Low in fatAustralian waistlines are among the widest in the world, sparking fears that obesity-related diseases will take their toll on our already over-stretched health system. A greater reliance on fresh fruit and vegetables, which have a low-fat content, could help those battling to lose excess kilos. Nutritionist Catherine Saxelby says in her book Nutrition for Life that reducing weight almost always reduces cholesterol (both total and the harmful LDL-cholesterol) as well as lowering blood pressure. Many fruits and vegetables are also regarded as low GI (Glycemic Index) foods, helping you to feel full for longer and keep blood sugar levels steady, reducing the storage of fat.

Fresh fruit and vegetables are known as the all stars because of the punch they pack in the health stakes.They are low in fat, provide protective nutrients to help combat disease and are a rich source of fi bre. Here’s a guide to the benefi ts of nature’s very own super foods…

Healthyfor thought

High in nutrientsDark green leafy vegetables, such as spinach and Asian greens, are packed with nutrients. Make sure they make a regular appearance on your plate because they are known to be rich in the B vitamin folate which may help to reduce homocysteine, a risk factor for heart disease. Folate also has a role to play in the formation of red blood cells and enzymes and preventing anaemia. Spinach is also a good source of protective antioxidants vitamin C, beta carotene and vitamin E. In fact, a standard serve of spinach provides 10 milligrams of vitamin C, one-third of the recommended daily intake. Greens are also sources of minerals magnesium and iron, while calcium is found in broccoli.

Rich in fi breBy eating a diet rich in fruits and vegetables, you are improving the fi bre profi le of your diet. That will aid digestion and prevent constipation, reducing the need for laxatives and lowering the risk of developing haemorrhoids and diverticular disease (a condition affecting the large bowel or colon). Saxelby says fi bre can also help prevent cancer, by diluting the bowel contents and shortening the time for the food residue to pass through, thus minimising contact with any carcinogens (cancer-causing substances) ingested. It also has the ability to bind possible cancer agents and excrete them. She even thinks fi bre is responsible for the saying, “An apple a day keeps the doctor away!”

As a happy, athletic 25-year-old, Amy Malsem was busy running her own business and enjoying an active life. A sore throat resulted in a common diagnosis of throat infection, but the infection was actually one that attacked Amy’s organs, mostly her heart.

Most women Amy’s age don’t have their own cardiac teams, and don’t have to know or truly understand words such as severe heart failure, dilated cardiomyopathy, transplantation and ejection fraction. Her personal favourites to know and understand were life-saving, surgery-avoiding beta-blockers.

The journey from these fi rst words to the present day has included many unpredictable challenges and triumphs which Amy has met with courage, determination and a well-maintained sense of humour.

“In my opinion, the keys to regaining excellent health are overcoming the fear of the prognosis, proactively accessing accurate expertise and information, laughing with the people you love as heartily (no pun intended) and as often as possible and shopping, using the

BEST excuse ever, ‘I literally can’t live without owning those shoes’,” she says.

Amy, now in her 30s, continues to manage her heart condition well and is thoroughly enjoying her business and social life. She fi nds fun, challenging ways to stay healthy, like learning to swim butterfl y despite limited talent for it and walking her two energetic dogs. Amy also enjoys her time spent inspiring others to live a full and healthy life.

Turn the slow cooker on to low to pre-warm while gathering and preparing the ingredients.

Cook the onion in the butter in a frying-pan over a moderate heat for about 12–15 minutes, stirring occasionally until the onion is soft. Try not to brown the onion.

Hit the lemon grass stalks with a mallet or the handle base of a cook’s knife to bruise them. This allows the fl avours to come through during cooking.

Into the pre-warmed slow cooker put the onion and butter from the pan with the lemon grass stalks, leek, potatoes, water and chicken stock powder and stir as well as possible to mix the ingredients evenly. Cover with the lid.

Cook on low for 5–6 hours or on high for 3–4 hours, or until the potato is tender.

Remove the lemon grass stalksand purée the ingredients in a food processor or with a blender until smooth. Return to the slow cooker with the milk, crème fraîche or sour cream and chives and cover with the lid.

Cook on high for 30 minutes before serving hot with a drizzle of olive oil (lemon-scented is nice here) and a few extra chives. Alternatively, allowthe soup to chill and serve cold.

serves 6–8preparation time 20 minutescooking time low 5–6 hours, high 3–4 hours, plus extra 30 minutes

Potato & lemon grass soup

250 grams frozen or fresh spinach2 spring onions, trimmed and fi nely chopped¼ cup well-packed chopped fresh parsley½ teaspoon dried dill leaves or 1 tablespoon chopped fresh dill100 grams feta, crumbled¼ cup grated Parmesan½ –¾ cup pine nuts, toasted1 boned full leg of lamb1–2 onions, peeled and fi nely chopped1–2 teaspoons minced garlic1 cup green olives1 cup dry white wine½ cup olive oil, extra virgin olive oil is nice here400-gram can borlotti beans, butter beans or chickpeas, well-drained and rinsed½ cup chopped fresh parsley grated rind one lemon

serves 10preparation time without browning 30 minutespreparation time with browning 40 minutescooking time low 5–7 hours, high 3–4 hours, plus extra 30 minutes

Greek lamb with spinach, pine nuts & feta

Turn the slow cooker on to low to pre-warm while gathering and preparing the ingredients.

