What you drink is like a personality test—a liquid reflection of your likes, traits, and deepest-seated motivations. Are you a 007 who likes his martinis stirred, not shaken? Or, are you a tequila-drinking lady who howls at the moon?

Yes, we recognize that men who drink stout or saison beers are as different as men who play rugby or tennis; and that women who drink whiskey as opposed to white wine, are as similar as rock climbing and rock collecting.

Which is why we are laying out your options. And there are a lot!

Also, in our current edition of the Cocktail Compass, we have added a Beer Booklet; starting on page 19. In past issues, these guides have been more about a list of venues and happy hours. But we recognize your hunger (thirst?) for more—and we’re here to give you a double shot of information this time around. First, a diverse listing of Central Oregon’s watering holes and happy hours. The front section of this guide and its accompanying app (see page 9), are dedicated to providing you information about where to find your drink of choice, whether it is top shelf gin for date night, or a dive bar for sopping up the break-up sadness.

And then, our new section: The Beer Booklet, an in-depth listing of the region’s many breweries, including insights from many of the esteemed brewers, as well as reviews and beer suggestions from our staff.

Cheers!

Beer Booklet10 Barrel Brewing Co.1135 NW Galveston Ave., 10barrel.com541-678-5228. Perhaps the most notorious brewery in Bend, 10 Barrel is a hometown favorite, but upended the Bend beer scene in late 2014 when it sold to Anheuser-Busch InBev, the company that controls one-quarter of the world’s beer sales. Although controversial, 10 Barrel has continued to be popular and a dominant label. The summer radler, Swill, is a favorite barbecue drink, light and easy.

The Ale Apothecary61517 River Road., facebook.com/alepharm541-408-1525.Head Brewer Paul Arney is an artist in the spirit of free-form jazz musicians like Charles Mingus. A former brewer for Deschutes, Arney has struck out on his own—and where larger breweries strive for consistency, with natural and open-air fermentation processes, he looks to capture moments and environments in his concoctions. “Time and process are as important as the raw materials to the nuances of the finished beer,” he explains. “Each batch is vintage due to seasonality fluctuations and the temperament of brewer.” He goes on, “Our beer is influenced by the ancient brews of humanity, breweries like Cantillon and Orval in Belgium, Oregon craft beer and wine, German historical brewing techniques, traditional Scandinavian brewing and French champagne production methodology.” This is not a starter beer, but for the sophisticated and curious, with seasonals like Sahati, which is brewed in a 200-year-old spruce tree, and El Cuatro, brewed with caramel malts and aged for a year in brandy barrels. Last year’s Be Still, a dedication to his mom, was a carbonation-free, wild-fermented ale aged in Pinot Noir barrels.

Below Grade Brewing CompanyBend, belowgradebrewing.comAlthough Dean Wise has been home-brewing since the early ‘90s, his beer remains somewhat elusive, but is a welcome sight at farmers’ markets and Newport Avenue Market.

Boneyard Beer37 NW Lake Pl., boneyardbeer.comWith an aesthetic that could just as easily market a ‘70s metal band, Boneyard Beer is tried and true, bold and sturdy with its batches. The RPM IPA is certainly the best known, and available on tap throughout the city; bold but balanced, strong but not overpowering with hops. A no-nonsense solid beer. Its seasonals step even more boldly forward, with a winter favorite, Suge Knite Imperial Stout, and a great summer entry, Bone Light India Session Ale.

All the perks of a dive bar, only light, clean and with well-crafted pub fare. Salmonberry Sour was a gold-medal winner at the Great American Beer Festival, an approachable beer that proves that BBC is still Bend’s go-to brewpub for sour ales.Barrio

Bridge 99 Brewery63063 Layton Ave., bridge99brewery.com,541-280-1690. What has been a home operation—literally, brewed in a 400-square-foot attachment to the brewer’s house—is taking a step closer to the big leagues with a part-time tasting room in north Bend. What had been limited distributions of the well-received Bull Trout Stout at a few select sights in town (like Wubba’s BBQ) will now have some breathing room.

