Jotta MitsiouPolychronidouJotta Mitsiou-Polychronidou was born and raised in Germany by Greek parents. She achieved a Magis-ter degree in German and English Languages at the Ruhr-University of Bochum. Jotta was the co-founder of the „Wiewaldi“ Restaurant for 15 years in Dortmund. Her appearances in the German TV such as „Mittwochs Live“ and her publications in several books were only the starting point of her international career. Followed by her relocation back to Greece she owned her own cooking show in the Greek TV. Her first cook book was published in 2011 followed by the German edition which was published in 2012. Special guest appearances in Berlin, Frankfurt, Cologne as well as Kempinski in Bratislava proofs that her passion for the Greek quality products and the simplicity but fabulous Greek kitchen is contagious. Jotta Mitsiou-Polychronidou is married and has 3 wonderful children.

In 1969, Ghiorgos Martavaltzoglou, an Asia Minor refugee, sets up a bakery in his home village, Aravissos, Giannitsa, next to the archaeological site of Pella, where he makes bread and traditional pies. With a view to ensuring the quality of the raw materials used in the bakery, a few years later, in 1974, the second genera-tion puts up a flour mill which grinds top-quality flour. In 1980, the modest mill grows into a traditional food cottage industry exclusively producing foodstuff from processed grains (hulled wheat, bulgur and wheat trahana), using tradition-

al production and conservation methods. In the years to come, consumers’ trust and a rapidly increasing demand spurred the company into expanding to include the production of pasta – hilopites (Greek egg noodles), flour trahana, couscous etc. The third generation is gradually taking over at the helm of the family business transferring production to the premises of a brand new factory equipped with state-of-the-art technolo-gy according to the ISO 22000 standards.

Chefstories is a boutique catering company founded by Eleni (a biologist who loved cooking) and Sylvia Koumedaki (a marketing and advertising executive) in Thessaloniki. In 2007 they decided to follow their talents and turned their hobbies into their new job. Thanks to specific catering needs two Greek chutneys emerged (the Onion & Red Pepper with Ginger chutney), which were very appealing. The idea of creating sweet and sweet & sour handmade jams followed soon after. The chefstories jams and chutneys are made from vegeta-bles and fruits originated from local producers, from the Greek land, in the traditional way, with no preservatives or flavorings. The extra ingredients, spices

Our history begins in the end of the '80s when Marianna Kazakis, a lover of cooking and traditional flavors, starts packing vine leaves from the vineyards of her grandfather, using the pasteurization method in order to preserve spring freshness throughout the winter. Today we produce more than 75000 jars and our production facilities and offices occupy a 2000 sq. building at the outskirts of Nea Gonia. In 2004 we implemented a HACCP system throughout our production processes and in 2008 we installed our purpose-built ERP system according to ISO22000:2005 specification. Needless to say, the company is ISO22000 certified. The Kazakis Vineyards are probably the first entirely organic vineyards in Greece. "Marianna's Vineleaves", along with the other products of

the Kazakis family, are nowadays well known in Greece and are slowly being introduced in other countries, such as Germany, France, Switzerland, Japan and the USA. At the same time, we are expanding our brand, to offer to our customers all that is so graciously offered to us by our vineyards. Along with other products, we now produce our spring vine tops and our winter tsipouro, along with our May vine leaves and the September petimezi. The list goes on to dark Sultana raisins, fig spread and pumpkin jam. And we don't stop here. Our newest product is the deep-frozen Marianna's Ntolmadakia: the hand-made fresh wrapped vine leaf with rice. Since 1972, the Naoumidis family, aiming to highlight and promote the genuine form of the lady of vegetables, the Florina pepper, produces handmade products exclusively as a raw material of local varieties of pepper. Specifically, in Agios Panteleimonas, Florina, at an altitude of about 600 meters, we cultivate fifty acres of red pepper, which is

processed and prepared in our stone unit. Indeed, to ensure the quality and authenticity of the variety, we maintain our own seedbed. The export network, apart from Russia, mainly includes European countries like Germany, Belgium, Austria, the Netherlands, Estonia, France, England, Sweden, Czech Republic, Denmark, Italy, Switzerland, Spain, Cyprus, our clientele consists mostly of delicatessen shops and of course, by people who appreciate the value of handmade products. Apart from their natural growing, the greatest virtue of the Naoumidis peppers is no milling. In other words, they are not put in the burners to cook or put in laundry to peel. Their baking is carried out on the grill and lasts twenty minutes while peeling is made by hand. This stage is the most important part of the overall process and here lies the secret of freshness of prod-ucts of pepper. The cultivation and processing of our products are organic and the plant is approved by ISO 2005 :22.000.

