Artichoke & Spinach DipIngredients:4 cloves garlic1 - 10 ounce package frozen chopped spinach, thawed and drained1 - 14 ounce can artichoke hearts, drained and chopped1 - 10 ounce container Alfredo-style pasta sauce1 cup shredded mozzarella cheese1/3 cup grated Parmesan cheese½ 8 ounce package cream cheese, softenedDirections:1. Preheat oven to 350 degrees2. Place garlic in a small baking dish. Bake in the preheated oven 20-30

minutes until soft. Remove from heat. When cool enough to touch, squeeze softened garlic from skins.

3. In an 8 x 8 inch baking dish, spread the roasted garlic, spinach, artichoke hearts, alfredo-style pasta sauce, mozzarella cheese, Parmesan cheese, and cream cheese.

4. Bake in preheated oven for 30 min., or until cheese is melted and bubbly. Serve warm.

Ingredients:1 8 oz. package cream cheese, softened½ cup sour cream¼ cup mayonnaise1 cup cocktail sauce½ cup chopped green bell peppers3 green onions, chopped1 tomato, seeded and chopped1 cup cooked crabmeat1 cup cooked baby shrimp1 cup fi nely shredded mozzarella cheese

Directions:1. In a medium bowl, blend cream cheese, sour cream and mayonnaise2. In the bottom of an approximately 12 inch round serving dish, spread the cream cheese mixture. Pour cocktail sauce evenly over the mixture. Layer with green peppers, green onions, and tomato. Top with crabmeat and shrimp. Sprinkle with mozzarella.3. Cover and chill in the refrigerator at least 2 hours before serving.

Layered Seafood Dip

Ingredients:1 lb. lean ground beef1 egg2 tbsp water½ cup bread crumbs3 tbsp minced onion1 8 oz can jelled

cranberry sauce¾ cup chili sauce1 ½ tsp. lemon juiceDirections:1. Preheat oven to 350

degrees2. In a large bowl, mix

together the ground

beef, egg, water, bread crumbs, and minced onion.Roll into small meatballs

3. Bake in preheated oven for 20-25 minutes, turning once

4. In a slow cooker or large saucepan over low heat, blend the cranberry sauce, chili sauce, brown sugar, and lemon juice. Add meanballs, and simmer for 1 hour before serving.

Delicious Stuffed MushroomsIngredients:

Directions:1. Preheat oven to 350 degrees. Spray a baking sheet with cooking spray. Clean

mushrooms with damp paper towel. Carefully break off stems. Chop stems extremely fi ne, discarding tough end of stems.

2. Heat oil in a large skillet over medium heat. Add garlic and chopped mushroom stems to the skillet. Fry until any moisture has disappeared, taking care not to burn the garlic. Set aside to cool.

3. When garlic and mushroom mixture is no longer hot, stir in cream cheese, Parmesan cheese, black pepper, onion powder and cayenne pepper. Mixture should be very thick. Using a little spoon, fi ll each mushroom cap with a generous amount of stuffi ng. Arrange the mushroom caps on prepared cookie sheet.

4. Bake for 20 minutes in preheated oven, or until the mushrooms are piping hot and liquid starts to form under caps.

12 fresh whole mushrooms1 tbsp vegetable oil1 tbsp minced garlic1 - 8 ounce package cream

cheese, softened

¼ cup grated Parmesan cheese¼ tsp. ground black pepper¼ tsp. onion powder¼ tsp. ground cayenne pepper

Serves 4 to 84 10-inch fl our tortillas8 ounces queso fresco1 large ripe Hass avocado, pitted, peeled and cubed11/2 cups fresh tomato salsa Canola oil1. Coat a stovetop griddle with oil and heat over medium heat until almost

smoking. Add 1 tortilla and sprinkle 1/4 of the cheese and a few avocado cubes over half of the tortilla. Fold the tortilla in half and press the edges lightly together. Brown over medium heat for 1 to 2 minutes, then turn the quesadilla and brown the other side until golden, about 1 minute.

2. Remove from the heat and place on a paper towel to cool slightly. Repeat with the remaining tortillas, adding more oil to the griddle as needed. Slice each quesadilla into 4 wedges and serve warm on a platter with a bowl of salsa.

