Skåne – nature’s generositySkåne is a land flowing with creamy milk and freshly strained honey. The coastal lamb grazes on flowering thyme and the hare springs right into the hunter’s clutches. Yellow fields of rapeseed shimmer and melting butter sizzles in the innkeeper’s frying pan.

If you’re hungry and close your eyes, you can conjure up the delicious flavours of the region. Wormwood bitters and apples. Capons and pointed cabbages. Sweet, salty and sour herrings, wild game and fried prawns with jelly. Grapes and melons. Mustard seeds and goose-dripping… and more goose. Plaice, garfish and freshly salted lumpfish roe, suckling pig shanks and parsnips. Caraway pork and cured ham, sweet cicely and chives. Eggs made into egg cake and spettkaka cake and just about any other cake… delicious!

The food of Skåne is incredibly generous. You could also say that the food of Skåne offers the best of both worlds. Provincial and international, sweet and sour, rustic and elegant. And each season has its own delicacies: asparagus, strawberries, raspberries… When the first new potatoes are dug up, it’s time for a celebration! Yes, each season has its own charms, but autumn in Skåne offers a particularly bounteous feast. There are apple markets, goose dinners and plenty more besides… and the innkeepers of Skåne are kept busy when their chefs get the opportunity to refine old recipes.

In Skåne, you’re never far from a culinary experience.

Buhres Krogthe location is fabulous, the view likewise. Like an unusually handsome and modern ferry, Buhres sits on the waterfront on the heart of Kivik. On a clear day you can see across the Baltic to Blekinge. The Baltic provides the main source of culinary inspiration, too. With the greatest care, Skåne herring is transformed into delicious, flavourful meals. There are a few meat dishes on the menu, but fish and seafood predominate. As the Buhre family puts it: “Food should be good. Fish and seafood are good, and wonderful when you add a glass of wine.” Don’t miss the award–winning delicatessen, where you can buy everything from pickled herring to eel pie and salmon sausage to take home.

Due to a fire, Buhres Krog will not be open in 2010. The shop and outdoor dining area will be open on a reduced scale. Welcome!

Drakamöllan Gårdshotella small road winds its way through the beech forest. Suddenly the countryside opens up and there, framed by gentle hills, is the welcoming old farmstead. Elisefarmin the heart of skåne, with a fantastic view of Lake Ringsjön. One of Sweden’s top ten golf courses, right on your doorstep. Rusthållargårdenan oasis on the west coast of skåne, Arild is a charming fishing village with narrow streets and picturesque houses, where Rusthållargården has become the place to eat for those who appreciate good food in relaxed surroundings. Here the catch of the day is still taken fresh from the boats, and new primeur vegetables are readily available on the Kullen peninsula. The cuisine is genuine Skåne, with occasional leanings towards France – the friendly atmosphere is Skåne through and through. Salt & bryggasalt & brygga is a unique restaurant, situated by the sea in Västra Hamnen near the Turning Torso, with the Öresund Bridge and Danish coast on the horizon. The restaurant is Slow Food-approved and was the first Swan ecolabelled restaurant in southern Sweden. Salt & brygga has received numerous accolades, including the City of Malmö Environmental Award, the Mårten Award from the Skåne Gastronomic Academy and the title “Green Restaurant of the Year 2008”. Sandas its name suggests, Restaurang Sand is located by the beach, with sea views over Laholm bay. Over the past few years, the restaurant has carved out a leading position for itself on the Bjäre peninsula’s culinary scene. True to the location, the menu features shellfish platters and seasonal fish. However, you will also find classic dishes with a modern touch, using local ingredients as far as possible. The patio area, “Eriks Hörna”, offers fabulous views of the Kattegatt. This is a great place to dine if you are visiting Båstad and its tennis tournaments. Connoisseurs will appreciate the wine list featuring many of the world’s finest producers.

Thott’sthott’s is an experience in many respects. The restaurant is housed in Malmö’s oldest half-timbered building, which is under a preservation order. The entire restaurant somehow captures the essence of Skåne. The menu reflects the kitchen’s good relationships with local farms and suppliers. The cuisine represents a highly inspirational interpretation of Skåne’s gastronomic traditions. Excellent value for money, with hot dishes costing around SEK 200. Affordable, good tasting and typical of Skåne.

Östarps Gästgivaregårdthe restaurant looks out on a historical village dating from the early 19th century, and is one of the highlights of Kulturen Open Air Museum. Genuine Skåne food has always been served here, and the current owners are the third generation to man the kitchen. True to its rustic origins, the food is absolutely typical of the region.
