy aroma and a sweetish orange flavor. Owner Don Sullivan assured me that this beer paired especially well with the seared tuna salad (served rare with a sesame crust and wasabi dressing), which I sampled and found to be a perfect complement to the Double White.

Burton IPA is a tribute to the original English-style India Pale Ales, drastically different from the hop-loaded zest of American IPAs. The brewers replicate the water from famous English brewing town Burton-on-Trent by adding calcium, and use only English-style hops in order to achieve the desired flavor. Finishing on a bitter note, this was noticeably drinkable (as IPAs go). Next up was Keller Pils, a German pilsner with a light, malty aroma and a conspicuous taste of noble hops, followed by the Secret Ale, a copper-colored ale, which was malty on the nose and maltier on the tongue.

My final year-round brew of the day was Montauk Light, a low-calorie

lager named for the lighthouse at Montauk Point. Though light beers are not my preference, I found this one to be refreshing, easily drinkable and superior to its domestic market competitors. Moving towards the seasonals, I next tried the May Bock, a Maibock designed for late spring drinking. It was heavy, strong, and overwhelmingly malty, making it perfect for those days when you want to feel a little warmth from your beer.

NYDP (New York Double Pale Ale) was a savory brew with the hop character of an IPA but the balance of a traditional pale ale. I definitely wouldn’t have minded a few more pints of this one! Instead, I closed out my tasting experience with the Imperial Porter, with which I was already familiar—the thick, heavy malt and high alcohol content of this beer have led me to buy more than a few bottles in my time.

Aside from these draft beers, the Publick House also carries several high-quality aged beers in 750ml bottles, available for take-home

purchase or drinking at the bar. These include Abbot 12, a strong ale with notes of dark rum, Cuvèe Des Fleurs, a specialty ale flavored with numerous edible flowers, Saison Deluxe, a complex farmhouse ale and Grand Cru, a heavily spiced old world ale. The spring seasonal Biere de Mars and autumn seasonal Pumpkin Ale are also still available in bottles for the drinker with a craving for a sweet-spice or pumpkin brew.

I spoke with brewmaster Evan Addario to get a preview of Publick House’s upcoming seasonal brews, and I wasn’t disappointed. The Summer Blonde is an abbey single ale which is already available in bottles at local beer distributors, but won’t be seen on tap until summer begins in earnest (likely the first of July). Next up will be the crisp, clean Vienna Lager, followed by a selection of saisons brewed with various herbs. Sometime this summer, Saison Deluxe will be available on draft and, in August, Addario plans to release a black raspberry wheat beer, though he says he hasn’t worked out all the details of that one yet. This summer is looking delicious at Southampton Publick House—stop in and see what they’re coming up with next.

Crooked Ladder Brewing Company

Jammed into a cranny of Riverhead’s hectic main drag, Crooked Ladder brewing Company is serving up a cold glass of East End innovation. Space is at a premium inside this brick-walled brewery, where the bar and the brewing equipment occupy the same room, but the crowd of patrons gives the place a friendly vibe as they sit, stand and watch television, and the draft beer flows well into the evening.

Bartender Gia Geraghty smilingly served me the “sample flight”—eight consecutive small pours of the range of beers currently on tap at Crooked Ladder Brewing (CLB).

assured me that these eight are not all CLB has to offer: its seasonal Summeritis ale is soon to come, followed in time by an Oktoberfest brew, a pumpkin ale, a Christmas beer, an amber IPA dubbed the “Midwinter Warmer” and eventually the Innisfada, a March beer brewed specially for St. Patrick’s day and named after the Gaelic translation of “Long Island.” Griffiths added that the brewery, which will celebrate its one-year anniversary this July, will be looking to use locally-grown hops in the fall, “when we start doing wet-hopped beer.” (Wet-hopping refers to the process by which vibrant, fresh-cut hops are added to a brew, rather than dried pellet hops that are shipped from afar.)

