This is essential for patients with jaw immobilization who cannot chew or swallow solid foods. Examples: Includes nutritional supplements, creamed soups and broth, creamed cereals, milkshakes and protein drinks, and many meals listed in this book. All liquid / blended foods must be thinned and pass through a strainer before eating.

What is a modified diet?

Clear Liquid Diet: After surgery you will most likely begin with clear liquids as these are easiest to swallow. The purpose of this diet is to restart the digestive process slowly after general anesthesia and to reduce the risk of nausea and vomiting during the early recovery. Clear liquids are considered "anything you can see through" and are quickly digested and absorbed in the stomach. This diet may last for the first 24 hours.

Examples: Fruit juices, including apple, cranberry and grape juice (avoid juices with pulp), broth and bouillon, jell-o, popsicles. Coffee and tea are also okay as long as NO cream or milk is added. Soft, Non-chew Diet: A soft diet is made up of smooth moist, usually blended, pureed or mashed foods. The food consistency is usually thick enough to hold its form in the mouth yet does not require a person to chew the food. A general "rule of thumb" for following a soft diet is, "anything that can easily be mashed with the tongue against the roof of the mouth and swallowed."

Examples: Mashed potatoes, soft cooked cereals, soft cooked eggs, pastas with sauce, applesauce, pureed fruits and vegetables without seeds, plain yogurt, thick milkshakes and pudding.

How can I possibly eat on this restricted diet?!?

A variety if methods are available to those who cannot chew. After jaw surgery, trauma, or reconstructive surgery cups and straws often are difficult to use. The following devices are available to assist you if needed: Syringe and catheter: This was the first method developed to help solve the problems of eating and drinking after jaw surgery. A 60cc syringe is used with a soft catheter tubing attached to the end of the syringe. The liquid food is then "sucked up" and squirted to the back of the mouth. The syringe only holds 60cc's and makes refilling a bit of a task. Baby-size spoon and fork: Baby-size utensils work very well for eating soft foods. Whether you are banded or have had your wires removed, at first it will be difficult to open your mouth very wide. (Remember these jaw muscles have been through quite and ordeal) Many patients have found that using these utensils work very well to slip your soft non-chew meal in the mouth.

Tips and hints to liquefy your meals For at least a few weeks of your recovery, you will be having fluids and thin blenderized foods. "Blending" simply means finely grinding foods and mixing it with liquid to produce a thin, no chew, easily swallowed meal. Most meals can easily be modified for this special diet. The trick is simply adding enough liquid to thin the meal to desired consistency (usually thin enough to easily pass through a straw).

What will you need: To prepare foods for a liquid diet, you will need a blender (either a stationary or hand-held) or a food processor. Another highly recommended appliance is a juicer. Juicers are a good investment and strongly recommended because they extract nutrients and fibers from natural foods and put them in liquid form.

Getting started: First, place the liquid in the blender, and then add the food. Blend on low until smooth. You may need to add additional liquid or increase the blender speed to reach the desired consistency. Use nutritious liquids such as dairy products, soups, gravies and juices when blenderizing foods. Meats should always be cooked before liquefying. Carefully remove any fibrous substance, connective tissue or gristle from foods.

Spice it up: Since chewing is a process that will be missed, you must get creative. By using a variety of spices, seasonings and extracts you can stimulate your mouth and help compensate for the loss of texture with thinned down meals. Beware, however, directly after surgery or following radiation treatments, spicy foods and citrus flavors may create painful conditions in a sensitive mouth. You may need to avoid those types of foods and stick to milder flavors until healing of tissues can take place.

Choose good, nutritious foods: By selecting a variety of foods from all the food groups and modifying them so they can pour from a cup, you will ensure you are drinking a nutritionally adequate diet. Providing nutritious foods, and avoiding too many surgery drinks and junk foods will help you feel better, help your body heal faster, and give you more energy.

Variety is important:

Because the frothy texture of blenderized foods can become monotonous, do not blend everything. Sometimes it is better to strain out solids from a liquid broth; put only the solids (veggies, etc) in the food processor or blender, then return the puree mixture back to the liquid broth soup. Some solids can even be mashed through a strainer and returned to the soup with no blending at all.