Defrost the spinach if frozen and place between two dinner plates. Squeeze the plates over a sink and allow excess moisture to fall away. Press as fi rmly as you can so the spinach is as dry as possible. If using fresh spinach, wash the leaves, remove the stalks and cook the leaves in a saucepan with only the water that clings to the leaves, until wilted. Drain and chop fi nely.

Mix the spinach together with the spring onion, parsley, dill, feta, Parmesan and pine nuts. Season well with pepper.

Using skewers, secure the opening at the knuckle-end of the boned leg of lamb. Pack the fi lling into the cavity where the bone has been removed. Use skewers and/or string to secure the opening at the top of the leg of lamb to ensure the fi lling is well-enclosed.

If wishing to brown the lamb:Brown the lamb as well as possible in a dash of oil in a hot frying-pan. Transfer to the slow cooker.

Scatter in the onion, garlic and olives, and then pour in the wine and olive oil. Season with salt and pepper and cover with the lid.

Cook on low for 5–7 hours or on high for 3–4 hours. Carefully remove the lamb from the slow cooker.

Scatter in the beans or chickpeas, parsley and lemon rind and stir to mix. Cover and cook on high for a further 30 minutes while the lamb is resting.

Serve the lamb sliced with spoonfuls of the sauce and vegetables and accompany with grilled, sliced eggplant and baked vine tomatoes.

Chloe, Will, Annabel and Charlie Champion spend their time at Warringah Mall. Here’s what they choose when they have a fast food craving.

Chloe ChampionWhen budding model Chloe catches up with friends at the mall, she opts for healthy, low-fat takeaway to keep her trim for fashion shoots. A 99% fat-free Berry Crush from Boost Juice, a grilled chicken caesar salad from Sumo Salad, fresh sushi or sashimi from Sushi Bar or a vegetable stir-fry from Simply Noodles. These are her favourite fast food choices. Well, most of the time. Every now and then she splashes out on a sweet treat, usually a chocolate muffi n from Muffi n Break.

Will ChampionSkateboarding and surfi ng require plenty of energy food so Will is pretty keen on carbs to fuel his hobbies. In the blissful position of being able to eat anything he likes without piling on the kilos, Will often incurs Chloe’s outrage as he tucks into nachos, tacos or burritos with lashings of cheese and sour cream followed by a serve of piping hot potatoes from Wrap the Mexicana. Or if he’s in the mood for pasta, he’ll head to Pasta e Basta for a slice of delicious lasagna.

Annabel ChampionAnnabel is the dessert queen of the family. If her parents permitted, she would eliminate main meals and just eat cake! At the mall, she can’t go past the Tiny Teddy Sundae from Donut King. If she’s with Chloe, she usually delights in a donut or two in any fl avour! When sweets are off the menu, she enjoys a Crispy Chicken Snack wrap from McDonald’s.

Charlie ChampionIn the taste department, Charlie is the most easy-going of all the Champions. He’ll eat almost anything. He’s partial to a chicken burger from Oporto and teriyaki beef rolls from Rockin’ Rolls. Of course, he likes all the fi nishing touches too, especially the great range at Wendy’s. It’s always a tough choice between the Ice Cream Cupcake fi lled with a scoop of ice cream and topped with fl avoured whip cream and chocolate or the Mega Triple Choc Shake. Sometimes he takes so long to make up his mind that Chloe and Will buy both for all the family to share.

Turn the slow cooker on to low to pre-warm while gathering and preparing the ingredients.

Sift the fl our and cocoa into a bowl. Rub in the butter until the mixture resembles fi ne crumbs.

Stir in the sugar and make a well in the centre.

Beat the milk, eggs and vanilla essence together and mix into the dry ingredients using a holed spoon to form a stiff batter.

Into the pre-warmed slow cooker, put the boiling water, rum or coffee liqueur, sugar and cocoa and stir to dissolve the cocoa.

Carefully spoon the batter evenly into the slow cooker and cover with the lid.

Cook on high for 1 hour then turn to low for a further 1 hour.

Serve hot with ice cream and cream.

1. On your bikeThroughout winter, Sydney is often blessed with clear skies and calm, sunny days, the perfect conditions to experience the adrenalin-packed sport of mountain biking.

Mountain biking is ideal for all the family and it’s something you can do on your own or with a group or club. It’s easy to get started. Simply hire a bike (and helmet) or buy a set of wheels and hit the many trails in the Northern Beaches from Manly Dam to West Head and beyond.

