    When restaurateur Marco Rizzo and winemaker Craig Shannon gottogether in 1998 over a few bins of Chardonnay grapes, they didntnecessarily expect to becomedarlingsof the wine press. But that inau-gural releaseof Arroyo GrandeValley Chardonnay got a92 point scorein a major wine magazine, and sincethen theyvekept that mozzarella

    momentum coming out of thegrinder with wines madein the fashiontheyre passionate about. I tsbeen more than ten years that Craig andI have been working on it, Rizzo says about the time thats passedsince the conception of Per Bacco Cellars. And what has he learnedabout being a winery owner since then?Its always an adventure.

    In 2001, Shannon and Rizzo wisely added Pinot Noir to theproject, and developed a second reserve barrel selection which they

    named Dionysus and bottled on its own. When that purple dankbaby hit the palates of Wine Enthusiast Magazines criti cs and got 94points, wine loving point chasers started reaching for their pocket-

    books. Through the erratic trends of varietal favoritism and climaticconditions, its been refreshing to see Per Bacco continue to makewines in the manner that they originally set out to do, with a focusonfood-fri endliness and approachability. I tsbeen real satisfying to settle

    into a certain grooveand style of winemaking, Rizzo mentioned fromhis office at legendary eatery Caf Roma in San Luis Obispo. Andfinding the people that really dig our style and building a super loyalwine club, people that come to our events. Itsbecome this family. Itsbeen a lot of fun.

    With over nine different current releases, the real pepperoniremains clear: Pinot. The Pinot Noirs have been our flagship

    product, he admits. We pull in the Italian-esque flavors and golighter alcohol. Wedo that with all of the wines. The focus startwith thePinot Grigio going all theway to thePinot Noir is definifood-related wine, whether its a barbecue or at the table or whatnrather than a cocktail wine.

    In 2005 Rizzo and Shannon opened up a tasting room in San LObispo, and Grace Kegel has been the tasting room manager for othepast two years. Shealso findsherself helping Craig out in thecefrom time to time, especially during the crush. I pick up the loends when harvest i s on, she says with a smile. I ts fun for me. mentioned oneof the biggest drawsto Per Bacco is the setti ng, andfact that you taste wine inside the actual cellar. Youre amongst barrels. During harvest you can see everything that goes on in winemaking process. People love that.

    Tucked beside the 101 freeway as it snakes into San Luis ObisthePer Bacco winery and tasting room is part of thebeautiful 200 aFilipponi Ranch, complete with a bocceball court, horseshoepits

    plenty of unadulterated ground to roam upon with a glass of PiGrigio. During events like Roll Out the Barrels in May or the HarvCelebration in November, Per Bacco is the placeto be, with live moutdoors, top-shelf food to complement the current releasesand afmellow, relaxing vibe. Craig hasput together areal casual atmosphhere, Marco adds. Its more l ike come out, hang out, enjoy sowine.

    purchased, and the glasses arent i ncluded. We also sell wine for fivebucks a glass if people like to picnic or go play bocce.

    I started off my tasting with the 2008 Pinot Grigio, made fromgrapes grown in the Los Alamos area of Santa Barbara County. Ivealways enjoyed this wine from Per Bacco, and it could be assumed

    that thepressureis on to make an excellent housePinot Grigio worthyfor the bar at Caf Roma. The 2008 Edna Valley Chardonnayreminded me of the first Per Bacco Chardonnay Id ever tried, thusproving that the same philosophy is running through Craigs wine-making processtoday. Judging by the dense, commanding pour of the2007 Arroyo Grande Valley Pinot Noir, I knew I was onto somethingspecial here. This is classic Central California Burgundy, with ampleweight, heavy fruits, and refreshing cool climate acidity. 2007 was agreat vintagefor Pinot, Gracesaid. Onto the Dionysus, with itshand-some packaging and even darker colors and flavors, with an earthy,savory complexity that comes on like a sleek black Benz out of theshowroom. Its a Las Vegas style Pinot Noir, to be drunk alongside a

    280 dollar Wagyu tasting flight at CraftSteak. Since Craigs wine-making resume includes a stint at Alban Vineyards in Edna Valley, itsno surprise that the winery is sold out of its Syrah and Petite Sirah,though the 2005 Mani Cabernet Sauvignon is a true value and a fineway to finish up the tasting. Mani means hands in Italian, Gracepointed out, and Craigs threegirls hand prints are on the label. I tsthe house Cabernet at Caf Roma.

