Elaine Grinnell, an elder in the Jamestown S’Klallam tribe, along with festival and city officials and members of the Lower Elwha Klallam tribe will officially open the festival Saturday, 11 a.m. at The Gateway Pavilion. Elaine is a revered historian and Native American storyteller who teaches Native American cooking, drum making and basketry.

Get a sneak preview of the old-fashioned crab feed at the Peninsula Daily News’ Friday Night Community Crab Feed when the tent is up, the Soul Shakers are playing and the crab is boiling!

PENINSULA COLLEGE ATHLETIC DEPARTMENTThe Peninsula College Athletic Department

continues to build its relationship with the Dunge-ness Crab & Seafood Festival. Athletes representing the women’s basketball team will host the annual CrabFest 5-K Fun Run/Walk. The Saturday morning event starts at 10 a.m. on Lincoln Street.

The men’s basketball team will clean hundreds of crabs for the Crab Derby, and the men’s soccer team will come in each night to clean Crab Central.

The Athletic Department will also partner with the Port Angeles High School volleyball program to host the annual CrabFest Beach Volleyball Tour-nament, set for all day Saturday and Sunday at Hollywood Beach.

Funds raised from these activities at the festival support the athletic department.

DOWNTOWN AND AROUNDAs you make your way through the festival, re-

member the businesses and restaurants adjacent to the festival grounds and inside the Landing Mall are all open for you.

The Port Angeles Farmers Market, usually held at The Gateway Center, will be open from 10 a.m. to 2 p.m. at the Clallam County Courthouse parking lot at the corner of Peabody and Fourth streets.

PORT ANGELES DOWNTOWN ASSOCIATION GREAT DOWNTOWN CRAB HUNT

“Mr. Claws” will be hidden somewhere in partici-pating businesses.

Visitors can get a crab punch card telling them which businesses are participating and those busi-nesses will initial their card when they find the crab.

The punch cards are entered into a drawing for prizes. Prizes are gift certificates from businesses or Downtown Dollars.

The cards will be available at all participating businesses that have a poster in the window, and at the Port Angeles Downtown Association booth on the pier. Prizes will be drawn Oct. 16. Winners do not need to be present to win and prizes will be mailed.

We get our crabs live and fresh, caught Wednesday thru Sunday for the festival and delivered live and

kicking throughout the weekend by High Tide Seafood. This is the freshest crab you can get, right off the

boats and cooked on-site. We are subject to market forces and the price

of the crab is not set until the boats dock — sometimes a bit lower or sometimes a bit higher than the year before — we just don’t know.

But if you haven’t had truly fresh crab from the sea (not from the grocery store), then you have never really tasted crab like this. Eat it here or get it “to go” for your motel or family and friends.

Fresh, cooked, cleaned, whole, chilled Dungeness crab are available for sale all weekend long at the Grab-A-Crab Derby on the pier.

The City of Port Angeles has launched a city-wide W-Fi system called Metro-Net to improve public safety and increase mobile internet access for resi-dents and businesses.

As one of the first city-wide Wi-Fi systems in the nation, and the only one to share infrastructure with a separate first-responder network, Metro-Net will enable fire and police departments to have dedicated, on-demand access to information vital to public safety. At the same time, city residents and busi-nesses can be online anywhere in the city.

Culinary secrets revealed

CHEF BECKY SELENGUT, SEATTLE Appearance sponsored by Feiro Marine Science Center

Becky Selengut is a 1999 Seattle Culinary Academy graduate where she was awarded the Outstanding Culinarian of the Year.

Selengut’s culinary career includes time at La Medusa, La Spiga and three years at the internationally acclaimed Herbfarm Restaurant work-ing under her mentor, Chef Jerry Traunfeld.

In 2004, she started her private chef and culinary education business, Cor-nucopia Cuisine. A regular instructor for PCC Natural Markets since 2004, Selengut is also an adjunct professor in the culinary/nutrition department at Bastyr University.

Selengut co-authored “The Washington Local and Seasonal Cookbook” in 2008 and wrote “Good Fish” in 2011 that includ-ed wine pairing contributions from her wife, sommelier April Pogue. “Good Fish” was one of Seattle Magazine’s best cook-books of 2011 and an NPR-notable read.

In 2012, Selengut was given the Seafood Ambassador Award by the Monterey Bay Aquarium for her commitment to ocean conservation and sustainable seafood education.

Selengut currently writes a two-time Eddy award-nominat-ed humor column for Edible Seattle Magazine.

Chef Stark and his mission to use local, sustainable and fresh food is one of the service improvements implemented at Jefferson Healthcare that delights both the patients and the staff.

Jefferson Healthcare has become one of the first, if not the only hospital in Washington that incorporates this more organic approach to food services.

Chef Stark connects the concepts of healthy eating to a healthier person.

By focusing on wholesome meal and food choices, this will produce results in healthier patients and staff.

Chef Stark is in the initial phases of devel-oping a program to link kids with fresh food choices. He wants to teach them how to com-bine tasty ingredients for meals and snacks for home or to take to school.

