StoryCave de Bissey is a group of growers established since 1928 in Bissey sous Cruchaud. This smallvillage is located in the Côte Chalonnaise between the Maconnais region and the Côte d’Or.It is one of the oldest cooperatives in the region and is very well known locally for the quality ofthe wines. 65% of the wine produced by the members is sold at the cellar in France, which is whythe name is not very well known in the US. It remains a small-scale operation with just 40growers and 5 employees.They are the only growers in the area to control the whole vinification process of their Crémant,from harvesting to bottling, which ensures excellent quality.

TerroirThe Crémant de Bourgogne appellation is reserved for sparkling wines created from still wines known as ‘base wines’, prepared according to the traditional method. The grapes used to make Crémant de Bourgogne come from the very varied terroirs of the different vineyards in Burgundy, from the chalky subsoils around Joigny to the granite of southern Burgundy, as well as the limestone and marl soils which most often characterize the wines of this appellation.

Tasting notesBouquet of fresh fruits such as strawberry and raspberry. Some spicy and cinnamon notes. Good freshness and a particularly fruity aromatic structure on the palate.