    One very well known fact in the wine

    industry is that it takes good fruit to make

    good wine. When David Hunt decided to

    enter the wine business he looked far andwide for a vineyard property that would

    produce fruit capable of delivering wines that

    would be memorable. The threemost impor-

    tant factors for growing great grapes are the

    vineyard soil, the weather and good quality

    water. Davids exhaustive search across three

    states led him to Paso Robles where he

    purchased what is known today as Destiny

    Vineyards, the estatevineyard named after his

    daughter.

    Destiny Vineyards is a beautiful property

    containing over 550 acres of vineyards

    comprised of four terriors with elevations

    between 1550 - 2100 feet and soil composites

    that mirror the great wine regions of the

    world. With the perfect vineyard soil, ideal

    weather for grape growing, and excellent

    water, Destiny Vineyards met all of Davids

    criteria to produce memorable wines. The

    vineyard was planted almost fourteen years

    ago with the initial planting of Cabernet

    Sauvignon, Sangiovese, Sauvignon Blanc,

    Merlot, Syrah, Petite Syrah, Cabernet Franc,

    Viognier and Zinfandel. The first wine

    produced from Destiny Vineyards was

    released in 1999 and since then passion and

    hard work have resulted in wines with purevarietal character, fl avor and a velvet finish

    that continue to improve vintage after

    vintage.

    Although David will givemost of thecredit

    to his vineyard manager, staff and Destiny

    Vineyards, clearly there is a lot morethat goes

    into producing a great wine. Davids secret to

    making wine is that he treats each wine as if

    he will never make another one. The wines

    at Hunt Cellars are not rushed though the

    winemaking process and the winemakingphilosophy is to focuson quality and thevari-

    etal expression of the grape. Thered winesare

    all aged in French and American oak for over

    two years with some not bottled until after

    thirty-two months i n barrel where they

    gather expression but not too much extrac-

    tion. Davids ability to craft wines with the

    right amount of expression, balance and

    intensity is what make him such agood wine-

    maker. The indelible finish on the wine is

    something he stri ves for and delivers.

    In 1909, local farm workers in San Luis

    Obispos Edna Vall ey constructed the Inde-pendence Schoolhouse in what was then

    empty farmland. Today the land is rich wi th

    wine grapes stretching as far as the eye can

    see. And Niven Famil y Wines and their best

    known labels Bail eyana and Tangent, can be

    sampled in that same schoolhouse, a bright

    and airy place with similar idyllic views of

    copious amounts of land as before. The

    tasting room recentl y celebrated i ts centen-

    nial, but it is anything but old and stuffy. In

    fact where the tasting bar is currently used to

    be the school library. Now instead of books

    lining the wall, bottles of wine stand guard.

    Husband and wife Jack and Catharine Niven

    began planting vineyards in the early 1970s

    operating on a hunch that the land would be

    fertile enough for wine grapes. The Nivens

    vineyard holdings total about 1200 acres,

    with parts of thevineyardson thevalley floor

    and other parts ascending the low hil lsides.

    The Edna Valley is similar to the Pinot Noir

    and Chardonnay areas of Burgundy, but it

    also enjoys a unique geographic feature: the

    valley runs in an east-west configuration,

    known as a transverse valley, rather than theusual north-south valley.

    John Niven, VP of Sales and Marketing,

    and his cousin Michael Blaney, VP of Opera-

    tions, are members of the familys third

    generation in the wine industry. They work

    closely with members of the second genera-

    tion, in what is a true family-run business.

    With consolidation in the wine industry

    theres a pool of smaller wineries like us.

    Theres a gap between the big guys and the

    little guys and consumers are gravitatingtowards smaller wineries that have family,

    stories and niches, John says. And Niven

    Family Wines proudly speaks of their forty-

    year history in the Edna Valley. Were dedi-

    These are great expressions of

    those varietals in the Edna Valley

    which is a cool climate viticul-

    ture. So at the end of theday you

    get this purity of fruit, with

    acidity and whats in the bottle is

    what Mother Nature gave us in

    the vineyard, John says. So are

    they crusaders for odd-ball

    grapes, the only ones willing to

    carry the flag of creative wine-

    making? I wouldnt call our

    fami ly crusaders, he

    admits. We are simply out to

    explore and showcase the

    tremendous potential of whitewines in the Edna

    Valley. Chardonnay hasbeen and

    will always be the top dog. And

    that means though Bail eyana

    Chardonnay is the call ing card,

    once youre in, you can be

    exposed to an array of unique

    white wines. Through the years

    we have seen great promisefrom

    a handful of white varietals and

    how they marry with our uniquesoils and cool climate. Across all

    of our white varietals, we see a

    common expression of miner-

    ality and racy fruit which is

    exactly what we are looking for,

    John says. It s been both fun and

    rewarding to explore and grow

    varietals like Albario, Gruner

    Veltliner, and Grenache

    Blanc. We cant wait to see how

    these varietals evolve wi th vine

    age.