When and how much to eat: While you are on a liquid diet, it may seem as though you are frequently hungry. This is because your stomach breaks down liquid nutrients faster then a solid meal. It will be necessary to increase the frequency of your meals to five or six times a day instead of the usual three. A good rule of thumb is to take in some sort of meal of liquids hourly. You will also need to add a minimum of three supplements (protein drinks or shakes) daily. It is important that your body has "fuel" to work with at all times to assist the healing that is taking place. Eating a variety of foods will help ensure your body gets what it needs to keep up you energy.

KEEP WELL HYDRATED TO AVOID DEHYDRATION Consume at minimum 6-8 glasses of water daily. Limit caffeinated beverages which do little for hydration and can add to nervousness and irritability Water assists in carrying toxin and impurities from the cells in the body so tissues remain healthy. Water helps the body move food through the digestive tract and helps prevent constipation, regulates body temperature, as well as the level of sodium and other elements in the bloodstream which helps keep your major organs functioning.

Chewing foods too early is not only painful but can also compromise your surgical outcome and then require additional surgery.

Time saving and helpful hints Prepare a helper list: If you are able to plan recovery ahead of time, decide who can help with shopping, cooking, and cleaning up. Prepare and write out menus and shopping lists - planning basic menu ideas ahead of time will save much stress for you and your caregiver after surgery. Suggested kitchen appliances: To make liquid and pureeing foods easier and healthier, a blender or food processor is a must. Multiple blenders are even better for easy clean-up, and hand-held are very helpful. A wire whisk, fine mesh strainer, and funnel in a small cup size are perfect. Juicers are very beneficial, and meat grinders are helpful. A coffee bean grinder is a great idea for powdering nuts and cereal, both which can add protein and make meals tastier as discussed. Prepare, blend, and freeze ahead of time: Individual portions can be made ahead of time for quick and easy dinners. One good idea for freezing blended foods and fruit juice for smoothies is to use and ice-cube tray. After the foods are frozen, remove the cubes and place into freezer bags. The cubes can be taken out and used a few at a time. Frozen chicken broth cubes are also very helpful. Collect jars and containers with lids: Freezer to microwave containers are ideal in individual serving sizes. Store soup and other pre-made meals ahead of time, so you can have food easily available. Tasty gravies/sauces to flavor, thin and liquefy blended meals:

• Turkey, chicken, brown or white gravy • Bouillon (beef, chicken, vegetable) • Cheese sauce • Spicy southwestern sauce • Ranch dressing • Milk (fortified) • Cream, creamer, half and half • Clear pulp-free fruit juices / nectars • V-8 • Au Jus mix • Gatorade, PowerAde • Alfredo sauce • Spaghetti sauce • BBQ • Italian dressing • Soy milk • Water • Tomato sauce • Thin soups • Chocolate milk

Foods to AVOID Anything that is hard, will be difficult to blend. For example, clumps of bacon, small or hard seeds, nuts, stringy meat, popcorn, crunchy fast food, French fries, hard crusts like French bread, and raw fruit (due to skin or texture such as apples, pears, coconut or fresh pineapple, and candy). Note: Bacon, sausage and other meats may be used in recipes to add flavor and extract nutrients. Always use a fine mesh strainer after blending to remove particles.

RECIPE IDEAS COFFEE DRINKS:

In blender, add milk breakfast drink, blend until smooth. Fill a coffee cup half full with mixture. Add coffee and whipped cream to fill cup. Heat in microwave about 45 seconds, until warm If chocolate ice cream is substituted for coffee, place all ingredients in blender and blend until smooth

SMOOTHIES: Smoothies are delicious drinks that make you feel good and are good for you! You can make them in a blender with any combination of fresh or frozen fruit. Most smoothies use a banana or a mango in each smoothie. If you are having a smoothie instead of a meal, add protein powder for added nutrition. Blending tips:

• Freeze the fruit for a frostier drink • Avoid sweetened frozen fruit • After freezing yogurt, tear off foil cap and microwave for about 10 seconds to make scooping out yogurt easy. • Drink too thick? Add more juice • Drink too thin? Add more fruit or ice cubes • Drink too tart? Add a packet of sweetener or tofu • Drink too sweet? Add lemonade or tofu • All fruit tastes good in a smoothie, with one glaring exception – GRAPES! • Tofu can be added to all drinks for additional protein. The flavor is delicious, in conspicuous and blends well.

