CONCLUSION and PERSPECTIVES

In suspension, Jabuticaba extract did not change the

casein micelles properties

Gel formed by crosslinked CMs has smaller

porous and prolonged release of Jabuticaba

extract (10 % slower)

The hydrogels can be applied to carry,

delivery and controlled release Jabuticaba

extract from neutral to acidic pH