We cultivate superfruits only by organic farming, in our own land at the moun-tain slopes Halkidiki, such as goji berries, truffle, sea buckthorn and aronia. Furthermore, we cultivate herbs such as lavandula angustifolia (lavender), melissa officinalis, basil, oregano etc. All our products are approved by the DIO organization, which gives our certification of organic products. Proudly, we cultivate our plants, with the innovative method of EM Effective Microorgan-isms of the well known Japan scientist Dr.Terouo Higa, in addition to other organic materials. Our main goal is to introduce people to these superfruits and

herbs, nature’s diamonds, and hopefully convince them of the necessity to make them a part of their daily nutrition. Simultaneously, Pegasus Bio Hyper Foods, besides its own cultivation and production, builds a processing facility nearby Thessaloniki District, to absorb the production of organic superfruits and herbs from the Northern Greece farmers. In addition, our company will give the opportunity and the know-how to new farmers, with substantive interest to these new cultivations, to cooperate with us, by long term agricultur-al contracts. We are utilizing both the pure raw materials produced by the family itself, grown in its own fields in the land of Macedonia and the local traditional recipes passed on by previous generations. Our products are: Red pepper sauce which comes in six different flavors: mild, spicy, with olives, with capers, with anchovies, and with garlic & basil. Alcohol free syrups: Elderflower (sambucus) / Melissa / Peppermint / Lavender Cherry

and sour cherry spoon sweets. Jam made of fresh seasonal fruit. All of our varieties are handmade and produced under traditional methods, with no preservatives, so as to achieve the best results concerning their quality and taste. The Voras Flavors company maintains a constant and successful collaboration with the American Farm School of Thessaloniki both in the personnel's training and in the quality control and new product development.

“Το Xasapaki” or else, ”The little butcher”, located in Rodopoli, Serres in North-ern Greece, is a family business that opened its doors in 1976.All meat delicacies produced by our company come from animals reared in small family units based in the villages surrounding Lake Kerkini. Xasapaki (pronounced “Hasapaki”) became well known for its high quality products and its dedication to support the local breeder and farmer communi-ty. We still see our customers after all these years as our guests, which is still common in some rural areas of Greece.

ELINOS S.A. was founded in 2006 by Dimitrios Taralas's family. The members of this family cultivate their own organic vineyard, which covers an area of approxi-mately 25 acres and produces wine of exceptional quality The vineyard covers an area of approximately 25 acres and is located at the foot of the Eastern Mount Vermion (300 m.). The soil and climate conditions of the area are ideal for the production of red wine of exquisite quality. Part of the vineyard, where the wine varieties of Xinomavro Naoussas and Merlot are cultivated, is situated in Polla Nera of Imathia. Another part of the vineyard is in the region of Patrida, also in Imathia. The varieties cultivated there are: Malagouzia, Preknadi, Cabernet, Moschomavro (Muscat Black), Negoska and Roditis. In each area of 0.25 acres only a limited quantity of wine is produced (approximately 600 kg), which all the more enhances the quality of the wines produced in our vineyard. Organic cultivation of the vineyard seeks to produce environmentally friendly wine grapes, while respecting nature and the consumer’s health.

Mitravelas winery is the oldest winery of Nemea. It is located in the center of the city and it was founded at 1913. Mitravelas Brothers at start were producing small quantities of bulk wine. At 1945 Andrew Mitravelas took the lead and gradually increased the annual

production until 2003. Then his son Konstantinos decided to take advantage of his father’s and his own long-time experience on the vine cultivation in combination with updated oenological techniques and new equipment, so as to create their own labels. The vineyards are placed around the region of Nemea, mostly on the hillsides. Konstantinos owns and cultivates 75.000 sq.m. in which he minimizes the yield in order to maximize the quality. In addition to these, the Estate has signed, longterm agreements for the exclusive cultivation and yielding of 300.000 sq.m. more.

