Once upon a time, a cheese board was round with cubes of alternating colored cheeses circling a bunch of grapes in the center. Luckily, for those of us in the specialty cheese business, we have seen major changes in the past few years with the growth of American Artisan cheeses in the deli. Cheese boards are adorned with exceptional cheeses like, Vermont Bandaged Wrapped Cheddars, silky California Triple Crèmes, and rich Oregon Blue Cheeses. Today, the demand for specialty cheese boards is growing along with the idea that the accompaniments should equal the cheese board or make it better. There are many companies like Rutherford & Meyer that put out exceptional pastes that pair with many of the artisan cheeses that you put on a board. Bringing rich fruit flavors that marry the buttery flavors of the cheese enhances the enjoyment of the cheese board and the pairings. As I travel across the United States working with a diverse number of delis, supermarkets and cheese shops, I am seeing an increasing number of cheese professionals at these locations. With over 400 American Cheese Society Certified Cheese Professionals out there and another 300 taking the exam coming up, there has never been so much change in our knowledge and passion for cheese. Customers are exposed to cheeses today that were not viable in the past. With a Professional Cheesemonger standing over the counter, the customer gets a hands on introduction to the cheese and what goes with it. If they are lucky, the customer will get some quick tips on how to pair the cheese with Artisan fruit pastes and Charcuterie. We are proud to bring some of America’s finest Artisan Cheeses to the delis, supermarkets and cheese shops around the country, knowing that there’s a professional Cheesemonger behind the counter.

A robust, wonderful canvas for the spice and smoke of chipotle. Hand-rolled ground chipotle over cheddar curds creates the beautiful reddish-orange marbled finish.

This is a 75 day old cave-aged blue cheese. Limiting the aging to 75 days creates a blue cheese with a pleasant, tangy,"not too sharp" flavor profile. It is perfect for sprinkling on a salad or melting over a hamburger.

Cave-aged a minimum of 90 days, this cheese is somewhat sharper in flavor but less acidic, rendering a sweet flavor profile. The sweetness of our Gorgonzola pairs up well with dried fruit and nuts or as a dessert cheese.

In the cheese city of Woerden, which lies about 25 km south of Amsterdam, the van den Wijngaard family has been making cheese for generations. The cheese they make is called Reypenaer, a special variety of Gouda. This cheese is nothing like the factory-made cheeses everybody has become accustomed to. What is it about Reypenaer that gives it its distinctive aroma, flavour, and smoothness? The answer lies in authentic craftsmanship and the old family warehouse.

In the old city centre on the banks of the Old Rhine river, you will find a historic cheese warehouse dating back to 1906. It is there that you will also find a commitment to craftsmanship, which has been handed down from generation to generation, that has never been compromised. For example, the countless cheeses in the old warehouse are still turned and wiped down by hand.

Another essential characteristic of the century-old warehouse is its natural fluctuations in humidity and temperature. These variations occur during the day, as well as throughout the year, accelerating the ripening process as temperatures rise and slowing it down as it becomes cooler. The gradual improvement in the aroma, taste, and texture of Reypenaer results in what specialists refer to as a complex taste with a great depth.

In order for a cheese to be awarded the designation of “Reypenaer”, it has to be stored for at least one year. The showpiece is the “Reypenaer VSOP”, which is left to ripen for two years.
