Our Capabilities• Shredded cheese in packages from 1oz to 5lb packages and

every size in between. We can customize cheese blends and even add spices or flavorings to your specifications.

• Sliced cheese cheese to your shape, size and weight specifications.

• Whole pieces up to 28” in length for slicing at your facility or packaged chunks to your size and weight specifications.

Shredded Cheese

Pizza and salad kits aren’t complete without cheese. Larger packages are available for commissary type assembly or smaller packages for inclusion in retail kits. Some of the projects we have done include:

•1oz packages of shredded parmesan for retail salads

•12oz packages of shredded mozzarella for pizza kits

•2lb shredded cheddar for store assembled salad kits

•5lb shredded cheeses for deli salad manufacturing

Sliced CheeseSliced cheese from MDS has a number of advantages over slicing your own. Our portion controlled slices offer 100% yield at store or plant level. Even if you slice your own meats, outsourcing your cheese will remove a number of regulatory and sanitation concerns from your plant.

• Natural cheese slices in 1.5lb and 3lb gas flushed packages

• Slices are stagger stacked for ease of use

• Packages are easy open so no knives or cutters are introduced to the packaging line

• Slice sizes, shapes and weights are fully customizable

Bulk Products

Depending on your scale and style of operation, you may want to slice cheese at your facility. We offer products in extended lengths to increase productivity and trimmed products to reduce or eliminate yield loss.

•Slicing logs up to 39-inches make for longer runs and increased output

•Packaged in totes or trays to reduce cardboard consumption

Cost ControlsProducing a fixed priced finished good from commodities that vary weekly or daily can be challenging. Retailer’s desire price stability, but that puts all of the commodity risk on the manufacturer. MDS can provide you with the tools to manage or eliminate commodity risks:

•Actual market averages from 1 to 3 months

•Forward pricing up to 18 months into the future

•Physical hedges where we purchase and store cheese at a fixed price for use in the future

These are actual markets averaged to reduce the magnitude and frequency of market changes. Customers choosing this pricing method will pay the actual annual average market over the course of the year.

Forward purchases lock in both price and volume into the future. This is a contractual obligation, and will contain a financial settlement to exit before completion. Forward purchases may do better or worse than the actual cheese market