Cascade Lakes Lodge1441 SW Chandler Ave., cascadelakes.com/pubs/lodgeMon-Fri, 4pm-6pm: Drinks: Reduced price on imperial pints. Food: $3 off appetizers.Named after the collective bodies of stunning and cold water in our mountains, Cascade Lakes Brewery is celebrating 20 years, and currently brews eight beers—its longtime popular Blond Bombshell and a refreshing anniversary IPA (that is closer to an English IPA), and the unique 20” Brown, one of the few local brown ales, with toasted malt and hop flavors. The labels are classic, with a Marlyn Monroe on the Blond Bombsell and the IRA featuring Bend’s famous Flaming Chicken—or Rising Phoenix—roundabout.

Crux Fermentation Project50 SW Division St., cruxfermentation.com541-385-3333. Tues-Sun, 5pm-7pm: One hour following sunset. Drinks: $1 off beers. Food: $2 off starters.Set on a small hill, and facing the western horizon and mountain range, the Crux brew pub is reason enough for many people to move to Bend. It is as if Encyclopedia Brown grew up, opened a brewery, but kept his clubhouse; the cool kids’ hangout. Happy hour floats with the changes in season, running from 30 minutes before sunset to 30 minutes afterward. The most lumbersexual of the breweries, with bold, friendly and varied beers to match; while Off Leash is a refreshing session ale, the Doublecross is a no-nonsense dark Belgian.

Deschutes Brewery Public House1044 NW Bond St., deschutesbrewery.com,541-382-9242. Mon, 4:30pm-midnight: Drinks: $3.50 pints. Food: Burgers starting at $6.50.The lynchpin. While Deschutes has followed its Black Butte Porter into national prominence—and become the 12th-largest brewery in the country—it has managed to never outgrow its britches. While the downtown brew-pub can be a bit dusky, it is the place to go where everyone knows your name—and even if you’re new in town or visiting, there is a familiar embrace in the air. Deschutes offers many of the beers that have made it world-famous, but head brewer Brian Faivre also ventures out with spunky seasonals like Red Chair NWPA. Mirror Pond is a textbook representation of American pale ale, and The Abyss, offered annually since 2006, is an intensely flavorful Russian imperial stout, with blackstrap molasses, brewer’s licorice from Italy, vanilla beans and cherry bark all popping up in the ingredients; it is a deeply engaging drink. The brewery’s connection to community remains strong, with an annual artist represented on its popular winter Jubelale bottles.

GoodLife Brewing70 SW Columbia Dr., goodlifebrewing.com541-728-0749. Thurs, 11am-midnight: Drinks: $3 pints, $7 growler fills. Mon-Fri, 3pm-5pm: Drinks: $1 off beer, wine, cocktails. Food: $4-$6 special food menu including bacon squares, and chicken wings.A fun-spirited and lively brew-pub, with a relatively recently added beer garden, GoodLife is like the team captain on the varsity squad—good humored and a high-level team player. For the past two years, it has hosted a Winter Beer Festival, encouraging all the regional breweries to contribute their best (like a Puffy Coat Porter) or most-yuletide-spirited blend, like Riverbend’s Winter Mint Stout. More standard is its Dry Hop Pale Ale, and GoodLife is leading the way with canning beer, as a means to prove that sustainability and quality can be in synch.

Juniper Brewing Company1950 SW Badger Ave. Suite 103, facebook.com/juniper.brewing.com, 541-419-7267. Adjacent to the Deschutes County Fairgrounds, Juniper keeps a wide variety on tap, from its best-known Milk Man Wit to a clever collection of IPAs.

McMenamins Old St. Francis School700 NW Bond St., mcmenamins.com, 541-382-5174. Mon-Sun, 10pm-2am: Drink specials till midnight. Drinks: $4.25 McMenamins pints, $4 wells, $6.25 wine. Food: $2.50 Cajun tots, $2.50 fries, $3.50 kale caesar, $4.50 mini veggie burger, and $4.50 mini cheeseburger. Mon, Tues, Weds, Thurs, Fri, Sat, Sun, 3pm-6pm: Drinks: $4.25 McMenamins pints, $4 wells, $6.25 wine. Food: $2.50 Cajun tots, $2.50 fries, $3.50 Kale caesar, $4.50 mini veggie burger, and $4.50 mini cheeseburger. The McMenamin brothers’ contribution to Oregon cannot be understated. What started as a simple brewpub has grown to an empire that delivers a lifestyle—and has renovated dozens of iconic buildings throughout the Northwest. Each is immensely familiar with its mosaic pictures, painted murals and standard Hammerhead and Ruby beers, although each “outpost” also flexes its own personality within those guidelines. In Bend, the Old St Francis School is casual and comfortable, and local brewer Michael “Curly” White is as approachable and friendly as they come—and that personality is reflected in his beers—consistent and fun. “

