OUR MISSION

•The world remains changing all around us, but at our bar it

remains the same. Big Flavors, Big Games, Big Times. We want to

be a part of your adventures, not just the beginning or end. A

place of community, allowing sports stories to unfold, while

providing superior food and service. This is Carlito’s Way.

ENVIRONMENT

• Located in South Beach on Lincoln Road. Open from 12PM-1AM Monday through Thursday, 12PM-2PM Friday and

Saturday, and 12PM-12PM on Sunday.

•Once you enter the bar I want the guests to be focused on two the things, the sports and the decor. The design

would consist of polished wood flooring and a black wall with various sports memorabilia, insignia, news articles

and televisions. The bar itself would be a horseshoe style, designed to operate as the focal point for the

surrounding seats and tables during regular business days.

•Our Cuban inspired cocktail and food menu focuses on made from scratch cocktails and homemade shareable

plates.

SERVICE RELATIONSHIPS

•Our staff will have to be fun, fast paced and socially masterful with our guests. We want

our guests to have fun with our servers and bartenders, so that they create memories

and return as regulars. It is important as well that the staff is knowledgable about

sports and upcoming events, as sports are the central figure to our establishment and

our guests.

•The competition in our area is high so we need to provide more than just an area to

watch a game. We want our guests to be able to come to our bar and see people they

know without any prior plans. Through social media, we will always be advertising

about the latest big game and any specials for those times. The focus will be to have a

community style relationship where people share their food and drink experiences with

one another.

•Sports fans aging from 21-60 will be our main focus of demographics. Our Cuban style

will play to the hispanic culture of South Florida, but will be items mostly everyone

should be able to recognize.

MENU PAIRING•Flan - Cafe Cubano Cocktail

- This after meal dessert and cocktail combo pairs the classic Spanish

delicacy baked flan with a mixture of cognac, creme de cacao, cuban

espresso and sugar. Perfect to cleanse the palate after a full flavored

meal.

•Wine by the Glass - Queso Blanco - Sangria

-Creamy, salty, cheesy queso blanco dip calls for a nice fruity Sangria in

our version of a cheese and wine pairing. Using two bottles of dry red

wine, one cup of brandy and an assortment of fruit, the house sangria

mix makes you crave more queso, which makes you crave more sangria.

•Beer - Wing Baskets - Locally Brewed Draught Beer - Kona

Longboard Lager

-Hand tossed wings with four bold flavors, Honey Mustard, Guava

Barbecue, Buffalo and Lemon Pepper. With ten beers on tap and four

flavors of wings it creates a great Happy Hour Special.

•Signature Cocktail - Cubanitos - Bloody Hulk

-The classic cuban sandwich in miniature versions of themselves. It is our

version of the Bloody Mary that gives this pairing its signature. We use

homemade green tomato juice along with the classic ingredients. A hefty

topping of tabasco and quartered garlic pickle makes the drink.

•Classic Cocktail - Carne Asada Fajitas - Frozen Lime Margarita

-Back to the basics with this combination. Grilled steak fajitas and frozen

lime margaritas scream classic hispanic cuisine. This is another portion of

our Happy Hour Special.

MENU PAIRING•Whiskey/Brandy Based Liqueur - Potato and Cheese

Croquetas - Lynchburg Lemonade

-Our version of the cuban croqueta is packed with cheddar

cheese and served with sour cream. The Jack Daniels

Lynchburg Lemonade has the right amount of acidity to cut

through the heaviness of the food.

•Cream or Fruit Based Liqueur - Pork Empanadas - The

Repossession

-This cocktail contains tequila, sherry, apricot liquor and lemon

which does a great job to cut the richness of the savory pork

empanadas.

•Nut, Coffee or Herb Based Liqueur - Guava Jelly Holes -

El Guerro

-For when the conversations extend past the end of the game,

we have our end of night send off with made from scratch mini

guava jelly donuts. The cocktail to pair it with uses mexican-

cinnamon vodka, Patron XO Cafe and homemade horchata.

•Tea or Herbal Infusion - Mojo Shrimp Skewers - Honey

Green Tea Mojito

-Something light for the crowd who still wants the bold flavors

without all the extra weight. Our Orange Mojo Shrimp Skewers

and Honey Green Tea Mojito uses natural flavors to stand out.

• Goose Island Ipa. - DraughtThe body is dark orange. A light bitter taste of grapefruit and hops, very dry in the mouth, the finish is long and bitter. Very dry and light creamy with a lively carbonation.

• Kona Longboard Lager - DraughtA smooth refreshing lager fermented and aged for weeks at cold temperatures to yield its exceptionally smooth flavor.

• Yuengling Traditional Lager - DraughtRoasted malted caramel flavors fill this medium bodied lager. Well balanced and finishes with a subtle sweetness.

• 2014 Abad Dom Bueno Godello (Bierzo) 4oz pourSnappy citric aromas of grapefruit and lime are pungent and not too different from Verdejo or Sauvignon Blanc. Accordingly, the palate is fresh and focused, with flavors of stone fruits that are leesy and have a honeyed sweetness. A controlled, mild finish tastes mostly of orange.

• 2002 Beringer Private Reserve 4oz pourGood full ruby-red. Sexy aromas of currant and dark chocolate. Compellingly sweet and densely packed, with lovely vinosity giving shape to the flavors of dark berries, cedar and minerals. Very fine-grained and very long on the palate, with the tannins perfectly buffered by the wine's material

• 2014 Camino Ibérico Rosado 4oz pourJust-landed exclusive from the renowned Pamela Geddes. Made with old-vine Garnacha from a small family cellar along the famous Camino de Santiago trail, it’s laced with elegant cherry, berry and spice. Tasty with aged cheeses.

