Wet freshly cut (and bruised) Rooibos is placed in a long low heap across our

tea court to “sweat” or ferment in heaps for 10 to 14 hours. Temperatures

during sweating can reach between 34°C and 38°C. The fermentation

process involves oxidation, brought about by enzymes naturally present in the plant. During this process the

product changes from green to a deep amber colour and develops its

distinctive aroma.
