HOW TO MAKE

CHOCOLATE GANACHE MUFFINS

It was time for a treat, the first week back after Christmas. These muffins are for serious

chocolate lovers and lead to huge smiles from the kids.

You will need : -

2 cups all-purpose flour

1/2 cup granulated sugar

1/4 cup cocoa and 1 tbsp to dust the chocolate chips

1 tbsp baking powder

1/2 tsp salt

1 stick butter (melted)

2 eggs beaten

1 cup whole milk

1 tsp vanilla extract

2 tbsp maple syrup

1 cup chocolate chips (3/4 cup to be included in the mix and 1/4 cup to sprinkle on the

top of the batter)

ganache : -

1/2 cup semisweet chocolate

1/4 cup heavy cream

pinch salt

First you need to set the oven to 375 degrees. Then melt the butter over a gentle heat so that it

can cool before you add it the mix later on - no scrambled eggs needed here!

Just pop the flour, sugar, cocoa, baking powder and salt into a bowl.

then in a separate bowl combine the wet ingredients, the milk, beaten eggs, melted butter and

vanilla extract (don't you just love the smell of vanilla!) Now make a well in the dry

ingredients and mix in the wet ingredients. Grab a spatula and stir as little as possible to

combine, try not to overmix...this is the great thing..lumps are actually fine...now stop just

before it is completely combined...

next dust the chocolate chips with the tablespoon of cocoa to prevent them from sinking to the

bottom

pour these and the maple syrup into the mix and gently mix just enough to combine them into

the mix...

now pop them into cases or if you would rather not use cases spray your tins. Scoop the mix

into the cases, ice cream scoops are great for this. Fill them until they are approximately 3/4

full (higher then you would for cupcakes). You should have the reserved 1/4 cup chocolate

chip to sprinkle onto the uncooked mix.

next put them into the 375 degree oven for 20 minutes and then leave to cool on a wire rack.

Once they are cooling melt and combine the ganache ingredients, the chocolate, cream and

salt over a double boiler.

Then spoon over the cooled muffins and leave to set, before too many people realise you have

just cooked ganache...