Serves 4Blue Cheese Dip2 cups blue cheese crumbles, divided1 cup mayonnaise1⁄2 cup buttermilk2 teaspoons hot sauce1 teaspoon Worcestershire sauce1⁄2 teaspoon kosher salt1⁄4 cup fi nely chopped scallions1⁄4 cup fi nely chopped celeryMarinade1⁄2 cup vegetable oil1⁄2 cup hot sauce4 tablespoons Virgil’s Dry Rub (see

below)4 tablespoons granulated garlic4 tablespoons granulated onion Juice of 1⁄2 lemonWings8 large chicken wings1⁄2 cup Virgil’s Dry Rub (see below)Sauce10 tablespoons unsalted butter1 teaspoon cornstarch4 tablespoons white vinegar3⁄4 cup hot sauce1⁄4 teaspoon cayenne pepper

1. To make the dip, combine 1 cup of the blue cheese, mayonnaise, buttermilk, hot sauce, Worcestershire sauce, and salt in the bowl of a food processor and blend on low until smooth.

2. Remove to a medium mixing bowl and fold in the rest of the blue

cheese, scallions and celery, being sure to break up the large blue cheese crumbles. Place in a covered container and refrigerate overnight.

3. Mix all the marinade ingredients in a large mixing bowl. Place the wings in a large container with a lid and pour the mixture over the wings. Toss until the wings are thoroughly coated. Cover and refrigerate for 2 days.

4. Preheat the grill or smoker to 245 F.5. Spread out the wings on a sheet pan

and wipe away any excess marinade. Sprinkle liberally with the dry rub, coating the wings all over.

6. Position the wings on the grill away from the direct heat of the coals or burners, and add hickory to the smoker, or place hickory chips on the coals or gas burners.7. Cook the wings for about 3 hours,

fl ipping every 30 minutes (their internal temperature should be about 165 F when cooked).

8. While the wings are cooking, cut the butter for the sauce into 1-inch cubes and refrigerate. Whisk the cornstarch into the white vinegar in a small bowl.

9. In a medium sauté pan over medium heat, bring the hot sauce to a simmer and whisk in the thickened vinegar. Return to a simmer, cook for 1 minute, and remove from the heat.

10. Add the cayenne and slowly whisk in the cold butter. Keep warm until

serving.11. Remove the wings from the smoker or grill and put half of them into a bowl, cover with the sauce, and toss. Repeat with the remaining wings and serve on a platter, with the blue cheese dip on the side. Virgil’s Dry RubMakes 5 to 51⁄2 cups21⁄2 cups sweet paprika1 cup granulated sugar1⁄2 cup Texas-style chili powder1⁄2 cup minced onion1⁄2 cup granulated garlic1⁄4 cup dried parsley fl akes6 tablespoons kosher saltCombine all of the ingredients in a medium bowl and whisk together until completely incorporated. Transfer to a covered bowl with a tight-fi tting lid. Store in a cool, dry place.

Makes 16 rolls16 Chinese pork sausages (lop chong)4 sheets frozen puff pastry, thawed1 egg, beaten2 teaspoons sesame seeds1/2 cup hoisin saucePreheat oven to 450 F. Line a baking tray with parchment paper. Using a sharp knife, trim sausage ends. Place 1 pastry sheet on a work surface and cut into 4 equal pieces. Turn each square so that one corner faces you. Brush pastry edges with beaten egg. Place a sausage 1 inch from the bottom end of each pastry square. Roll bottom end of pastry over sausage. Fold in sides, then roll to form a cylinder. Brush top with beaten egg. Sprinkle with sesame seeds. Repeat with the remaining sausages and pastry.

Place rolls on prepared pan. Bake for 15 minutes, or until golden and crisp. Remove from oven. Cut each roll crosswise into 4 pieces. Serve hot, with hoisin sauce for dipping.Chinese Ham and Chicken RollsMakes 4 rolls1/2 teaspoon salt1/4 teaspoon ground white pepper1/4 teaspoon Chinese fi ve-spice powder1 clove garlic, fi nely chopped4 boneless, skinless chicken breast fi lets4 thin slices ham4 frozen square spring roll wrappers (81/2 by 81/2 inches),

thawed1/4 cup all-purpose fl our1 egg, beaten with 2 tablespoons milk3 cups vegetable or canola oil for deep-frying1/2 cup Thai sweet chili sauceIn a small bowl, combine salt, pepper, fi ve-spice powder, and garlic. Stir to blend.Place a chicken breast in between 2 sheets of plastic wrap. Using a meat mallet, pound very thin. Spread garlic mixture on chicken. Roll a slice of ham and place at one end of chicken. Fold sides of chicken in, then roll chicken around ham to form a log. Repeat with remaining chicken, garlic mixture and ham.Place 1 spring roll wrapper on a work surface, with a corner facing you. Coat 1 chicken log in fl our, then in egg mixture. Place chicken diagonally across wrapper, 1 inch from bottom. Fold in sides and roll up securely. Bunch edge of wrapper with egg mixture and seal.In a large, heavy skillet, deep fryer or wok, heat oil to 375 F or until a small bread cube dropped in oil sizzles and turns golden. Working in batches, fry ham and chicken rolls until golden, 3 to 4 minutes. Using a wire-mesh skimmer, transfer to paper towels to drain. Let stand for 3 minutes before slicing. Serve hot, with chili sauce for dipping.

