FOOD

Serves 6

2 tbsp. Butter

2 tbsp. Minced Shallots

1 tbsp Minced Garlic

_ cup Light brown sugar

1 cup Strong Coffee

1 cup Beef or Lamb Stock or broth

1/8 cup Red Wine Vinegar

Kosher Salt

Freshly Cracked Black Pepper

4 Tbsp Roasted coffee beans

2 Tbsp Kosher salt

1 tsp Ground Black Pepper

_ tsp Fennel Seed

_ tsp Cardamom seed

3 ea Boneless American Lamb Loins,

Defatted and peeled

3 tbsp Olive oil

INGREDIENTS

For the Sauce:In the bottom of a 2 qt sauce pan melt theButter over medium heat. When bubbling,add Shallots and Garlic and cook until light-ly browned.

Add the Brown Sugar and cook for two min-utes. Add Coffee and Stock. Bring to a sim-mer and allow to cook until reduced to 1cup. Add the Red WineVinegar and contin-ue reducing to _ cup. Adjust seasoning withSalt and Black Pepper and keep warm forservice.

For Lamb:In an electric coffee grinder, grind togetherCoffee, Salt, Pepper, Cardamom and FennelSeeds.

Rub the Lamb Loins with coffee mixture andallow to rest 20 minutes in the refrigerator.

Heat Olive Oil in a pan until hot. Quicklysear the lamb loin on all sides and placeinto a 400ºF oven until a thermometerplaced in the center of the lamb reads145ºF.

Remove lamb and allow to rest 5 minutes.Cut the loins into equal slices and drizzlewith the Coffee Sauce.

Cancer is an ominous subject with no 100% cure;therefore, many medical professionals emphasizeearly detection. In recent years we have become

more vocal about cancer detection as a society and con-tinue to do so with the donning of wristbands, participat-ing in screening drives, or by walking in various cancerwalks. Here is a list of events and cancer awarenessmonths that supporters and survivors can partake.

OVARIAN CANCER The month of September highlights ovarian cancer. It

is one of the most mysterious cancers because it is notusually diagnosed until women are in their moreadvanced stages. According to the National OvarianCancer Coalition, is the symptoms are irregular bowels, orbladder emissions, indigestion, nausea, pelvis/abdominalbloating, etc. Other symptoms are mistaken for “femaleproblems”, such as abnormal bleeding, pain during inter-course, even a dramatic change in weight. The probabili-ty of ovarian cancer increases with age. Women at risk arethose who have been unable to get pregnant but are notusing, or have not used birth control pills, and women inhigh industrial areas.

BREAST CANCERBreast Cancer is the most prevalent cancer found in

women. According to the American Cancer Society,breast cancer accounts for a third of all new cancer casesin the U.S. Like all forms of cancer, early detection great-ly increases the survival rate. If breast cancer is found inits early stages, when it resides in the breast tissue alone(carcinoma in situ), one has a 95% chance of surviving.Women are encouraged to begin breast exams in their

20’s and every three years there-after. By age of 40, a womanshould undergo a breast examevery year and begin mammog-raphy exams. In addition, theSusan G. Komen Breast CancerFoundation and the AmericanCancer Society suggest thatwomen administer their ownself-examinations on a monthlybasis. A self-exam is used toidentify a lump in the breastthat is particularly firmer thatthe rest of the breast tissue.

LUNG CANCERWith the recent passing of media great, Peter Jennings,

America is, once again, coming to grips with the reality oflung cancer. Lung cancer, also known as bronchogenic can-cer, starts in the lining of the bronchioles and can manifestwithin the body for an extended period of time before it isdetected through an x-ray. The American Cancer Society(ACS) calculates that 87% of lung cancer cases comedirectly from tobacco smoke exposure.

Funding is needed to find an effective means to detectlung cancer in its early stages as cases where lung cancerhas been found early have actually stemmed from examina-tions for other health concerns such as heart disease.Donations can be made to the ACS via www.cancer.org, orcalling the local office at 404-315-1123.