The first brew, a German Kolsch, was light, mild and refreshing, with a little hoppy edge to it and a fizzy mouthfeel. Kolsches are not my preferred style, but this was definitely on the higher end of the spectrum. The next—the cleverly named 9.0 Brew 1.0—was a well-balanced California Common, with a good dose of hop bitterness. The Gypsy Red, Crooked Ladder’s flagship beer, was defined by its ending—a delicious caramel aftertaste that kicked in right when it was most needed. (Gypsy Red is CLB’s most popular beer, and is sold year-round). I hit the halfway point with Shinnecock Bock, a highly alcoholic Maibock which holds the title of “brewers’ favorite beer.” This one, though a tad thick for my taste, was a stellar representation of the style, and its heaviness is perfect for a rainy day at home.

The second half of the tasting, which took a turn towards the dark and hoppy, was nothing short of fantastic. Ponquogue Porter kicked off this delight, proving itself to be full, rich, and somewhat hoppier than you’d expect for a porter, adding an unexpected and satisfying kick. Next,

I sampled the Sundown Stout, a sweet and smoky brew featuring maple and rye flavors. This particular beer was first brewed in conjunction with Chicago-based DryHop Brewers, but CLB liked it so much, they made it again on their own! (This one was my favorite of the evening. As a personal testament to the merits of Sundown Stout, I snagged a growler full to take home. Did I mention that CLB offers growlers, half-growlers, hydroflasks, pint glasses, and merchandise? Now I have.)

My penultimate sample went by the prolix name of Capone Meets Gotti Black IPA (another combined effort with DryHop Brewers), but proved itself to be substantially more to-the-point than its moniker—this beer is an assault on the taste buds, in the best possible way. Brewed with 10 pounds of hops, Capone Meets Gotti is on the sour side of the scale and much lighter than you’d expect of a standard black IPA. I closed the deal with a brew I was already familiar with—the locally lauded 70 West IPA. This beer’s name is doubly significant; it is a West Coast IPA which boasts a rating of 70 IBUs, and 70 West Main Street is the address of its parent brewery. Featuring four distinct hop varieties, this popular and highly available brew is extravagantly bitter, and merits a second glass.

Crooked Ladder’s beers are currently available in approximately 100 establishments across Long Island, so don’t just take my word for it. Grab a pint.

seasonal vegetables. Fresh picked. Straight from the garden. Right off the vine. Still damp with the dew. Still warm from the sun.

However you choose to say it, there are few food ideas that have caught on in recent years more completely than farm-to-table cooking. High-end diners who used to demand truffles direct from France now demand to know that their arugula was grown close by. High-end restaurant chefs who used to scour distant shores for rare or exotic ingredients now sing the praises of fresh, locally grown cauliflower. And those chefs, rather than basing their menus on food they’re flying in from remote places, are basing their menus on food that’s growing in their own area.

Or maybe on food that’s growing right outside their kitchen door. The latest sign of the increasing interest in the local and seasonal is the return of the traditional kitchen garden. In the last few years, several Hamptons restaurants have begun to devote time and their own outdoor space to agriculture, planting herbs and vegetables and taking the idea of farm-to-table to the next level. It’s a trend that perfectly combines the area’s farming history with its current status as a destination for foodies.

One of the more visible kitchen gardens is the one at Fresh Hamptons, chef Todd Jacobs’ celebrated Bridgehampton restaurant. Already in this early part of the season, his tidy kitchen garden, planted in neat raised beds around the front yard of Fresh Hamptons on the Bridgehampton-Sag Harbor Turnpike, provides him with fresh Italian parsley, mesclun and swiss chard. As the season moves on, if all goes to his gardener Phil Manzo’s plans, Jacobs will be providing his patrons with an abundance of garden delights—among them two different kinds of cucumber as well as heirloom burgundy tomatoes, three varieties of beans including exotic Japanese asparagus beans and fresh edamame—all cut within hours of serving and bursting with flavor.

Manzo observes that kitchen gardens allow restaurants to serve items that really aren’t available otherwise. “Those particular heirloom tomatoes aren’t necessarily available through wholesalers, and so people who eat at Fresh Hamptons are going to get something they can’t get elsewhere. And these are going to be really good tomatoes.” Manzo also points out that when the Fresh Hamptons garden is fully grown, it will be a unique and beautiful sight along the Turnpike.

