Preheat oven to 375 degrees Fahrenheit. Using an electric mixer, beat butter or margarine and sugar together in a medium mixing bowl until light and fluffy. Add eggs, mixing well. Combine oats, flour, baking soda, and salt in a separate mixing bowl. Add to butter mixture, mixing well after each addition. Stir in dried cranberries and white chocolate chips or chunks.

Pumpkin Pancakes…What you need

Pumpkin Pancakes

½ cup unbleached all-purpose flour½ cup whole wheat flour1 tablespoon baking powder½ teaspoon salt1 tablespoon light brown sugar1 egg¾ cup milk (any kind)½ cup pumpkin puree1 tablespoon butter, melted¼ teaspoon cinnamon

Pumpkin Pancakes…What to do with those things

Melt butter over stovetop. Don’t let it burn. Set aside to cool. In a separate bowl beat together eggs, milk, pumpkin puree and add the cooled butter. Set aside. In a large bowl mix together the flours, baking powder, brown sugar, cinnamon. Add the egg mixture but don’t mix. Drop by the spoonful into a preheated non stick griddle or skillet. Cook over medium-high heat until bubbles appear on the surface. turn once; cook on the other side. Serve immediately. Makes about 8-10