“I really want to take the food across the board,” he says. “I want to take it to the pa-tients. I want to take it to employees. I want to

take it to guests of the hospital — good whole-some food that is prepared from the heart.”

A current example of how he is putting his mission into action is that in August, he officially changed the hospital staple Jell-O (colored sugar water) to real organic juice gelatin which hasn’t been officially labeled yet, but whether it is something like “jellorganicgoodforu”or “realjuicello,” patients will benefit. Even though this is a small item, it goes a long way with those who have food restrictions in their diet.

“Eventually, I want to get with doctors and formulate menus and even get to the point of prescribing good nutritious food,” he says.

“We’re a hospital. We should be building health. The biggest health builder is food.”

Chef Stark began his careeer as an appren-tice at Atlanta’s Le Petite Auberge under Chef Wolfgang Gropp which led to working with French Master Chef Bernard Goupy at the famed Le Clos at Chateau Elan.

Chef Stark’s career journey took him from the Museum of Fine Arts in Boston to the Hotel Wheatleigh in the Berkshires and on to Atlanta as executive chef at Glen Arven Coun-try Club, the third oldest golf club in the U.S.

In 2005, he was executive chef of Andina, the restaurant named The Oregonian’s Restaurant of the Year.

Stark and his wife, Micaela, moved to Port Townsend in 2006 where he founded Culti-vated Palette and Brassica.

The festival is proud to share a fantastic line-up of chefs from around the North Olympic Peninsula and beyond.

McNabb is a local chef and new own-er of Wine on the Waterfront. He spe-cializes in menu conception and recipe development for local businesses.

Chef McNabb helps to make con-nections with artisan producers and specialized purveyors and shows people how to take those ingredients and create dishes that satisfy.

CHEF XINH DWELLEYXinh’s Clam and Oyster House, Shelton, Wash.

Xinh Dwelley, chef at Xinh’s Clam and Oyster House, started cooking as a teenager at a mess hall in her na-tive Vietnam for an entire battalion of American soldiers.

Dwelley married an American GI and immigrated to the states in 1970.

Prior to taking a job with Taylor Shellfish, Dwelley, from the small Viet-namese village of An Hoa, did not even know what an oyster was.

Given time Dwelley started winning cooking competitions with her soul-settling oyster stew.

In 1996, Xinh’s Clam and Oyster House in Shelton, Wash. was born. Xinh’s food is neither Vietnamese nor American, but rather cooking from the heart as she expresses the flavor memories of her homeland with the local shellfish.

Dwelley’s food is known to her many loyal fans, simply and uniquely, as

“Xinh’s food.” Some call it “Xinhful.” She was made an Honorary Lifetime

Member of the American Culinary Federation Washington State Chefs As-sociation in 2010.

Both husband and wife have exten-sive restaurant backgrounds. Michael is classically trained chef who grew up in the Northwest and after many years

living in the south, Candy and Michael returned to the Northwest and opened the grill.

CHEF DAVE SENTERSBella Italia Restaurant, Port Angeles

Senters grew up in the Puget Sound area and worked at restaurants in Washington and Italy.

During a trip to the Olympic Penin-sula he was impressed by the budding food culture and he has lived in Port Angeles ever since.

Bella Italia was born out of a desire to bring friends together around the table and create a restaurant that reminded people of warm, gregarious Italian hospitality.

CHEF CRAIG ALEXANDERExecutive Chef of the Red Lion Hotel

Chef Craig Alexander started his culinary career in the dish room at the Red Lion at the Quay in Vancouver, Wash. He quickly found his passion and earned a culinary degree.

Alexander was able to continue to expand his work, becoming executive chef at the Red Lion in Vancouver at the age of 27.

Cooking Demonstrations at the Gateway Center

Come on down to the Gateway Center for the second annual Crab Revival from 9 a.m. to 10:30 a.m. on Sunday where the Dungeness Crab & Seafood Festival will be dishing up more than just cooked crustaceans.

The whole family is invited for a big serving of gospel music, joy, community spirit and breakfast.

Director of the Crab Revival, Michael Rivers, will welcome one and all with a sing along and then introduce the Peninsula Men’s Gospel Singers.

After the performance by the gospel singers, Michael will offer words of peace and lead the “congregation” in more favorites old and new.

Then Rivers will join forces with his son David Isaac Rivers for some revival songs.

The program will conclude with a sing along of familiar hymns and a blessing for the day.

Start your day on the waterfront with special ala carte breakfast items, available for purchase, provided by The Cedars at Dungeness (Double Eagle Steakhouse and Stymies) and J’aime Les Crepes. Breakfast will be served from 9 a.m. to 10:30 a.m.

The musicians The Peninsula Men’s Gospel Singers,

directed by Lee Mosely, perform across the Olympic Peninsula appearing in churches, retirement centers and the Clallam Bay Prison.

The polished vocal ensemble sings uplifting favorites, contemporary gos-pel and challenging arrangements of familiar sacred songs.

Singers in the group come from more than seven different denominations and 10 churches in Sequim, Port Ange-les and Joyce.

Michael and David Rivers are both Port Angeles musicians.

Michael was the founding direc-tor of PMGS and led the group for 10 seasons. He’s currently touring and performing original and sacred music in support of his latest solo recording, My Father’s Face.

