1: Curry
Cut chicken into bite-sized pieces. Chop half the cilantro leaves. Shake coconut milk well before opening.
STOVE TOP Heat 2 Tbsp. vegetable oil in large skillet over medium heat. Cook onions until tender and lightly browned. Add garlic and cook 2 minutes or until fragrant. Add curry powder, ginger powder plus 1 tsp. of sugar; stir to coat onions and garlic. Add the coconut milk and yogurt to the pan plus 1/4 cup of tomato paste, stir until blended well. Add raw chicken pieces and stir. Bring to a boil, then reduce heat and simmer for 20 minutes. Stir in juice of the entire lemon plus 1/4 tsp of cayenne pepper (or 1/2 tsp of cayenne if you prefer it really spicy) and simmer for 5 more minutes. Stir in chopped cilantro just before serving.
2: Broccoli & Cauliflower
MICROWAVE Steam broccoli and cauliflower in microwave according to the instructions on each package. Serve equal amounts of each vegetable on a plate and spoon curry over top.
3: Naan Bread
Ready to serve. Warm in microwave if preferred.
