PRESIDENT – Mary Lou Younger
Looks like we're going to be very, very busy this month. We have board meeting on the
4th (everyone is welcome anytime), Chatter on Thursday (Somer's turn), State Conference
on the 12th thru 14th, a Fantastic Lesson on the 15th (Container Garden), and Game
Day on the 18th. Whew! On Game Day, we'll have Bingo with Dorothy, various games,
snacks and a small craft. We'll make flowers with corn husks. Remember when we use to
do dolls with corn husks, fond memories. Please come join us and have a little fun.
The Nominating Committee will be headed by Judy French. If anyone is interested in the
following positions, please call her. Positions needed are President, 2nd Vice President,
Treasurer, International, and Family and Community Issues Director. We will also be
needing a Craft Coordinator, since the current one is going to help her husband cross off
some trips on his bucket list
FIRST VICE PRESIDENT – Program – Bobbi McEntire Well February has certainly flown by. I can hardly wait to see those flowers popping up
and warmer weather. We are getting ready for state conference which is always a good
time. I can hardly wait to see what information we will have to share when we return.
Hope you are looking for new people to join HCE. Once again please share any ideas

Arts show in October.
Illini Country Stitchers which encourages quilt making and
collecting meets at St. Peter's United Church, 905 S. Russell,
Champaign. See their website for meeting and events.
Krannert Center for the Performing Arts offers free tours at
3:00 in March. The tour lasts 1 hour and takes you behind
the scenes -- history, designs of each performance space, into
theaters and onto stages. For groups of 15 or less no advance
notice is required.

2019 Country of Study is India
India National Flag
The National Flag of India is a horizontal rectangular
tricolor of India saffron, white and India green; a 24-spike
wheel, in navy blue at its center known as the Ashoka
Chakra. The Flag is based on the Swaraj flag designed by
Pingsli Venksyya. The flag became official on August 15,
1947. In India, the term “tricolor” almost always refers to the
Indian national flag.
A special type of hand-spun cloth or silk, made popular by
Mahatma Gandhi.
According to the Flag code of India, the Indian flag has a
ratio of two by three (where the length of the flag is 1.5 times
that of the width). All three stripes of the flag (saffron, white
and green) are to be equal in width and length. The twenty
four spokes are evenly spaced.
Gandhi first proposed a flag to the Indian National
Congress in 1921. In the centre was a traditional spinning
wheel, symbolizing Gandhi’s goal of making Indian self-
reliant by fabricating their own clothing. The design was
then modified to include a white stripe in the centre for other
religious communities, and provide a background for the
spinning wheel. Subsequently, to avoid sectarian associations
with the color scheme, saffron, white and green were chosen
for the three bands, representing courage and sacrifice, peace
and truth, and faith and chivalry respectively.
VOLUNTEER HOURS – Pat Meriedth
The Purpose of Volunteer Hours?
I have been asked several times, "What is the
purpose of turning in Volunteer Hours?"
Whenever someone asks me what is HCE, we as
HCE members should respond accordingly.
We are a not for profit, educational, and
volunteer organization. Volunteering is an
important part of what our organization is all
about. The reported hours are used by the IAHCE
State Board to recognize those outstanding

members who go over and above the call of duty
when volunteering. The U of I Extension uses
the hours to help show how programs they
support make an impact on their communities and
the state as a whole when proving their worth to
the state government. Our volunteer hours help
to support the U of I Extension program and
financing.
The IAHCE President refers to the number of
hours reported quite often during presentations to
non HCE groups. This information is important in
determining how much of an impact we make all
over the state of Illinois.
For example, if we were to remove the
volunteer hours designated to the 4-H program, it
would be guaranteed that the 4-H program would
suffer.
Members of HCE use the excuse that if I turn in
my volunteer hours, "I feel that I am bragging".
As your CVH Volunteer Chairman, I encourage
all HCE members to turn in all their volunteer
hours and receive your well-deserved pat on the
back. The most important issue to keep in mind is
that this information helps the U of I continue to
provide these services.
Remember, it does not matter how big or how
small the number of hours!
What matters most is that every HCE member
and every hour counts!
Please note there was an error in the 2018 Volunteer Hours in
the February Chatter for the Staley unit. The number of
members reporting should have been 40 and not 3.