    PINOT NOIR BEETS 1 dozen whole cooked beets

    1 tablespoon flour

    2 tablespoons sugar 1/2 teaspoon salt

    1/8 teaspoon ground allspice 1/4 teaspoon pepper

    2 tablespoons raspberry vinegar 1 tablespoon lemon juice

    1/2 cup OHV Pinot Noir

    2 tablespoons butter

    Mix together the flour, sugar, salt, pepper

    and allspice. Add the vinegar, lemon juice

    and dry red wine.

    Cook this mixture slowly until thick, stir-ring constantly.

    Mix in the small whole cooked beets andheat thoroughly.

    Stir in butter and serve.

    To many, the pairing of wine and beets may seem counter intuitive at first butafter some examination i t is clearly a combination that makes sense. First theobvious: beets and red wine both depend on natural pigments in the vegetable, orgrape, that give each their lively red color. Furthermore, both red wine and beetsare a source of antioxidants, organic compounds known to provide health bene-fits, although they are less abundant in beets than in red wine. On the other hand,beets and red wine differ in one significant, yet complementary way. Beets haveexcellent detoxification properties, whi ch could be of service on thoseoccasionswhen red wines potential to intoxicate has been realized.

    BASIL-SMOKED BURGER

    Pesto Mayonnaise: cup mayonnaise

    2 tablespoons prepared basil pesto

    To make the mayonnaise, combine the ingredients in a

    small bowl and mix well. Cover and refrigerate until needed.

    Patties: 2 pounds ground sirloin

    cup Zinfandel

    cup lightly packed minced fresh basil

    cup minced red onion

    cup fresh Italian bread crumbs

    8 sun-dried tomatoes packed in olive oil, finely chopped

    2 teaspoons garlic salt

    vegetable oil for brushing on the grill rack

    8 large basil sprigs, moistened with water for grilling

    6 large seeded sandwich rolls, split

    6 slices Monterey Jack cheese

    6 red leaf lettuce leaves

    6 thick tomato slices, about inch thick

    6 paper thin red onion slices, separated into rings

    6 basil sprigs for serving

    Prepare a medium-hot fire in a charcoal grill with a cover.

    To make the patties, combine the sirloin, Zinfandel, basil, onion,

    bread crumbs, sun-dried tomatoes and garlic salt in a large bowl.

    Handling the meat as little as possible to avoid compacting it, mix

    well. Divide the mixture into 6 equal portions and form the portions

    into patties to fit the rolls.

    When the grill is ready, brush the grill rack with vegetable oil.

    Toss the moistened basil springs directly onto the fire. Place the

    patties on the rack, cover and cook, turning once, until done to

    preference, 5 to 7 minutes on each.

    Serve patties on ciabatta rolls with pesto mayo and other

    Basil-Smoked Burger

    Paired with Carina Cellars2007 Zinfandel

    Pairing the all-American burger with a wine could be among the

    no-brainers of wine-and-food pairing if that wine is Zinfandel.

    Because Zinfandel is probably the only grape that has come to be

    recognized as Americas grape or at least, Californias grape. It

    makes a bold, fruit-forward wine with intensity of flavor and spice,

    combined with a cutting alcohol level that typically ranges from high

    to extremely high, creating a full-bodied mouthful with a lingering

    resonance. Of course, thereare alwaysexceptions, but generally, thereis no such thing as a delicate Californiared Zinfandel. That it is being

    paired with this immensely flavorful recipe for a classic grilled Amer-

    ican burger is no surprise. The Basil-Smoked Burger melds the fat

    from sirloin and Monterey Jack cheese, frames it with aromatic notes

    of garlic, red onion and basil, whilethewine, theCarinaCellars 2007

    Zinfandel from Paso Robles, washesit down it with an explosive burst

    of layers of black fruit and hints of roasted nuts. Arguably, this pairing

    should be a requirement at every backyard barbecue across the

    country.

    Zinfandel is one of the few non-Rhone varietal wines made by

    Carina Cellars. But their know-how in producing rich and fruity red

    wines, l ike Syrah, Mourvedre and Grenache, serves them well when

    they venture out to other grapes of world class notoriety. Winemaker

    Joey Tensley and Carina Cellars owner David Hardee agreed on

    tapping the great resources of Central Coast grapes to make wines

    defined by their terroir. Tensley, having a strong winemaking back-

    ground gained from his experience at two respected Santa Barbara

    County names Babcock Winery and Beckmen Vineyards achieves

    the objective with style in this west side Paso Robles powerhouse.