Frosty the snowman was a jolly happy soul, with a corncob pipe and a button nose and two eyes made out of coal.Frosty the snowman is a fairy tale, they say, he was made of snow but the children know how he came to life one day.There must have been some magic in that old silk hat they found.For when they placed it on his head he began to dance around. O, Frosty the snowman was alive as he could be, and the children say he could laugh and play just the same as you and me.

Phyllo Turnovers with Shrimp & Ricotta FillingIngredients:3 tbsp. butter1 tbsp. canola oil1/3 cup chopped celery stalk1/3 cup chopped green pepper2/3 cup chopped green onions2 dashes hot sauce, such as tabasco1 tsp. salt2 tbsp. all purpose fl our1 pound large shrimp- peeled, deveined and chopped½ cup ricotta cheese1/3 cup milk1 – 16 ounce package frozen phyllo dough thawed½ cup butterDirections:1. Melt 3 tbsp butter in a large skillet over medium heat,

and add the canola oil. Stir in the celery and peppers, cook until tender, about 5 minutes. Add the green onions, hot sauce, and salt, cook and still until onions are wilted, about 3 more minutes. Stir the fl our, shrimp, ricotta cheese and milk into the pepper mixture, cook and stir until the shrimp turn pink, about 3 minutes. Remove from heat and cool.

2. Preheat oven to 425 degrees.3. Melt ½ cup butter in a small saucepan over medium heat.

Remove from heat and keep warm. Stack two sheets on top of each other, and cut into 3 strips about 3” by 12”. Brush the top of each strip with melted butter, and place a teaspoon of the shrimp mixture at one end. Fold phyllo dough over the fi lling, working back and forth from side to side to make a triangle. Seal the end closed with a little water or butter. Place triangle on an ungreased baking sheet. 4. Bake in preheated oven until tops are golden brown and fl aky. About 10-15 minutes. Cool on a wire rack.

Preheat oven to 325 degrees 2. In a large skillet saucepan, melt butter over low

heat. Stir in the package of dressing mix. Blend in wine and golden mushroom soup. Mix in cream cheese, and stir until smooth. Heat through, but do not boil. Arrange chicken pieces in a single layer in a 9 x 13 baking dish. Pour sauce over.

3. Bake for 60 minutes in the preheated oven. Twenty minutes before the chicken is done, bring a large pot of lightly salted water to a rolling boil. Cook pasta for about 5 minutes. Drain. Serve Chicken and sauce over pasta. Simply delicious.

Serves 81/2 cup dried apricots & 1/2 cup dried cherries1/2 cup dried fi gs2 pork tenderloins (about 3 pounds total)1 teaspoon salt1 teaspoon freshly ground black pepper1 cup crumbled blue cheese2 tablespoons extra-virgin olive oil4 tablespoons butter1/4 cup honey, preferably sourwood honey1. Mince the apricots, cherries & fi gs by hand or in a processor.2. Slice the tenderloins lengthwise, almost all the way

through. Open them up and lay them fl at. Place each tenderloin on a large piece of plastic wrap. Cover with another piece of plastic wrap and pound each piece of meat with a meat tenderizer until it is about 1/2-inch thick. Remove the top piece of plastic.

3. Season the surface of the pork with the salt and pepper. Divide the fruit mixture in half and spread evenly on the cut surface of each tenderloin. Top each with half of the cheese. Roll up each tenderloin, using the bottom piece of plastic to help you, tucking in the fruit and cheese as you go. Tie kitchen string every 2 inches around the tenderloins, continuing to push in any fruit or cheese that may fall out.

4. Preheat the oven to 450 F.5. Heat the oil in a large skillet over medium-high heat. Sear the tied tenderloins, turning as each side is browned. Be

careful when searing the open side, as some fruit and cheese might fall out. You are just trying to seal in the meat juices, not trying to cook the pork all the way through.6. Combine the butter

and honey in a microwaveable bowl and microwave on high for about 20 seconds, or until the butter is melted. Drizzle the butter over the tenderloins.

7. Place the tenderloins on a baking sheet. Bake for 15 to 20 minutes, or until the meat reaches an internal temperature of 150 F. Remove the baking sheet and allow the tenderloins to sit for at least 10 minutes before slicing. This will keep the juices in the meat rather than all over your kitchen counter.