David was the leader of Abby Mae and the Homeschool Boys, a local bluegrass band with a devoted regional following.

He is currently plotting his next musical project. David has collaborated with his dad in the past on concerts at Studio Bob, Wine on the Waterfront, local churches and in Tecate, Mexico.

Joining the celebration will be the band Standing on Shoulders with Abby Mae Latson and Dillan Witherow.

The Jamestown S’Klallam tribe, 7 Cedars Casino, The Cedars at Dungeness Golf Course and the Longhouse Market are all excited to be presenting spon-sors of the Dungeness Crab & Seafood Festival.

Elaine Grinnell, a tribal elder, will be presenting at the festival’s opening ceremonies at 11 a.m. Saturday. She is a highly accomplished, revered and world traveled historian and Native American storyteller who also teaches Native American cooking, drum making and basketry.

The Cedars at Dungeness is not only an amazing 18-hole championship golf course, but the property also features a fantastic “19th hole” in Stymie’s Bar & Grill and Double Eagle Steak & Seafood restaurant.

During the festival weekend, Matt Eveland, golf course food and beverage manager, will be serving up delectable food in The Gateway Center. Afterward, check out the nightlife at 7 Cedars Casino with its nightclub “SEVEN.”

Going GREENAll the serving plates and beer glasses at

the Crab Festival are made of compostable materials. This is part of an effort on the part of festival organizers to protect the environment and will eventually lead to the composting of everything used in the Crab Central tent. Lazy J Tree Farm will compost the crab shells and corn husks left over from cooking.

Join us at the High Tide Seafoods and Wilder Auto Grab-a-Crab Derby area where every-one who attends the festival has a chance to not just eat, but catch their very own Dunge-ness crab.

For just $5, you get 10 minutes to entice a hard-shelled crustacean onto your hook. (Canadian dollars accepted at par.) No license or gear required!

At City Pier, live crabs are held in two 2,000-gallon tanks provided by High Tide Seafoods.

The event is sponsored by Swain’s General Store.To make things even more interesting, selected

crabs will be tagged before going into the tank. If you’re lucky enough to catch one of these tagged crabs, then the crab is yours!

But even if your crab isn’t tagged, you can still purchase your catch.

The Peninsula College men’s basketball team will be on hand to clean and cook your crab on the spot for a small donation.

Crabs will also be sold to the public throughout the weekend, even if you don’t join in the Crab Derby. This is the freshest crab you can buy!

The commercial crabbing season opens in October, which is why the festival is held the second weekend of the month.

High Tide Seafoods will once again be catching crab for this year’s crab feed and derby.

Every crab will be live — plucked from local waters — when it gets to the festival.

High Tide also provides the tanks and personnel for setup and cleanup, cranes to move the tanks and they pump the water from the bay to keep the crab fresh.

A crew of local volunteers led by Monte English, Leslie English, Kevin Kennedy and Jim Hague-wood will work behind the scenes to keep the derby rolling along.

The derby is open from 10 a.m. to 5 p.m. Saturday and from 10 a.m. to 4 p.m. Sunday.

Learn about local marine environment and the Elwha River restoration

The Feiro Marine Life Center (FMLC) is an aquarium located on Port Angeles City Pier, right in the center of the Crab Festival.

Visitors are invited to stop in and learn about the local marine environment.

At the Feiro visitors will marvel at the variety of marine life on display, there are hundreds of examples of inter-tidal creatures, fish, and plant life as well as “dry” displays to enjoy.

Staff and volunteer naturalists will be on hand to guide you and answer all of your questions.

A touch tank provides a chance for visitors to meet marine life up close and personal.

In addition to the salt water exhibits, Feiro is home to two new interpretive displays that focus on the Elwha River restoration project. Inside a the center visitors can see an interactive model of the Elwha River. Outside the Feiro, on the south side of the stage building, is the new exhibit, “Port Angeles and the Elwha River: A Century of Change.”

Through photographs and text, the exhibit tells the story of the impact that the hydropower generated by the Elwha River had on the industrial development of the Port Angeles waterfront.

There are already two historical murals on City Pier. One depicts life along the harbor before European contact, and another illustrates the Puget Sound Colony in the late 19th Century.

The new exhibit uses historical photographs to depict the tremendous changes that have taken place on the waterfront during the 20th century: from industrialization to restoration.

The Feiro Marine Life Center will be open during the festival: Saturday from 10 a.m. to 6 p.m. and Sunday 10 a.m. to 5 p.m. Admission is free.

Visitors peruse a new exhibit called “Port Angeles and the Elwha River, A Century of Change” that tells the story of the hydropower generated by the Elwha River and the industrial development of the Port Angeles waterfront. The exhibit can be found outside the Feiro Marine Life Center, located on City Pier right in the center of Crab Festival. For more information, visit www.feiromarinelifecenter.org.

The Juan de Fuca Freethinkers will sponsor educational activities for kids in the Feiro Marine Life Center Saturday and Sunday from 11 a.m. to 5 p.m. Activities will be a mixture of art and science leading children to understand the evolution and life cycles of crabs.