Apart from winemaking, Athanasios Zacharias, had a great passion for the art of distillation. In 2000, this passion led him to found a modern distillation unit, one of the first in the area of Boeotia, and with this create the “Ath. Zacharias” tsipouro. The raw material for this tsipouro is pomace and lees from carefully selected, ripe and healthy grapes, grown in the Valley of the Muses and coming from nine different varieties, both white and red. The pomace is placed in a large “Cadalpe” copper alembic of a total capacity of 1 ton,

where it boils at a low temperature and then it is distilled drop by drop in a very slow process by which we take only the most delicate aromas. During the distillation, we through away the “heads” and “tails” of the distillate keeping only the “heart”, the part which contains the finest aromatic compounds. A second distilla-tion follows, which gives us a tsipouro of very fine quality, with a delicate character, clean aromas, smooth in alcohol and balanced in the mouth. The final distillate, plain or flavored with anise, will stay in the tank for 3 months in order to be stabilized and then bottled. This is exactly the same process that we follow to produce our tsipouro made exclusively from organically grown grapes. Along with our ongoing effort to improve our existing products, we also prepare for the production of some new ones. Our future plans include a new line of single-varietal distillates, which will soon be launched in the market. The first of these distillates will be made of our favorite Mouhtaro.

n 2006, the oenologists Pavlos Argyropoulos and Andreas Pantos, two experienced greek oenologists, founded in Kolindros Pieria, the Estate "Pieria Eratini". After many years of experience in the wine world, friendship and respect for each other’s work brought them upon a common vision. Finding a place able to fulfill their oenologi-cal fantasies combining natural climatic and soil advantages to create their own dream Vineyard. Kolindros, seemed to be the perfect place for that, due to its unique terroir and soil stratification. With deep ravines that surround it, sea at few

kilometers away and under the "eye of Olympus Mountain", not only the place provides a valuable picture of beauty, but contributes significantly to the special microclimate of Kolindros. Creating Pieria Eratini Estate, wasn’t simply a business plan but also a mean to express the great wines that Greece can create. Blink Wines Mr. Αrgiropoulos an experienced oenologist himself, has dedicated himself to the production of exquisite wines that have won awards. One such wine is the” Blink Zibibo” an exquisite young, fresh, sparkling wine in a bottle of an original design. This wine is produced in special vineyards in Limnnos from the Mosxato Alexandreias variety.

Tetramythos winery was established at 2004, situated at Ano Diakopto of Aegialia, on the slopes of mount Aroania near Kalavryta, in northern Peloponnese. Our vineyards are situated among the highest altitude of all of Greece’s wine producers, located at an altitude of 1050-600 m, and are cultivated organically. Due to the microclimate, the soil and the exposure to the Gulf of Corinth breeze, as well the cultivation techniques, they provide us with excellent grape quality. Indigenous and international grape varieties (Roditis, Black of Kalavryta, Agiorgitiko, Malagouzia, Sauvignon Blanc, Merlot, Cabernet Sauvignon) after vinification at the technological perfect winery produce v.q.p.r.d and regional wines.

Being restless spirit and perceptive man, Basil Anthoulakis was among the first who turned to groupage food transport since 1985 realizing that the crisis would hit the industry in full loads and the great need of the market in this part of the transfer.1992: With the passing of time and the turnover followed an upward trend, it became urgent the need of owned facilities in West Thessaloniki and specifically in the new entrance of the city, on an area of 50,000 s.m.1997: The company is purely a family affair and passed into the hands of Basil Anthoulakis. By judiciously and methodically begins to create the principles of an integrated chain of partial shipments throughout Europe.2003: In June 2003, Bob Anthoulakis withdrawn from the company, and the company name changed to Anthoulakis LTD.Today - with the principles of Basil Anthoulakis, the solid foundation of experience, orderly, stable partnerships, continuous fleet renewal in accordance with the requirements and standards of the European Union and the development of valuable technologies, family Anthoulakis with proprietary fleet, modernized and pioneer to market requirements.Thus, an ever-present in the transport, continues and proceeds with confident steps towards the future.