8. Snip off and discard the strings. Slice the pork into 1-inch-thick pieces and serve.

Eggnog CheesecakeIngredients:1 cup graham cracker crumbs2 tbsp. white sugar3 tbsps. Melted butter3-8 ounce packages cream cheese, softened1 cup white sugar3 tbsps. All purpose fl our¾ cup eggnog2 eggs2 tablespoons rum1 pinch ground nutmegDirections:1. Preheat oven to 325 degrees 2. In a medium bowl combine graham cracker

crumbs, 2 tbsps. Sugar, and butter. Press into the bottom of a 9” spring form pan.

3. Bake in preheated oven for 10 minutes. Place on a wire rack to cool.

4. Preheat oven to 425 degrees.5. In a food processor combine cream cheese, 1 cup

sugar, fl our and eggnog. Process until smooth. Blend in eggs, rum and nutmeg.Pour mixture into cooled crust.

6. Bake in preheated oven for 10 minutes7. Reduce heat to 250 degrees and bake for 45

minutes, or until centre of cake is barely fi rm to the touch. Remove from the oven and immediately loose cake from rim. Let cake cool completely before removing from the rim.

Ingredients:4 cups white sugar1 cup milk½ cup butter1 ( 7 ounce) jar marshmallow cream12 ounces peanut butter2/3 cup all purpose fl ourDirections:1. Grease a 9 x 13 inch baking dish, set aside2. In a saucepan, combine sugar, milk and butter.

Bring to a boil, and cook 5 minutes. Remove from the heat. Stir in the marshmallow crème and peanut butter. Gradually stir in the fl our. Spread into the prepared pan, and let it cool.

Bottom layer1/2 cup unsalted butter5 tablespoons cocoa powder1/4 cup sugar1 egg beaten11/4 cups Graham cracker crumbs1 cup shredded, sweetened coconut1/2 cup chopped almonds, pecans or walnutsMiddle layer2 cups powdered sugar1/2 cup unsalted butter3 tablespoons milk or heavy cream2 tablespoons vanilla custard powder or instant vanilla pudding mixTop layer4 1-ounce squares semi-sweet chocolate2 tablespoons unsalted butterBottom layerPut the butter, cocoa powder & sugar into a saucepan & place it over low fl ame. Stir to melt the butter & blend the ingredients. Whisk the beaten egg & cook, stirring constantly, until the

mixture starts to thicken, around 2 to 3 minutes. Remove from heat & stir in the remaining ingredients. Pour the mixture into the bottom of a greased 9-by-9-inch baking pan & press down fi rmly to form an even layer.Middle layerUse a tabletop or h&held mixer to beat together middle layer ingredients until they form a light & fl uffy mixture. Spread the buttercream mixture evenly over the bottom layer in the baking pan.Top layerPlace the chocolate & unsalted butter for the top layer in a small saucepan over low fl ame. Stir until the chocolate & butter are melted & form a smooth mixture with a nice sheen. Spread the chocolate layer evenly over the buttercream layer in the baking pan. Set the pan in the refrigerator & chill thoroughly.To cut bars, fi rst bring to room temperature.

Festive Sangria1 bottle of Red wine such as Pinot Noir or Malbec1 bottle of dry White wine such as Pinot Grigio 1 cup of sugar1 orange sliced2 limes sliced1 lemon sliced2 cups sliced strawberries or raspberries (optional)Mix wine and sugar until dissolved. Add sliced citrus fruit, cover and refrigerate at least 4 hours (overnight is ideal). Before serving add fresh red fruit like sliced strawberries or raspberries. Pour over ice and enjoy!Makes 10 – 12 servings.

White Chocolate Martini 2 ounces vanilla vodka1 ounce White Creme de Cocoa1 ounce white chocolate liqueur, like Godiva1 White chocolate barPour ingredients into a shaker and shake thoroughly. Strain into a chilled martini glass. Garnish with white chocolate shavings on top.

Pomegranate Martini1 ounce citrus vodka1/2 ounce orange liqueur3 ounces pomegranate juice Chopped ice1/4 teaspoon lemon juice Lemon slice for garnishCombine all ingredients in a cocktail shaker. Add ice so that the shaker is about one-third full. Shake for several seconds and strain into a cocktail glass. Garnish with the lemon slice.

Spiced Cake Martini2 ounces hazelnut fl avor liqueur, like Baileys1/2 ounce cake fl avored vodka Sprinkle of nutmeg powderShake all ingredients together and strain into a martini glass. Sprinkle with nutmeg and serve.
