History of HACCP

• HACCP is not a new system. The concept was developed in the 1960s for NASA and the US Army Laboratories to provide safe food for space expeditions.

• Purchase of all food from safe suppliers

• Safe storage of all foods

• All food is cooked safely – Temperature check

• All food is displayed and served safely. Temperatures of buffet foods are measured and recorded.

• All steps are recorded on the HACCP record sheets.

What are healthy foods?

Meat is mainly composed of water, protein and fat.

Vegetables contain little protein or fat and varying proportions of vitamins

Seafood is high in protein and minerals such as zinc, iodine and some fat.

Fruits are generally high in fiber, water, vitamin C and healthy glucose and sucose sugars.

Grains contain dietary energy and some essential fatty acids.

Dairy Foods are usually high energy-yielding food products. They

contain proteins and fat as well.

Why do we need healthy and

balanced foods/meals?

• To get energy and power, general wellbeing

• Internal systems and organs are working well

• Don’t get overweight, Immune system works

• Bone strength, healthy skin, hair, nails

• Improve the brain function and memory

• Prevents aging and diseases

What is a dietitian doing and

what is a dietary therapy?

• All people should eat well-balanced food and healthy food for their wellbeing.

• Some guests coming to our Hotel cannot eat our normal food from the menus or the buffets for various reasons.

– Guests with medical conditions (Diabetics). Guests who are on a weight loss program.

– Guests who just had surgery in a hospital.

– Hypertensive guests, vegetarian guests, guests with different religious beliefs and customs.

– Guests with food allergies (Like gluten free, allergic to nuts).

What is Sheraton and Starwood doing to

promote healthy foods?

Background

In 2007, Sheraton® launched a fitness partnership with Core Performance™ to make it easier for guests to stay healthy while on the road by focusing on four areas: mindset, movement, nutrition and recovery. This comprehensive approach to health gives guests options to perform better and feel energized throughout their stay. Sheraton Fitness programmed by Core Performance launched with custom‐designed fitness centers and will now extend in to healthy dining options through a program called Color Your Plate™ by Sheraton Fitness.

Color Your Plate Color Your Plate is a very simple approach to healthy eating that encourages guests to eat colorful, nutrient dense foods as part of a well‐balanced meal to increase energy and performance. Color Your Plate dishes: • Are part of meals that include three colors from fruits and vegetables • Use lean proteins and whole grains • Not be fried • Not use butter or cream for sauces/soups • Aim to be less than 500 calories • Have more than 3 grams of fiber To ensure global applicability, we’ve worked together with your divisional F&B team to develop a portfolio of dishes from which hotels can select recipes for different meals and categories. The new program requirements are listed in this document and will become a brand standard on February 1, 2012.