Of course, planting and tending the garden is time-consuming and involves its own specialized skills—even the most enthusiastic chef wouldn’t have the time and energy to run a restaurant AND a garden. Like Phil Manzo at Fresh Hamptons, Jeff Negron helps plan and tend kitchen gardens for restaurants. Negron began planting and tending kitchen gardens for area restaurants in 2009, when

he founded The Growing Seed, his company that specializes in consulting for and providing on-site vegetable gardens for restaurants and schools. Negron sees kitchen gardens catching on at restaurants all over the East End.

“It’s gaining a big foothold. Even if it’s just an herb garden, lots of restaurants are investing at least a small area in growing what they can.”

One of the gardens Negron maintains is the sizable kitchen garden at the Topping Rose House in Bridgehampton. In addition to providing freshness, the garden can help supplement what local farmers provide.

“Salad greens are always handy, in case the farms run short,” Negron notes. “We’ve also devoted space to perennial berries—strawberries and other perennials—for use in dessert items. They help because they’re a little more ornamental than row crops.” Appearance is a consideration at Topping Rose, as the garden there is part of the scenery for guests staying in the hotel, which is attached to the restaurant.

Negron has also been able to provide chefs with some unusual items from their

own gardens. Last October, for example, Topping Rose harvested its first crop of cardoons—an edible thistle closely related to the artichoke. And in late March, he harvested 120 pounds of over-wintered Brussels sprouts, giving his restaurants the opportunity to offer something truly unusual: freshly-harvested local sprouts in the early spring.

Even restaurants that don’t have the adequate grounds for a kitchen garden are getting in on the act. At Muse in the Harbor in Sag Harbor, the ever resourceful Chef/owner Matthew Guiffrida has installed two raised beds adjacent to the restaurant’s patio to grow herbs for use in the restaurant’s dishes and in their specialty cocktails. So diners at Muse can look forward to even fresher sage, oregano, mint, rosemary, lavender, thyme and dill this summer.

So next time you order up your mixed-green salad, don’t just ask if the greens are organic. Don’t just ask if they’re local. Don’t just ask when they were picked. Go ahead and ask to see the garden. Who knows—maybe they’ll let you pick your own salad.

what’s in season during summer on the “Eat End” of Long Island? Well, in spring we started with asparagus, cheeses, chives, eggs,

lettuces and salad greens, leeks, meats, mint, mushrooms, onions, oregano, parsnips, peas, radishes, rhubarb, sage, spinach, thyme and loads of seafood. Tomatoes are just around the corner…as is basil, eggplant and peppers.

The strawberries arrived in force in June! Next come raspberries, blackberries and blueberries (to go with those sweet peaches!), followed by cherries. We close the summer berry season with beach plums just before Labor Day and head into—yum—the autumn raspberry crop.

As for where you can find great local produce (and more), the East End is now home to 15 farmers markets, located in Bridgehampton, East Hampton, Flanders, Greenport, Hampton Bays, Mattituck, Montauk, Riverhead, Sag Harbor, Shelter Island, Southampton, Southold, Springs and Westhampton Beach. Our local farmers markets are seasonal, except for the Saturday Riverhead Farmers Market, which is open year-round.

All of our farmers markets are held weekly. Below is a complete list of the markets that are open this summer. As for farmstands, I’ve listed only a few of my South Fork and North Fork faves—there are so many! Hungry for more? You will find many of the stories behind our local farmers and food artisans featured in my “Hamptons Epicure” column in Dan’s Papers and on DansPapers.com.

when some 40 wineries and 30 chefs get together on the North Fork of Long Island, you know it’s going to be a celebration of epic—or is that epicurean?—proportions. Come this August 23, the Dan’s Harvest

East End food-and-wine event is that very celebration.Organized by Dan’s Papers and the Long Island Wine

Council, Dan’s Harvest East End is a fun, rustic charity fundraiser celebrating Long Island Wine Country and benefiting important regional charities: the Long Island Farm Bureau Promotion & Education Foundation and Peconic Land Trust. You’ll want to come thirsty, because winemakers from approximately 40 vineyards will pour more than 2,000 bottles of current-release wines and barrel samples. And then there’s the food. While that vino is flowing, more than 30 top regional chefs will serve seasonal tastes sourced from area farms and fresh fare from our local waters.

