Meet… Parker Pepper

Parker is grown in Texas, a top U.S. producer of peppers. Peppers were named by Christopher Columbus and Spanish explorers in search of peppercorn plants to produce black pepper. How do peppers grow? They grow on plants similar to tomato plants that reach 3-4 feet high. It takes 70-90 days for the plant to produce peppers, which are the fruit of the plant. Peppers are usually picked when they are 3-4 inches in diameter or larger. They can be green, red, yellow, and orange. The pepper changes colors as it ripens. Red peppers are sweeter than green peppers because they are riper. Pepper are vegetables. They can be eaten raw or cooked. Peppers contain Vitamin C, Vitamin A, and Fiber.

Flavor & Fun Taste Adventure Try it at Home Bell Pepper Quesadillas 1 tsp. olive oil 1 green pepper, sliced thinly 1 red pepper, sliced thinly 1 yellow pepper, sliced thinly ½ tsp. cumin ½ tsp. lime juice 2 ½ cups grated cheese 8 tortillas Mix the peppers (green, red, and yellow) with olive oil and cumin, lime juice, and salt. Cook for about 5 minutes on medium heat in a pan. Place four tortillas flat on a baking pan (or griddle). Place a thin layer of peppers on each tortilla and cover with cheese. Fold the tortilla over. Cook until cheese is melted, flipping the quesadilla over halfway through cooking. Cut each tortilla into 4 pieces with a pizza cutter.

Parts of a Plant

Fruit – A fruit is a fruit if the seed is surrounded by the fleshy part that we eat. Foods such as apples, bananas, cucumbers, peppers, tomatoes, and squash are all fruits because there is a fleshy part around the seed that we eat. Leaves – The main function of a plant’s leaves is to gather energy from the sun to carry out photosynthesis and make food for the plant. Many leaves of plants are edible and are grown for food. Edible leaves include cabbage, lettuce, grape leaves, parsley, spinach, mustard greens, and Swiss chard. Not all leaves are edible and you should never eat anything that you are unsure of unless it is approved by a responsible adult. Stems – Stems support leaves, flowers, and fruit. Liverworts, hornworts, and mosses are the only green plants that do not have stems. Stems can be very short, as in lettuce plants, or very tall, as in the trunks of redwood trees. Edible stems include celery, asparagus, bamboo shoots, rhubarb, and sugar cane. Flowers – Flowers are the reproductive parts of plants. Some flowers have colorful petals and fragrances that attract pollinators such as bees, flies, butterflies, and moths. Most flowers produce seeds. When planted in the proper environment, seeds grow into new plants and the ripened ovary becomes the fruit. Flowers of some plants are edible, including broccoli, cauliflower, and artichokes. Other flowers such as zucchini and orchid flowers, are considered a delicacy in some parts of the world. Be warned that some flowers are poisonous and you should never eat anything you are unsure of, unless it is approved by a responsible adult. Roots – We also eat the roots of some plants. A root is under the ground and has many hair like parts that get minerals and water from the soil. Root foods include carrots, radishes, parsnips, and turnips. Seeds – Plants produce seeds so their species will continue to exist in nature. Seeds provide food to people all over the world. Edible seeds, known as legumes, include peanuts, peas, and beans. Other edible seeds include nuts, such as walnuts, almonds, pistachios, and pecans.

Clovers To the Following 4-H Members & Volunteers Each month we will give “clovers” to 4-H members, volunteers and community supporters for their outstanding work representing St. Martin Parish 4-H! Check back each month!