    Tensleys own label, Tensley Wines in Santa Barbara, specializes i n

    Syrah, and wasonce described by Robert Parker, Jr as stunning.

    Carina Cell ars may give some creative names to their blended

    Rhone wines, such as Iconoclast, Clairvoyant and Sibylline, but fortheir single-varietal wines, like the 2007 Zinfandel, they keep the

    name straightforward and put the creativity into the Basil-Smoked

    Burger. Thewinecan befound in their Reserve Wines section of their

    Aone-of-a-kind experience

    Along Highway 46 West in Paso Robles a

    slopeside vineyard surroundsa large groveof

    oak trees that form the shape of heart. The

    vineyard known as Heart Hill Vineyard is one

    of two estate vineyardsowned by Richard and

    Pam Niner. Thesecond, and larger of the two,

    is on the east side of Paso Robles and is

    known as Bootjack Ranch. Niner Wine

    Estates Winemaker, Amanda Cramer, takes

    the Bordeaux, Rhone and Italian grape vari-

    etals from the two vineyards to craft a line of

    wines that represent the whole of Paso

    Robles. The Niner Wine Estates state-of-the-

    art winery enables her to make wines by

    combining the best of traditional winemakingmethods and cutting-edgetechnologies.

    Niner Wine Estates Hospitality Center

    opened in May of this year to provide visitors

    with the opportunity to taste theline of wines

    including their flagship Bordeaux blend, Fog

    Catcher. Located at the base of the Heart Hill

    property, the Hospitali ty Center is comprised

    of two rustic, yet elegant, stonebarn structures

    surrounded by beautiful grounds and a hay

    field. Thel arger of the two structures is home

    to a tasting room, aspectacular demonstration

    kitchen and a private CLUB 9 members-only

    lounge. The lounge will be used for the first

    CLUB 9 Pick-up party on November 20th.

    From 10 a.m. to 4 p.m. club members will

    experience food pairi ngs with the current

    CLUB 9 offerings while enjoying live music.

    The second structure is a small winery that is

    often used for educational events and during

    the club party, members will be able to taste

    the wines from the 2010 harvest from the

    barrel and tank. Nothing seems barn like

    inside either building the architecture and

    design are modern and impressive.

    cated that the approach at Niner Wine Estates

    is to put wine in a bigger context. TheHospitality Center was designed to offer a

    wide range of educational programs. As you

    walk through the doors of the tasting room

    your education can begin with the sensory

    analysis display. At the tasting bar, samplesof

    cork, oak and soils are all used to aid in

    educating wine visitors about the many

    aspects of what goes into producing and

    deli vering that perfect glass of wine. Speaking

    of glasses, the shelvesare loaded with a range

    of glasses designed to bring out the wi

    best qualit ies. The tasting room staff

    extremely knowledgeable and eager to ans

    questions. To offer a deeper level of edu

    tion, the Hospitality Center has an edu

    tional seminar series offered throughout

    year.

    The large demonstration kitchen is

    center of the culinary program. Knowing t

    people typically enjoy wine with food

    culinary emphasis in the education progr

    is front and center. The Paso area is hom

    Winery Tasting Room, youre in for a

    treat. Now celebrating their fourthyear, the winery is known for estate-

    grown varietals with big, bold

    flavors, such as their medal-wi nning

    2007 Pianetta Bilancio, a blend of

    57% Syrah and 43% Cabernet wine.

    In addition to established favorites,

    the tasting room has new releases to

    discover, and just in time to celebrate

    the holidays.

    The winery facili ty is located in

    San Miguel, but the Pianetta TastingRoom is centrally positioned i n Downtown Paso Robles, just north of

    City Park in the historic Granger Building. Winemaker John Pianetta

    and his daughter, Caitlin Pianetta, are the present-day dynamic duo

    in their four-generation farming and winemaking family. To create

    their vintages, they harvest grapes from the familys Indian Valley area

    vineyards in Monterey County, just north of Paso Robles.

    This season, theres a quartet of releases to toast with family and

    friends. The fi rst is the winerys i naugural 2008 Pianetta Barbera.

    Our 2008 Barbera marks the very fi rst vintage of Barbera we have

    The2006 Syrah wasawarded Gold Medals at both the Denver and San Frcisco International WineCompetition, and separately, Robert Parker, Jr. had

    to say about i t: Thi s deli cious, sexy Syrah possesses a deep plum/ruby colowell as copious quantities of sweet black cherry and black currant fruit, smoearth and a gamy meatiness. Enjoy this lush 2006 over the next two or thyears.
