Calibrating EquipmentKeep equipment checklist for your records.Oven:

Set oven to 400°F. For rack oven, place thermometers on sheet tray and place in middle of rack. For deck oven, place in middle of shelf.Set timer to 15 minutes, then check temperature.Internal temperature should read the same as oven thermostat.If temperature is 15°F colder or hotter, adjust oven thermostat

to compensate.Freezer: 0°F to -10°F (Dough will lose shelf life at 0°F-32°F)Retarder: 35°F-39°F

Too cold and dough will not defrost.Too warm and dough will start to proof.

Icing Table: 98°F-100°F Too hot and icing will crystallize.

Bread Slicer:Check to make sure knives are SHARP. If dull, bread will collapse.

Stock Rotation: Do not stack cases on freezer floor. Do check code dates.

These temperatures and settings are guidelines for optimumperformance from your bakery equipment. If your

equipment is not set properly, contact your Bakery Director and/or Store Manager.

The answer is simple:1. Use your production records to project item per item volume.2. Don’t over-bake in AM and then not bake in PM.3. Rotate product on shelf accordingly.4. Promote overstocks as per company guidelines.5. Don’t bake what you don’t need.6. File your production records in a neat organized manner for future review.7. Hermit Cookies Made WithPillsbury® Cookie Mix

Handling: Store Pillsbury® Cookie Mix in a cool, dry place.Preparation:

• Add base, shortening, molasses, spices, and crumbs. • Mix 5 minutes on second speed.• Add eggs, water and mix 1 minute on first speed. Scrape.• Mix 2 minutes on second speed.• Add raisins and mix 1 minute on second speed.

Scale:• 12 oz pieces, roll with flour to width of sheet pan, five strips per pan.• Lightly flatten strips and egg wash.

Bake:

Adjust baking times, if necessary, to compensate for your oven’s unique characteristics.

Cooling: Allow cookies to cool completely before icing or packaging.

Finishing: Ice strips with white roll icing and cut into five pieces.

Yield: 44 strips, 220 cookies.