STALEY UNIT is scheduled to fold on April 4th The

JEANS CRAFT CLUB
We want to thank Norma Ripkey for her
GENEROUS donation of flowers, hoops, beads, and lots
and lots of ribbon, etc., etc., etc.. It took two van loads
to get it out. We are going to miss that girl. She has
helped so many times with crafting. We'll be using most
of the supplies soon.
2019 Craft Schedule:
March 18th: Game Day corn husk flower
April 5th: Learn how to make a ribbon bow
June 21st: Grandparent and grandchildren Craft
Day: We'll make a 5"x7" plaque with a letter in the
center (must let us know ahead of time what letter
you'll need so we can have it. Otherwise someone
may be unhappy. Then a ribbon tree. The third one
is a surprise. We'll have refreshments. Everyone is
invited.
August 22: At my home (Mary Lou), we'll do a barn
quilt and/or pallet art.
September 30th: Game Day, craft TBA
October 10th: Chatter folding Day. At the other end
of the room, we will be decorating holiday
trees. Right now, we have 13 trees available. We also
have lots of ornaments and lights.
November 7th: Chatter folding Day. At the other end
of room, we will again be finishing decorating
holiday trees and wreaths and ornaments.

MAHOMET UNIT
The Mahomet Unit of HCE met February 20 at the
Mahomet Community Center with eight members present.
President Elizabeth Michael called the meeting to
order. Elizabeth reminded members that a sewing day was

work on weighted blankets that will be donated.
Lorena McClain read the minutes from the January
meeting. Linda Crowley is the incoming secretary.
Joyce Herriott gave the treasurer’s report then collected
dimes from members for the Zero Hunger Challenge.
Mary Miller reminded members that this year’s study is
India. Bonnie Cook reminded members to donate items to
our local Helping Hands in Mahomet and to donate to the
Idea Store and Courage Collection, both located in Lincoln
Square. Both are closed on Monday.
Donna Schirer shared several upcoming opportunities. The
next Mahomet Public Library Book Tasting will be March 10
and the next book sale will be April 11-14. The Mahomet
Marching Band will have a June garage sale. The New and
Resale shop in Gibson City will close March 16.
Sue Hesketh reported The Herb Society has 4 grants
available. More info will be available in the future.
Donna Schirer presented the lesson on Cooking for 1 or
2. Recipes were shared then members enjoyed a pineapple
dessert provided by Joyce. Terry Crowley
MAYVIEW UNIT The February 5, 2019 Mayview H.C.E. Unit meeting was
held at Gerry Ann Windler’s home at 1:00 p.m., and also
celebrating the Unit’s 93rd Birthday with a beautifully
decorated cake brought by co-hostess, Carol Froeschl. We
also served grapes, mints, snacks and drinks. We had 10
members present, and Carol Froeschl led us in the Pledge to
the Flag and the H.C.E. Aim.
Carol handed out our new Program Books for 2019 and we
corrected the mistakes. Joyce Smith gave the lesson on
“Cooking for 1 or 2”. She likes to make regular portions,
then freezes portions individually, she gave us many tips
from 2 handouts, one was recipes, every one enjoyed her
lesson.
Pat Smith led us in singing “Happy Birthday” to our
Unit. Pat also gave the Treasurer’s report.
Ruthann Shurts will take the Lesson on Friday at the FBA
on “Saving Money on Food Cost”. On February 12, Ron
Hansen will speak to F.B. members with “Ideas on how to
keep your farm in the family”?, at FBA, meal at 5:00 p.m.,
6:00 p.m. meeting, we were encouraged to call and come and
listen. There is a Mental Health meeting on March 4th
meeting that some may wish to attend.
Our next meeting will be at Beth Anderson’s home on
March 5, 2019 at 1:00 p.m., Ruthann Shurts as Co-
hostess. Carol thanked Gerry Ann for having the meeting,
and she adjourned the meeting. Our birthdays for February
are Linda Flessner on the 3rd, and Gerry Ann Windler on the