• 2001 Faustino I Gran Reserva 4oz pourA more restrained, mineral style with elegant tannins. Youthful, feminine and complex with a long length. A classic Rioja that is still fresh after 12 years.

• 2013 Finca Museum Cigales Tempranillo Rosado Vinea 4oz pourElegant strawberry aromas with kiwi and white grape. Flavors are bright and acidic, more strawberry, a hint of cherry, watermelon rind, red licorice and a touch of orange marmalade. The long finish has more cherries and raspberries and finishes off quickly.

• 2013 Southern Red Lakeridge 4oz pourSmooth & bursting full of fruit, this light bodied wine derives its unique flavor from the Noble variety of Muscadine grape. A true balance of aromas with a refreshing aftertaste. Serve lightly chilled with rich desserts & cheese.

SPECIALTY COCKTAILS, TEAS AND COFFEE

Signature Cocktail•Angry BallsThis cocktail contains 2oz of Fireball Cinnamon Whiskey dropped in 10oz of Angry Orchard Hard Cider. This simple but efficient cocktail is most enjoyable when the weather is nice and cool.

•Bloody HulkThe Bloody Hulk drink includes .25oz tabasco, .25oz Worcestershire, 3oz green tomato juice, 2oz vodka, a splash of lime and finished with a pickle. Its different than most of your average cocktails that contain tons of sugar. By providing a spicy profile, and a unique green and red color, the beverage goes well with our savory dishes.

Classic Cocktail•Frozen MargaritaThis legendary classic cocktail contains 1.25oz of Jose Cuervo Especial, .75 oz triple sec, 2oz of orange juice, 2oz of lime juice and 1oz of sour mix. This is than all blended with ice and can be flavored with strawberry, mango, coconut or raspberry. The margaritas are served with a salted or sugared rim and appropriate fruit garnish.

•Pina ColadaThe piña colada is a sweet blend of 1.5oz of rum, 3oz of coconut cream or coconut milk, and 1 oz pineapple juice, blended with ice and garnished with a pineapple.

•Lynchburg LemonadeThis classic whiskey cocktail contains 1.25oz of Jack Daniels, .75oz of triple sec, fresh lemonade and lemon cherry garnish.

Coffee • El Guerro

This creamy cocktail is a perfect finisher. It starts with 1.25oz mexican-cinnamon vodka, 1oz Patron XO Cafe and 6oz of horchata. Its spanish heritage and nutty base make it a unique drink.

• Cafe Cubano CocktailThis classic cuban coffee contains a mixture of 1.25oz cognac, .75oz creme de cacao, 2oz cuban espresso and sugar. Perfect to cleanse the palate after a full flavored meal.

• Cuban CoffeeCuban coffee is essential to patrons of southern Florida. Kana Cuban Coffee provides us with our pick me up specialty.

Tea• Honey Green Tea Mojito

Our specialty mojito starts off with muddling 8 Large fresh mint leaves. We than add 1 cup ice

3 ounces green tea, 1.5oz freshly squeezed lime juice, 3oz of honeyand 2oz of club soda.

• Iced TeaFresh brewed black tea which is offered sweetened or unsweetened.

• Iced Honey Ginger Lemon TeaWe created a honey, ginger and lemon simple syrup that we add to our fresh brewed tea to create a unique flavor profile.

• Hot Orange Mint TeaA unique blend of black tea, orange peels and mint provide a soothing hot drink.

BAR PROCEDURES AND OPERATIONS

Bartender - The bartenders are the superstars of our operation. They are in charge of the guests needs and that is the most important thing when it comes to our service. Developing regulars is a major key to the success of our restaurant. The bartenders have a far better change of developing regulars than any other member of our staff.

Server - The servers are our secret weapon at Carlito’s Way. Even though our main focus is the bar at our establishment, without the table service and community sections, we would be to small to survive.

Bar Back - Essentially our bar backs work with every member of our team directly. They specifically help the bar with their daily operations. They are unable to make any drinks for the guests and don't directly interact with them, but they make sure the bar has all the items needed for the guests.

Host - The hosts are the leadoff players of our team, greeting and setting up the whole experience for our guests. Waiting for a table or seat becomes a major concern for bars and restaurants when wait times exceed thirty minutes

Bar Manager & Service Managers - Like any good team, leadership is the number one key to success. Through proper training, leading by example and communication, management runs Carlito’s Way with a legendary effort. The service manager relies on the bar managers to help run the establishment during the busy times and their off days.

STATEMENT OF ALCOHOL

RESPONSIBILITY•All of the bartenders and servers are ServSafe and TIPS certified, which are alcohol safety and responsibility

programs. This ensures that all of our employees understand their responsibilities as a bartender or server

and that they may be responsible for monitoring the actions of the guests. Even though bar manager is in

charge of the bartenders and their actions, it is mostly up to the bartenders to carry out the guidelines,

responsibilities and actions of the bar service. The bar manager, the bar trainer for Carlito’s Way, ensures

safe drinking and provides training where it all starts.

•We have strict guidelines to ensure everything is done the right way every time. Cleanliness and health is

another major part of the alcohol and service responsibilities. You would never want to serve contaminated

drinks or glassware. This is why we also require food handling and safety certification for bartenders and

servers. Knowing the correct time and temperature regulations, cleanliness standards, washing procedures

and food handling makes your establishment safe and reliable.