Melon shake 1/4 cup cantaloupe, cut into small pieces 1/2 cup vanilla yogurt 2 tsp. sugar 1/4 cup milk Optional: 3-4 ice cubes will make drink slushy Blend all ingredients until smooth. Strain, if necessary Fortified Milk Recipe 1 quart milk 1 cup instant nonfat dry milk Fortified milk is very high in protein and nutrients. Use in recipes and drinks in place of regular milk to boost nutrition. Powdered nonfat milk adds extra 8 grams of protein to each cup of milk. 1 cup 2% milk contains 10 grams of protein. This totals a whopping 18 grams of protein per cup, helping to make each bite count. Fortified milk is also a great source of potassium, calcium, vitamin D and a variety of other nutrients.

SOUPS: Homemade soups are delicious, healthy, and for many, a comfort food. Most foods can be made into a complete meal and prepared with minimal effort. The leftovers can also be used for a variety of easy meals. If you find that cooking soups is out of the question, another great alternative is to purchase fresh homemade soup (to go) from a local restaurant. Many soup and salad places offer a variety of healthy soups made with fresh ingredients. At home, you can liquefy or strain the meal to meet your consistency needs. When blending and pureeing foods for a liquid or soft diet, you will need to have a variety of thinning liquids available. Many soups (especially potato) and other meals will thicken each time they cool down and may need to be thinned again before eating. You should use nutritious liquids for added calories and flavor instead of just adding water. Our Famous Potato Soup Potatoes Milk or cream Margarine or butter Bacon Onion(finely chopped) Chicken bouillon Salt and pepper to taste Garlic powder

Peel, wash and cut potatoes into small pieces. Put in large pot, adding enough water to barley cover the top of the potatoes. Boil until very tender, approximately 20 minutes. Drain half of the water. Mash potatoes with a hand masher just until clumpy. Add bouillon, onion, margarine, 2 tbsp. bacon grease for flavor and milk or cream. Add garlic powder. Bring to a boil then turn down to lo and simmer one hour. Add salt and pepper last. Soup will thicken each time as it cools. Add extra milk to thin as needed.

Tomato/Corn Soup 1 can Campbell's tomato soup 1 can milk 1/2 can creamed corn optional: 2 tbsp. thinely sliced deli ham Heat in a saucepan. Blend until smooth. Strain Suzie's Delicious Chicken Soup and Matza Ball Soup Mix 1 whole chicken (or boneless chicken breast or chicken pieces) 8 cups of water 1 medium onion, diced 2 carrots diced 3 stalks of celery, diced 2 cubes chicken bouillon 1 whole clove 2 tsp. cumin 1 tsp. garlic powder Salt and pepper to taste Matzo ball mix

Place chicken, clove, vegetables, bouillon and seasonings in a large pot, fill with warm water and simmer for 3-4 hours. Simmer until chicken is soft and pulls apart easy. To clarify stock for clear soup, use a fine mesh strainer. Skim fat off surface. Season to taste. Place into blender and blend until smooth. Strain, if necessary. Matza ball's made per package are easiest and good. Add to soup for flavor. Mash with fork, great for a soft diet!

