Founded in 1306 in the district of the Mugello,as an outpost of the municipality of Florence, from the 1400's, Scarperia became one of themost important centres in the manufacture of“cutting irons” in Italy and Europe - due to theneed to defend itself, it is said, given its natureas a fortified town of Florence, even if later itwas its position as a trading crossroads thatfuelled the development of this production.
In ancient times, knives, scissors, cutlery andtools used for cutting were called "cuttingirons", from the metal with which they weremade and from the function for which theywere destined. A special and indissolublelink has existed between this definition andScarperia for more than six hundred years.
Soon the production of knives was regulatedthrough the foundation of a guild thatguaranteed that a high level of quality wasmaintained, preventing just anyone fromboasting that his own products came fromScarperia. For this reason, the artisans of thesmall village in the Mugello soon becameunanimously recognised as the true masters ofthe production of cutting irons and were giventhe name of "Master Knife-makers".
MAESTRO COLTELLINAIOMASTER KNIFE-MAKER
The most extreme part of the horn, the only partwhich is solid inside. This allows the entirehandle to be obtained from a single piece ofhorn, in contrast with the normal procedure ofassembling the knife with two sides or 'cheeks'of horn. Indeed, few master knife-makers haveused and continue to use the tip of the horn, given the complexity needed to work with solidhorn, which requires considerably time andexpert craftsmanship. Thus, solid horn isexclusively reserved for the creation of knives ofhigh value and worth.

SCARPERIA
The metal sheet that wraps the upper externalpart of the handle and is perforated by theblade pin. Normally, it is a single piece, butScarperia also gives this name to the bandin two separate parts.
The metal collar, a synonym of band. InScarperia, however, the term "ring nut" mainlyrefers to the two metal discs at the base ofthe handle of some knives, on both sides, perforated by a pin.
The spring that secures the heel permanently, blocking the blade in an open position. Theterm "fixed" refers to the blade which, onceopen, behaves as if it were fixed, making theknife suitable to be used for sharpening.
This is the name given to the two metal plateswhich in knives with handles are coupled ontoboth sides of the upper external part andperforated by the blade pin. In other places, the term "head" is used.
The flat surface of the blade is clearly separatefrom the surface that forms the cutting surface;it follows the dorsal side as a continuationof the blade. In the "knife with three flatsurfaces", however, it indicates each of thethree surfaces made in each face of the blade.
The part of the blade found at the base whichis left flat, before the start of the cutting edge.In folding knives, a hole is made for the handlepin, making the heel a necessity.

SCARPERIA, TERRA DI COLTELLIScarperia, the land of Knives
NEL CUORE DEL MUGELLO
The grassy expanses that cover the hills, like thefolds of an immense cape, stretch as far as theeye can see. Higher up, the road climbs amongmeadows and rows of trees up to the Passo delGiogo from which you can admire the wholevalley. This is the scenery that this area ofTuscany offers the visitor and which is noteasily forgotten.
At the foot of the hill rises a small ancient, typically rural village. Scarperia, a fortifiedvillage, was built to control the trading whichtravelled from the provincial capital of Florenceto the Plain of Lombardy and to the centre ofEurope. It is in the heart of this land, sometimesflat sometimes steep, that the production of"cutting irons" has its roots, a peasant art, rich inpopular knowledge and passion, that fullymirrors the jagged and sharp-edged spirit ofthe Mugello and its inhabitants, simple mendedicated to work, but also rich in talentand commercial skills, who, over the years, have been able to transform an indispensable, every day object into a product of top qualitymanufacture.
IN THE HEART OF MUGELLO
Nobody expected to see a forging art grow fromthese few homes crowded along the townwalls, whose fame to this day still crosses thegeographical borders of the Alps to the northand the Apennines to the south. The productionof knives in this little village soon became ofcrucial importance, both for the village itselfand for Florence, changing the Tuscan villageinto one of the most important artisan districtsin Europe for the production of cutting acces-sories, so much so that even today the productsof Scarperia possess an originality and unique-ness that no mediocre imitation has ever beenable to dim. This is all thanks to the work ofhighly skilled knife-makers, whose talent andknowledge finds expression in the work of theartisans of the Consigli workshops in givingshape to their creations. A long way from uniform
industrial production, they draw a unique stylefrom their origins in Scarperia. A style that isreflected in the blade of each of the knives thatcome from their tireless forge, imbued with thealmost magical atmosphere with which thenarrow streets of Scarperia have been steepedsince 1300.
Toscana, una terra che si racconta.Tuscany, a land which retells history.
COLTELLI REGIONALI
Regional knives are artisan knives that recall themost characteristic Italian production, oftenlinked to very diverse customs, such as huntingor sheep-farming, but with one thing incommon - an intensive usage of what was oncean almost indispensable tool. The production ofregional knives in Scarperia has very ancientroots; the wide production of "cutting irons" inthe centre of the Mugello included numerousmodels of pocket knives destined for different
areas of Italy outside Tuscany and which, forthis very reason, followed the traditions of thoseareas. In time, the regional knife gradually lostits functional value and acquired a new one,a symbolic and conceptual value, a link tothe land and to the close following of tradition. This is why the processes linked both to theproduction of regional knives and the materialsused have become increasingly sophisticatedand valuable. What has never changed is themethod, which to this day still follows theteachings of the Fifteenth and Sixteenth centurymaster knife-makers. Consequently, the knivesare produced by hand by skilled artisans, finelyfinished one step at a time in every little detailand finally decorated with painstakingengravings and noble metals.