Although it’s a one-day event, you can take it with you—or at least try. Adding to the excitement is a silent auction offering wines in large-format jeroboam bottles, ideal for cellaring and underscoring the age-ability of Long Island’s wines.

“This is Harvest East End’s fifth year,” says Dan’s Harvest East End event chair, and proprietor and winemaker at Jamesport Vineyards, Ron Goerler Jr., “and with Dan’s Papers as the managing partner in this joint venture we expect this year to be even more exciting for all the participating wineries and restaurants, and a fun experience for all attending.”

picture yourself in the Hamptons on a beautiful summer Saturday. It’s early evening, the sun’s going down, and maybe you’re on the beach, or maybe you’re lounging with friends on your quiet, peaceful

patio. You’re snacking on some locally grown veggies and artisanal cheeses, and you’ve got a nice, cold glass of local wine in your hand. Now think. What kind of wine are you drinking?

If you answered “Long Island dry rosé,” then you’re in good company. Long Island’s vineyards have seen the popularity of their dry rosé wines skyrocket over the last several years. Our East End producers can’t make enough of it and typically sell out of their stock.

Roman Roth, partner and winemaker at Wölffer Estate Vineyard in Sagaponack, has witnessed the astonishing rise of rosé from the beginning.

“In 1992, Wölffer produced the first dry rosé on Long Island, only 82 cases,” he recalls. “This year, we produced 17,000 cases of four different varieties of rosé. In the last

six years we’ve watched demand for it go up 30–50% every year.” Roth attributes the surging popularity of rosé to a growing recognition of rosé as the perfect, light summer wine.

In addition to their familiar Wölffer rosé, Wölffer produces “Noblesse Oblige,” which is a classic sparkling rosé, and the “Grandioso,” their reserve rosé. And, new this summer, they’ve released “Summer in a Bottle.” The new rosé has a floral bottle deign evocative of bohemian Hamptons summer evenings.

Highlighting just how engrained in East End culture rosé has become, Wölffer will host a Rosé Week beginning June 20. The festivities include access to the June 20 Rufus Wainwright concert at the Westhampton Beach Performing Arts Center, a Bryant Park BBQ and numerous events at the winery, all celebrating Summer in a Bottle and rosé as the Hamptons signature drink.

popularity: at Croteaux, rosé is all they do. For Michael Croteaux, rosé was a natural for the East End.

“Provence [France} is the dominant rosé producer in the world. It’s a region of France that has always been an international vacation destination with centuries of winemaking and beach culture to support its reputation. And the East End is the only wine region in the U.S. that’s right on the ocean.” Also, because rosé is released so soon after harvesting, it benefits from being “fresh and local,” mapping well with the growing interest in farm-to-table eating on the East End.

Wölffer’s Roth echoes that idea. “The growing popularity of rosé definitely goes along with the ‘eat local-drink local’ idea.” The thought process might go something like this: what better to go along with my fresh-picked East End veggies then some freshly bottled East End wine.

But why stop with the veggies? According to Christopher Tracy, winemaker at Channing Daughters Winery in Bridgehampton, another reason for rosé’s resurgent

popularity is that rosé is an incredibly versatile wine when it comes to pairing with food.

“It pairs incredibly with our local fish and seafood and our local produce. It’s poured in casual settings and at the most formal restaurants in the city.” Channing Daughters, who refer to their rosé as “rosato,” released 4,500 cases of seven different varieties this year. They usually sell out of their rosato in August or September.

While it’s nice to have such a popular product, as far as Tracy is concerned, selling out of it has its downside. “I’d like to work out how to get it to last a little longer, because it’s starting to be a year-round phenomenon. People don’t stop drinking rosé when summer’s over, and you’d like to be able to meet the demand.”

As the East End’s wine industry enters its fifth decade, they are producing many world-class wines. But for summer in the Hamptons, it’s the rosés that we can’t get enough of.

Martha Clara Vineyards is the brain-child of Robert Entenmann, who cre-ated the vineyard from the family farm. As it says on the Martha Clara Vineyards Facebook page: "In 1995 Robert Entenmann caught the grape bug and planted 18 acres of vines. Over the next four years his vineyard acreage grew to over 100 acres as he anxiously waited for the grapes to come of age."
