The snack ideas in this booklet were contributed byLINC Childminding programs, as well as some sel-ected from reference books and websites. We wouldalso like to acknowledge the kind help and advicegiven to us by dietitians Sielen Raoufi and ChrisCallaghan, from the Toronto Public Health andMiddlesex-London Health Unit respectively. This proj-ect was funded by Citizenship & Immigration Canada.

Our intention in gathering these recipes is to help pro-grams plan a variety of snacks that are easy to prepare, reasonable in cost, from different cultures,and require no cooking.

You will find ideas that can be offered daily for morn-ing, afternoon or evening snack times. Each snackidea contains foods from at least two of the four foodgroups, namely: Grain Products, Milk Products,Fruits and Vegetables and Meat and Alternatives.

Recipes are organized into a number of sections,including “Fun and Holiday Snacks” and “SpecialSnacks”, which include recipes familiar to specificcultures. Throughout the snack booklet you will find“Did You Know?” cultural facts, which came fromthe “Cultural Profiles Project” developed byCitizenship and Immigration Canada.

Whenever possible, we encourage childcare staff toinclude children in preparing and serving snacks,for an enjoyable learning experience.

Allergies are increasing at epidemic rates, and

childcare programs have seen a growing number of

children diagnosed with allergies in recent years.

Food restrictions have particular significance in

programs providing care for children from different

cultures.

The best source of information is always the parent!

As caregivers, we have an obligation to create a

safe and healthy environment through awareness,

understanding, and open communication with par-

ents. Because children can be allergic to a wide vari-

ety of foods, or have food restrictions for other rea-

sons, it is especially important to talk with parents and

plan snacks carefully.

AlternativesUse refried beans and a small amount ofshredded mozzarella spread on the tortillashells, then warm it enough to melt thecheese

How You Make It

1 Spread spaghetti sauce (thinly) over the tortilla shells

2 Sprinkle mozzarella cheese over the sauce3 Roll them up and place on a tray in toaster

oven4 Bake at 325 degrees for 10 minutes or until

1/2 cup corn syrup12 ounces marshmallows4 drops green food coloring4 cups Rice Krispies, Cheerios or cornflakes6 chopped raisins8 inch square pan

How To Make It

1 Melt corn syrup and marshmallows inmicrowave oven

2 Add green food coloring and mix 3 Add cereal and stir quickly4 Grease or spray 8 inch square pan and pour

contents into pan5 Allow to cool in fridge, then cut into long

thin strips, about 1 x 4 inches6 Stick pieces of raisin on one end of each

strip to make the lizard’s eyes

1 Choose different “treasures” to “bury”2 Place about 2 tablespoons of each treasure

on the bottom of each dish (you may putmore than one treasure in each dish!)

3 Pour cold milk into bowl4 Add pudding mix and whisk for at least 45

seconds5 Gently spoon or pour pudding from bowl

over the treasures6 Pudding will thicken quickly and be ready to

1 Prepare JELL-O according to packagedirections and chill 4 – 5 hours until firm

2 Scoop cottage cheese into a bowl3 Drain and set aside syrup from the blueberries4 Add the berries to the cottage cheese and

mix well5 Add three drops of food coloring to turn the

cottage cheese a nice blue when blended6 To serve salad, place a few spoonfuls of firm

gelatin onto individual serving plates7 Top with a scoop of cottage cheese mixture

for snow, and serve
