CANNELLINI BEAN DIP WITH A MEXICAN TWIST!

Fajitas are on the menu at home tonight, one of the kids favourite things and a must have on the table are always the dips, so here we go with the first dip...

This is a really yummy dip and is so simple to make, your blender does all the work for you. Surely this can only be a good thing right?

You will need: -

1 tin cannellini beans (400g) drained and rinsed 1 garlic clove 1/2 mild chilli 1/3 cup cilantro juice of 1 lime few drops hot sauce 1/2 tsp salt 1/4 tsp freshly ground black pepper 1/3 cup olive oil

First you need to drain and rinse the cannellini beans. Then add these along with a peeled garlic clove. The easiest way to peel the clove is to lay the knife down onto the clove and smash it to release the garlic and it makes it a breeze to peel!

You also need to add the cilantro, 1/2 the de-seeded chilli, lime juice, salt and pepper and a few drops of hot sauce (depending on how comfortable you are with the heat). The olive oil will get added at the end...

First you have to pulse the ingredients for a moment, a few quick pulses should do it...

then comes the drizzling part..just slowly add the olive oil and pulse on and off

it should be looking something like this, blitz for another moment and there you have it. Here comes the most important part...patience...refrigerate until chilled before serving, trust me this makes the world of difference ....enjoy!