The knives of the Consigli workshops bearliving witness to all the history that has markedtheir birth; if we look at them carefully, we canadmire the skill of the very hands of the masterswho have created them, men responsible forsafeguarding both tradition and the instrumentswhich, handed down from father to son, guarantee that the irons of the Scarperia knife-makers never stop striking incandescent metal.

CALABRESEOriginating in Calabria, this knife with a straight, pointed blade has a handle in a style which is mosttypical of Scarperia. It has a trim composed of two round ring nuts, similar to the "Florentine" one, although smaller. It is supposed that a new version of typical Calabrian knives was made inthe past by artisans of Scarperia, who, as often happened, adapted them to their own tradition. This is a model in horn tip.

GOBBO ABRUZZESEThis knife with a slender shape and curved handle is derived from ancient models used by theshepherds of Abruzzo. Its adoption into the range of knives manufactured at Scarperia (where the par-ticular shape of the handle has given it the name of "gobbo" or hunch-back) dates back to the endof the Nineteenth century and took place without any obvious changes with respect to the original type, fitted with a single spring and horn handle all in one piece. This model is made in horn tip.

MAREMMANO AA PPIIAANNEELLLLAAThis knife, originating from the Maremma, became part of the Scarperia production towards the endof 1800.The "Pianella" version was achieved through a development that perfected its ancient cha-racteristics: the side faces of the blade acquired a heel and a pointed surface, the end of the handleis produced in a greater variety of shapes. The result was a more versatile and popular knife whichwas therefore made in numerous versions and sizes. The Maremmano is a model in horn tip.

MARESCIALLIt appears that this was the favourite knife of the Milanese gangsters of the Nineteenth century;it is called "Maresciall" perhaps because of the two steel trims on the handle that look like militarystripes. It is a jack-knife with a common spring, and a very sharp blade, produced in buffalo horn, snake wood and fossil ivory.

MOZZETTA
MOZZETTAThis knife owes its name to its cropped point, which is totally missing as though the blade had beencut off. Knives without points became much more popular with the "Giolitti law" of 1908 that esta-blished the length of the blade of sharp knives at only 4 centimetres. For "mozzettas", the limit wasincreased to ten centimetres, so that it was possible to carry a sufficiently long knife in the pocketwithout risking breaking the law.

NAPOLETANOThe "Napoletano", which has been produced for a long time, is a horn tip knife with an elongatedshape, suitable both for cutting and for just sharpening. It is not clear from which of the traditionalNeopolitan knives the Scarperia model takes its inspiration. The general line is, in some ways, similar to the "Maremmano" in the shape made in the village of the Mugello, but with muchslimmer, lighter proportions.

PALMERINO
PALMERINOThe Scarperia production did not dedicate itself much to the production of pocket-knives. However, adesk model was made, which was used for sharpening goose quills and pencils. This Scarperia pocket-knife was always made without a spring and could have one or two blades; the shape of the hand-le, in one single piece of horn, is unmistakeable. In the catalogues of the beginning of the Twentiethcentury, these articles were indicated as "Pocket-knives for use as Palmerini", which, in actual fact, was the surname of one of the famous Nineteenth century manufacturers. PATTADA*
PATTADA*
This Pattada is the historical interpretation of the Sardinian knife made by Consigli. The handle, for-med by two halves fixed with a row of rivets, and the absence of a true spring, is typical of the origi-nal model, but the line, the shape of the surfaces, and the use of horn, are influenced by the Scarperiatradition. Consigli has had links for many years supplying knifes to Sardinia, so much so that theirPattada have become "Sardinian by adoption".

RASOLINO
RASOLINOThe name of this knife derives from the shape of the blade that is similar to that of a razor. It waspopular after the Giolitti law was passed in 1908, which imposed very strict limits to the carryingof sharp knives and encouraged the production of various models with cut-off points. The main featureof the Rasolino is its slightly back-curving blade and the shape of the handle. Also available in a versionwith a "cigar-cutter" in horn tip as in the normal version.

RONCHETTO VALTELLINESEThis is a cutting tool whose curved blade is similar to that of a pruning knife, albeit smaller. One of many Italian ronchettos, this one, coming from Valtellina and mainly used in viticulture, has a particularly attractive line. Like most humble tools used in agriculture, the handle was usuallymade of wood, but, in this case, polished bovine horn has been used to exalt the pure shapeof the horn tip model.