Oblivion Brewing Co.63027 Plateau Dr., oblivionbrewingco.comEntering its third year, Oblivion has steadily picked up loyal fans and distribution centers, including most of the top shelf restaurants in town (Dojo, 5 Fusion, Barrio). Head Brewer Darin Butschy reportedly tries to “stay true to the Reinheitsgebot purity law,” which translates to sticking to the basics: water, barley and hops. Flavor translation? Clear and pure. Chilling on the patio, under a clear night sky, Polar Star Pale is crisp and refreshing. Snowblivion is a robust dark ale, with undertones of roasted barley and pleasing hops. The flagship beer is Backside IPA, and like many local beers, draws its inspiration from local landmarks; that is, explains co-owner Meg Butschy, “Straw in color, and named after the backside of Mt. Bachelor, it boasts five different varieties of whole-flower NW hops. It will send you to the summit & down the backside!”

Rat Hole Brewpub384 S.W. Upper Terrace Dr.,541-728-8034.Sun-Mon, 4pm-6pm: Drinks: All Beer-Wine-Tapas & Soft Drinks $1 off. Food: Smoked Brat, Fresh Deli Pickle & Chips $6.50.A bit off the beaten path, and tucked into an office park, this small-scale brewery is an earnest undertaking. The Rotation Red Ale is approachable and goes great with their Mexican food.

Riverbend Brewing Company2650 NE Division St., riverbendbrewing.com541-550-7550. Mon-Fri, 4pm-6pm: Drinks: $3 domestic crafts, $4 craft brews, $4.50 premium well drinks, $5 wine. Food: $4-6 Appetizers including jalapeno wrappers, pork sliders, nachos. As much a sports bar as a brewery, Riverbend is a great way to double down. Clean and friendly, with modest modern décor (concrete flooring, gas-fire pits on the patio) the beers here are crafted by veteran brewer Dan Olsen on-site in the 12-barrel capacity facility. Their beers all shoot straight and true: a coffee-flavored stout, a crisp, hop-heavy IPA, an easy-drinking blonde and an approachable red.

Shade Tree Brewing580 NE Hemlock, Ste 106.Available at growler fill stations, this father-son brew team has tenaciously kept homebrewing and distributing in the region for more than a decade. Cool off in the summertime with Mustang Pale Ale, a moderately hopped, amarillo and cascade hop ale.

Bend doesn’t have a monopoly on great beer and cool atmosphere in Central Oregon, with a spacious open-air drinking spot served by several food carts parked in its lot. Our beer reviewer Kevin Gifford gives high marks to their Hopperhead, calling it a “piney, crushable IPA.” Also notable are its labels, some of the best in the business, with playful but serious graphic art, like a bull-riding cowboy on their Mount Up Maple Brown and a Mad Men styled label for their Fly.P.A. Head brewer Paul Bergerman is a mix of traditional PacNW style and unique innovation, throwing in unconventional ingredients. The result is a surprisingly wide variety, especially for such a young brewery.

Worthy Brewing495 NE Bellevue Dr., worthybrewing.com, 541-639-4776Sun-Thurs, 2:30pm-5:30pm: Drinks: $1 off Worthy drafts. Food: $6 personal pizzas. $5 starters including chicken wings, strips or nachos. Since opening just a few year ago, Worthy has provided reliable pours like its IPA and a pale ale—and its fantastic wood-fire pizzas and gorgeous, hop-vined summertime patio rightfully make this a destination spot. This past year Worthy Brewing has begun to reach its full potential with its brewing capacity and innovations. Our beer reviewer Kevin Gifford picked Worthy’s Smoked Wheat Everyday as one of his favorite new beers of 2014, “a Grodziskie-style ale that mixed wheat flavor with attractive smokiness.” Gifford also remarks that “East Side Pale Ale has the pleasant contradiction of a dry finish, but lingering caramel-malt flavor. This is a crowd pleaser pale ale.”