Mountain bikers tackle all sorts of terrain from fi re trails and back roads to fi elds and mountains. It’s a great

workout too. As you ride over bumpy, hilly terrain then soar down hills, you will be boosting your cardio fi tness, building muscle, burning fat and improving balance and core strength. And it’s fun being in the great outdoors and riding in beautiful countryside.

Start off with some simple rides to slowly build up your endurance before attempting longer, harder journeys (See Where to go for a few ideas on local trails). Visit the Northern Beaches Mountain Biking Group’s website www.nobmob.com for details on social rides and how to enjoy the sport with like-minded people. Where to goYou don’t have to go far on the Northern Beaches to fi nd great places to ride. The 9.7km loop around Manly Dam is regarded as one of Sydney’s best rides and suits all levels, from beginner to advanced.

Bairne Track is an easy 10km fi re trail ride, perfect for beginners, rewarding riders with stunning views over Pittwater. The Northern Beaches Mountain Biking Group recommends driving to West Head Road then continuing on for a further 6.2km from the junction with McCarrs Creek Road. You will need a National Parks and Wildlife pass or you can park by McCarrs Creek and cycle up.

Gear to goFor a range of comfortable gear, including shorts and shirts, to wear mountain biking, visit Rebel Sport, Lorna Jane and lululemon athletica at Warringah Mall.

It may be winter but there’s a lot to do inside and out on the Northern Beaches. You can go mountain bike riding, swimming, hiking or work out in the gym. Here’s a guide to help you get started…

2. Hit the water Swimming in winter can be more challenging than other sports because of the chill factor. While some hardy souls swim all-year round, even travelling up the coast and beyond to compete in ocean swims, it will not be for everyone, even with the best wetsuit money can buy.

However, there is no excuse for not swimming indoors in a heated pool at your local swim centre. Some centres also have an outdoor heated pool that is open all-year round or open from August. So you can get fi t in winter, pencil in a few events on your calendar for next summer to test out your new-found endurance and improved cardio fi tness.

You can start off with a gentle swim then build up to something more ambitious. For example, aim to swim about 500m or whatever feels comfortable then start adding more lengths until you are swimming about 1km or more, depending on your goals. Mix up your strokes and pace and add variety to your routine with a kickboard and fi ns. To add another dimension, start timing your lengths or join a squad (see Where to go).

If you haven’t had a swimming lesson since you were a teenager or even earlier, consider stroke correction classes. It may only take one 30-minute session to improve your speed through the water.

Aboriginal paintingMy all-time favourite thing is a beautiful piece of traditional Aboriginal art by Charlie Tjapangati that I bought a few years ago from Birrung Gallery in Woolloomooloo. I have been an ambassador for World Vision which runs this gallery and much of the proceeds go back into the community to help areas such as housing, sanitation and welfare. It is a win-win. The money goes to a charity and I have something beautiful in the house to teach my kids about the indigenous people of this country. It’s the fi rst piece of art I have ever bought and it has pride of place in the lounge room.

BookshelfI am a voracious reader and I keep every book I love on this bookshelf in my home offi ce. It gives me great joy, reminding me of everything I’ve loved about the books. I think it is quite striking and must be strong because I have so many books on it.

Masai necklaceI was given this necklace by Masai tribespeople when I was working for World Vision in Kenya. I keep it on my bookshelf with other African artefacts. It reminds me of the two trips I took that changed my life: one to Bangladesh and one to Kenya. It’s a constant reminder of how fortunate we are to live in a western country and how important it is for us to help those less fortunate whenever we can.

Slow cookerMy best friend bought me a slow cooker for my birthday last year. It’s truly the best thing since sliced bread. I am mad about cooking corned beef so I’ll put the meat on fi rst thing in the morning and let it cook for nine hours before taking it out and serving with vegetables. It’s a great invention for a working mother.

ComputerI love my new computer. I love it almost as much as my husband. I’ve always had pretty ordinary PCs but recently I bought a desktop Mac with a screen almost the size of a cinema. I do so much writing from home that it’s great to have something as wonderful as this to work on.

After a spell of shopping, your exit from Warringah Mall’s carpark will be smoother and swifter thanks to a new payment system.

Warringah Mall will introduce a fast, effi cient Auto Pay system on 1 July so you can pay before returning to the driver’s seat.

The new payment method applies only to stays over three hours. Shoppers will still be entitled to three hours of FREE parking, or four with a movie ticket.

So how will it work? After you park your car, you simply take your ticket with you when you shop. If you’ve been shopping for less than three hours, simply return to your car and exit as usual.

If you’ve been at the mall for over three hours, simply pay at the Auto Pay machine using cash, Visa or MasterCard before stepping back into your car or you can pay at the exit gate with Visa or MasterCard. When you exit, simply insert the ticket.

Commenting on the new system, Philip Spence, Warringah Mall Centre Manager, said: “We’re delighted to put in place a modern and effi cient parking system to help save our customers time when exiting the mall. The new system will make a visit to Warringah Mall an even better experience for shoppers.”