SENESE
SENESEThe name clearly indicates that it comes from Siena, but this knife was already part of the Scarperiaproduction in the Nineteenth century, taking the place of an older model called "Scimitar" because ofthe hollow shape of the back of the blade towards the point. The handle has no metal trim, exceptfor the tiny patches onto which the three pins are attached. It narrows towards the end and is thusparticularly light. It is made in solid horn tip.

TRE PIANELLEThe name of this typical Scarperia knife is probably derived from the way the blade is machined, withthree surfaces on each face. During the Nineteenth century, three different models were made inScarperia forming part of the "style knives" group that differed, however, in the way the blade-faces weremachined. The first two models gradually disappeared and only one was still produced in the Twentiethcentury. In spite of the aggressive shape of the blade, this knife was not banned. In fact, the lawsof the Grand Duchy of Tuscany first, and the Kingdom of Italy later, allowed them to be used.Knife made in horn tip.

VERNANTE
VERNANTEThe name of this knife is derived from the village of Vernante, in the province of Cuneo and its mainfeature is the blade fitted with a rear extension ending in a button expansion which, when the knifeis open, rests against the back of the handle to act as a stop to the opening the knife. It is an ancientsystem, widely used in the past for making simple knives without springs, but has almost completelydisappeared today. The Vernante is, therefore, an interesting survivor. This model is made in horn tip.

MANICOHANDLE
MANUTENZIONE DEL MANICO MAINTENANCE OF THE HANDLE
The materials that are used by Consigli to createthe handles of its knives are noble and natural, and, for this reason, they need to be treated witha certain care and attention. Horn and fossilivory, for example, but also woods, do not reactwell to humidity and heat. Care must be takennot to wet the handles and not to exposethem to sunlight, as these materials may split. In general, sudden changes in temperature candistort the materials, in spite of the care Consigli
takes in weathering the materials prior tomounting and machining them then. From apurely aesthetical point of view, with age, woodor horn can lose their shine; to avoid thisproblem, in the case of wood, just clean lightlywith a soft cloth soaked in olive oil or bees wax.Horn, on the other hand, can be returned to itsnatural splendour with a good brushing byexpert hands.

MANUTENZIONEMaintenance
Traditional carbon blades tend to become blackdue to a natural phenomenon of oxidation, especially if they come into contact with acids orsalts, but this can also happen with finger contact. The blades can even rust. We advise cleaningblades with a damp cloth, drying them carefully, and covering them in a very thin layer of oil(for example, Vaseline). The operation must berepeated after every use, or every time the bladehas been touched.
MAINTENANCE OF THE BLADE
The stainless steel blade is not totally immuneto oxidation, but requires much less care. Justkeep it clean by rubbing it with a damp clothand then drying it. It is not strictly necessary toapply oil, but it is a good idea to do so, everynow and again. Blades in Damascus steel keeptheir appearance better if they are cleanedcarefully after every use and if they are lubri-cated every now and again with a silicon-basedgreasy substance.
Sharpening is a very delicate operation and onlyexpert hands can guarantee optimal andlong-lasting cutting. Consigli blades leave theScarperia workshop perfectly sharpened, but, after a certain period of use, periodic resharpe-ning is necessary.
To renew the knife edge, use a good steel,at least 25 cm. long and fitted with a guard. The movement to be made is the usual one, passing the blade across the steel starting fromthe top of its blade and from the heel of theknife blade and descending towards the guard.Take care to maintain an angle of 20° so as toavoid scratching the blade. Repeat this move-ment alternating the side of the blade on bothsides of the steel. An alternative method is touse a whetstone.
After prolonged usage of the knife and aftersharpening it several times, it becomes neces-sary, however, to turn to the expert hands of aknife-sharpener who can give the blade itsoriginal edge once more using a grinder. Thisresult would be impossible to obtain only witha stone or steel, especially if the blades aremade in stainless steel.
Each pocket knife has a mechanism that mustbe lubricated regularly to prevent it fromwearing out. The operation consists in insertinga drop of synthetic oil, with the knife closed, between the blade and the spring at the levelof the blade axle while the knife is closed. Then, open and close the knife and removeany surplus oil.
MAINTENANCE OF THE MECHANISM
Residue from the tanning of case leather andexposure to the air can cause oxidation of brasssodi making them lose their shine. They canbecome shiny again by using the productsnormally on the market. Knives with stainlesssteel “sodi” do not need any maintenance.“Sodi” can easily become scratched if they arekept together with other metal objects such askeys.
MAINTENANCE OF THE “SODO”
Knifes are tools created solely for cutting andtherefore they must not be used in an impropermanner. The greatest of care must be taken whenhandling them as they are potentially dangerous.Obviously, they must be kept in a safe place outof the reach of children.
ADVICE ON THE USE