CIDERIES ATLAS Cider House900 SE Wilson Ave, Ste H, Facebook.com/AtlasCiderCompany, 503-957-5175. Named after the owner’s son, Atlas Cider Company ferments its cider with fresh-pressed apples from Northwest farmers, a blend of Cripps Pink, McIntosh, Honey Crisp and Granny Smith apples. The result is a crisp, refreshing, not overly sweet balance of subtle apple flavor with a gentle fizz; it has the refreshing drinkability of a beer and the complexity of a fine wine. Hard Pomegranate-Cherry Cider is a sweet but tart, lightly carbonated sipper.

Far Afield Cider1201 NE 2nd Street, #180, farafieldcider.com, 541-639-8959With the addition of a third cidery, Bend now has a bundle, if not a bushel. In the building formerly occupied by the now-defunct Nectar of the Gods meadery, Far Afield kicked off operations in 2014 with Valiant, a European-style cider, a tad dryer than the norm for U.S. outfits, and Temptation, a spicier, honey-infused kicker. Both are made with apples from Yakima orchards, and both offer a very elegant, almost wine-like tasting experience.

Red Tank Cider840 SE Woodland Ave. #185, redtankcider.com. The cider industry is still young, but already it is showing its next developmental stages—with distinct varieties and seasonals. Red Tank’s Happy Cider is a sweet drink, but Roughneck Cider is more, well, what its name sounds like—bold and complicated.

Silver Moon Brewing24 NW Greenwood Ave., silvermoonbrewing.com, 541-388-8331Mon-Thurs, 8pm-10pm: Drinks and Food: Daily specials. Fri-Sat, 8pm-midnight: Drinks and Food: Daily specials. The fourth-oldest brewery in Bend, this down-home brew pub is the closest to a college town pub, hosting sometime rowdy bands and occasional home brew competitions. Its beers have been consistently strong and occasionally playful and experimental over its near decade-plus existence.

Smith Rock Brewing Company546 Northwest 7th St., Redmond. facebook.com/smithrockbrewing One of the more recent additions to the Central Oregon brewing scene, this Redmond brewery is a great spot to cool off rope burns with Smith Rock Brewing Porter.

Solstice Brewing Company234 N Main St., Prineville, 541-233-0883Solstice is a good-spirited brew-pub local to Prineville. It has traditional pours, like its good-humored Prinetucky Pale Ale, and the more bountiful tastes like Boot Stomp ‘n Stout. Available for growler fills and in kegs.

Sunriver Brewing Company57100 Beaver Dr., Sunriver. sunriverbrewingcompany.com541-593-3007. Sunriver Brewing is a shining example of the new generation of brewers who have come of age with studied mentorship and formal training. Head brewer Brett Thomas is a 2010 Falconer Foundation scholarship recipient and a 2011 graduate of the American Brewers Guild with a degree in Intensive Brewing Science and Engineering. He is a very technical brewer, priding himself on making high quality and well balanced award-winning beers, like the perky Vicious Mosquito IPA and a solid Shred Head Winter Ale.

Three Creeks Brewing Co.721 Desperado Ct., Sisters. threecreeksbrewing.com541-549-1963. Mon-Fri, 3pm-6pm: Drinks: $3.50 drafts, $4.25 wines. Thirsty Thursdays - All day growler specials. Food: Great happy hour food options. Ask you server!Since its founding in 2008, Three Creeks Brewing Company has produced solid beer and pub food from its barnlike building on the outskirts of Sisters, but has struggled to keep up with demand for its Hoodoo Voodoo IPA, Raptor Rye and FivePine Chocolate Porter. With a new 30-barrel production system online in early 2015 and head brewer Zach Beckwith, Three Creeks is stepping up its game and also launching the new “Desperado” series of seasonal bottle releases, with blends like Bulletproof Coffee Stout, an 8.0% ABV stout with heavy malt flavor and fairly intense coffee on the nose and palate. And look for a strong ale and imperial IPA coming later in 2015. In the summertime, highly recommended is the clean Cone Lick’r Fresh Hop Pale Ale.
