West Chinese food is shaped by geography as well as history. In stereotype, and indeed in reality, the cuisine is distinguished by two things: its use of mountain products, and its hot spicing. China's wettest and most biologically diverse areas occur in this mountainous region. Chili paste or dried chilies, garlic and ginger are some of the most common ingredients.
Our favorite Sichuan dishes are Ma Po Tofu, Kong Pao Chicken and so on.

Traditionally, steamboats were heated with coal, but nowadays in most modern homes electric or gas hot pots have replaced the coal hot pot. We use an electric wok pot, some friends use a couple of fondue pots, others their Japanese Shabu Shabu pot, they all serve the purpose.

Chinese Hot Pot Cooking is a fun way to enjoy a meal together where everyone cooks his or her own food right at the table. Chinese Hot Pot, also known as Chinese Steamboat or Chinese Fondue because of its similarity to the French counterpart, is prepared in a metal pot which is placed in the center of the table. The pot is filled with simmering stock and all the ingredients are added and cooked in the broth.

北京烤鸭The dish is prized for the thin, crisp skin, with authentic versions of the dish serving mostly the skin and little meat, sliced in front of the diners by the cook. Ducks bred specially for the dish are slaughtered after 65 days and seasoned before being roasted in a closed or hung oven. Hunan people are addicted to pepper. That flavors from Sichuan people’s favor also spicy and hot cuisine, while Hunan people favor sour and hot cuisine. Sour, which differs from vinegar, while combined with hot, forms a distinguished flavor.
Chili, pepper and shallot are usually necessaries in Hunan dishes. However, Chili, peppers, garlic (suan) and an unusual sauce, called “strange-flavor” sauce (guai wei jiang) on some menus, enliven many dishes, with a somewhat drier intensity than that of their Sichuan counterparts. Sweetness, too, is a Hunan culinary passion, and honey sauces are favored in desserts such as water chestnut or cassia flower cakes.

A typical Chinese meal is normally contain some main dishes � �as opposed to one main dish. Normally, all dishes are set on the table at once and everybody helps him/herself to the selection. There is typically a couple meat dishes, chicken, beef or pork, a vegetable, fish or seafood, and a soup.
The fan element made up of starches and grains, normally white rice in the southern provinces, and noodles or dumplings in the north where wheat is common.
The tsai element containing the meat and vegetable element, all cooked in a variety of ingredients and methods producing a large range of flavors.

The Tang Yuan's way of making is pretey similar with that way of making Jiaozi. They use wet flour wrappers to fold around a filling. “The Mid-Autumn Festival falls on the 15th day of the 8th lunar month, usually in October in Gregorian calendar. The festival has a long history.In ancient China, emperors followed the rite of offering sacrifices to the sun in spring and to the moon in autumn. Historical books of the Zhou Dynasty had had the word "Mid-Autumn". Later aristocrats and literary figures helped expand the ceremony to common people. They enjoyed the full, bright moon on that day, worshipped it and expressed their thoughts and feelings under it. MoonCakes are to Mid-Autumn Festival what mince pies are to Christmas. The seasonal round cakes traditionally have a sweet filling of lotus seed paste or red bean paste and often have one or more salted duck eggs in the center to represent the moon. Story About MoonCakes:One day all 10 suns appeared at once, scorching the planet with their heat. A man named Hou Yi shot down all but one of the suns. He saved the earth and his reward from Heavenly Queen Mother was the Elixir of Immortality, but she warned him that he must use it wisely. Hou Yi ignored her advice and, corrupted by fame and fortune, became a tyrannical leader. Chang-Er, his beautiful wife, could no longer stand by him abuse his power so she stole his Elixir and fled to the moon to escape his angry wrath. And thus began the legend of the beautiful woman in the moon, the Moon Fairy.

Since the Spring Festival marks the first day of a brand new year, the first meal is rather important. In Northern China, people usually eat Jiao Zi (or dumpling) which is shaped like a crescent moon. It is said that dumplings were first known in China some 1,600 years ago. The shape of Jiao Zi resembles that of ancient gold and silver ingots or a crescent moon, and symbolizes the hope for a year of plenty. The Chinese Dragon Boat Festival is a significant holiday celebrated in China, and the one with the longest history. The Dragon Boat Festival is celebrated by boat races in the shape of dragons. Competing teams row their boats forward to a drumbeat racing to reach the finish end first. The boat races during the Dragon Boat Festival are traditional customs to attempts to rescue the patriotic poet Chu Yuan. Chu Yuan drowned on the fifth day of the fifth lunar month in 277 B.C. Chinese citizens now throw bamboo leaves filled with cooked rice into the water. Therefore the fish could eat the rice rather than the hero poet. This later on turned into the custom of eating zongzi and rice dumplings.

The story of Qu Yuan shows us the legend of a tasy glutinous rice dumpling called Zongzi, a popular specialty consumed during the Dragon Boat Festival. According to the tale, the spirit of Qu Yuan appeared before a group of fisherman, crying out to them that he was starving because a dragon was eating his rice offerings. The offerings consisted of bamboo tubes filled with gluttinous rice. In order to prevent the dragon from stealing them, Qu Yuan ordered the tubes to be closed with lily leaves adn tied with multi-colored threads. Today's Zongzi is made similarly, with a serving of rice wrapped in leaves and tied together with string. The way the string is wound and kontted tells waht ingredients are inside.