Cream of Broccoli and Cheese Soup 1 can cream of broccoli soup 1 can milk 1/4 ragu cheese sauce optional: for added calories, add 1 tbsp. mayonnaise or sour cream. Heat all ingredients. Blend until smooth. Strain, if necessary. Bean and Bacon Protein Soup 1 cup Campbell's bean and bacon soup 1 cup milk or 1 can Ensure 1 tbsp. Cream of Pimiento Soup 2 4 oz. jars diced pimiento, undrained 1/7 cup butter or margarine 1/3 cup all purpose flour 2 14 1/2 oz. can chicken broth 3 cups half and half 1 tbsp. grated onion 1 tsp. salt 1/2 tsp. hot sauce

Process pimiento in a blender until smooth, stopping to scrap down sides, set aside. Melt 1/4 cup butter in a heavy saucepan over low heat. Add 1/3 cup flour and stir until mix is smooth. Cook, stirring constantly, 1 minute. Add chicken broth and half and half gradually to flour mixture, cook over medium heat, stirring constantly, until mixture is thickened and bubbly. Wash, sort, and soak beans in water overnight as directed on bean package, toss out water in AM and re-rinse. Place ham bone in large pot, covering with 8 cups of water. Add all ingredients. Bring to a boil, reduce heat and simmer approximately 3 1/2 hours or until beans are tender. Salt and pepper to taste. Pull meat from bone, if desired, and discard bone. Place w cup in blender, blend and thin until smooth. Strain.

Cook potatoes and carrots in chicken broth until soft. Add cream, butter, salt and pepper. Mash ingredients with or place in ingredients into blender and liquefy. Thin and strain as needed.

Homemade Split Pea Soup 1 pkg. dry split peas 8 cps of water 1 medium onion, diced 1 1/2 cups carrots, diced 3 stalks celery, diced 1 ham hock or ham bone 4 slices of bacon, remove when soup is finished 3/4 cream or milk 1 tsp. cumin 1 1/2 tsp. sweet basil 1 1/2 tsp. oregano or Italian seasoning 1/2 tsp. rosemary 2 chicken bouillon cubes 1 tsp. garlic powder salt and pepper to taste

Rinse dried peas very well. In a large pot, add 8 cups water, ham hocks and the rest of ingredients. Heat to boiling, the turn down and cover, Simmer approximately 3 hours. Remove ham hock and bacon and discard. Place portions into blender and blend until smooth. Strain.

Zucchini Soup 2 cups shredded zucchini 3 tsp. butter or margarine 3 tbsp. chopped onion 1 clove garlic 1/2 tsp. basil 1/2 tsp. Italian seasoning 1/2 tsp. garlic powder 1/4 tsp. cumin 1 cup cream 1/2 cup milk 1 cup broth optional: 1/2 cup shredded carrots

Sauté onions and zucchini in butter until tender. Add broth and seasonings, simmer 5 minutes. Add rest of ingredients, heat and simmer an additional 5 minutes. Place in blender, blend until smooth.

Ginger Carrot Soup 1 lb. baby carrots 1 1/2 tsp. margarine 1 medium yellow onion, chopped 1 1/2 tsp. chicken bouillon 2 8 oz. cans vanilla ensure 1/2 cup water

Boil carrots until tender. Drain. Melt margarine in a medium pan. Add onion and chicken bouillon. Sauté until onion is tender. Combine carrots, onion mixture, ensure and water. Place in blender, blend until smooth.

Add all ingredients to large kettle, season with cumin, chili powder, Italain seasoning, sweet basil and garlic powder. Bring to a boil. Reduce heat and simmer approximately 1 1/2 hours, until tender. Add 3 tbsp. tomato sauce. Season with salt and pepper as needed. Add to blender. Thins with separate bouillon.

Curried Pumpkin Soup 1/2 lb. fresh mushrooms, sliced 1/2 cup onion, chopped 2 tbsp. butter or margarine 2 tbsp. all purpose flour 1/2 tsp. curry powder 3 cups vegetable broth 1 15 oz. can solid -pack pumpkin 1 12 oz. can evaporated milk 1 tbsp. honey 1/2 tsp. salt 1/4 pepper 1/4 tsp. nutmeg, ground

In a large saucepan, sauté the mushrooms and onion in butter until tender Stir in flour and curry powder until blended. Gradually add the broth. Bring to a boil, cook and stir for 2 minutes or until thickened. Add the pumpkin, milk, honey, salt, pepper and nutmeg, heat through. Place in blender, blend until smooth. Thin as needed with broth or milk.