PESOTUM UNIT The February 21st meeting of the Pesotum HCE was
called to order at 1pm by Chairman Vicki Bussart. The
Pledge of Allegiance and Homemaker's Aim followed. Roll
call was answered by 5 members: Vicki Bussart, Bridgie
Cler, Elaine Aaltonen, Dorothy Rogers and Dawn Millsap.
Our new club books for 2019 were passed out to those
present along with a listing of members, club passport and
cards. Be aware of the challenges in your passport for a
chance to win a gift card to a restaurant! Corrections to the
club books were made. Hopefully there will be more at the
next meeting so we can get some assignments in.
The minutes from the December meeting were read and
approved as was the Treasurer's Report. It was reported that
Vicki Bussart's has had her name put on the club checking
account as Mary Piercy is too ill to continue. Dimes were
handed in for the Zero Hunger Challenge. The lesson on
'Cooking for 1 or 2' was handed out and discussed.
A discussion was held on how to recognize members who
have passed on. After a brief discussion, it was decided that a
$25.00 donation to an organization that has meaning to the
member would be appropriate. A motion to accept this policy
was made and seconded, therefore a donation of $25.00 each
will be made to the American Heart Institute for Nancy
Blackburn and National Cancer Institute for Karen Russell.
Dorothy Rogers reminded members of the Game Day
Monday, March 18th at FBA.
Then next meeting will be March 21st at the Community
Building at 1pm. We are saddened to report that our long
time member Betty Samson lost her son, Kenneth of Tolono
at the Danville VA Hospital, the day after our meeting. Our
condolences go out to her and her family.

PHILO UNIT The February 15, 2019, Philo HCE meeting was called to
order at 1:30pm by Chairman Betty Lauchner at the Philo
Presbyterian Church. We were served Strawberry Cheesecake
at 1pm by Pat Miller. The Homemaker's Aim and Pledge
were recited. Eight members answered roll call with “Do you
have any tips you've already discovered?”.
Pat Miller gave the program on “Cooking for 1 or 2”.
A motion was made and vote taken and a decision was
made to continue meeting at the Philo Presbyterian Church.
The minutes were read and approved as read. No treasurer
report was available. Pat Miller passed out more program
booklets and listing of hostess and program
assignments. Member lists were passed out to those present.

Next sewing day is to be 9:30-3pm on Friday February 22,
at the FBA. Bring your lunch. Richard Thies, an attorney, will hold open discussion and
conversation on “The Rule of Law”. This will be on
Thursday, February 28, at 7pm at the Philo Presbyterian

RANTOUL UNIT
The Rantoul unit met on Feb. 12 for lunch and meeting at
Red Wheel East for lunch and meeting. President Betty
Hasdler called the meeting to order. Judy French led us in the
Pledge and Homemaker's Aim. We answered roll call with
how we cook for one or two. Charlotte Smith gave the
program on cooking for one or two. Sharon Nelsen gave a
short talk on the foods of India. Judy told us she was taking
valentines and cupcakes to our group home. The treasurer's
report was read and approved. it was suggested that we meet
at other places each month. Sharon Nelsen for Theresa
Fabrey
ROYAL UNIT. Royal HEA met on February 18, 2019 at the home of Ella
Osterbur with Joellyn Pedro as co-hostess. Marge Bluhm
opened the meeting with everyone saying the pledge to the
flag, the Homemakers Aim and the Collect for Club Women.
There were nine members present. The lesson will be
“Cooking for 1 or 2”. Roll call was answered by “Tips you’ve
already discovered”.
The minutes were read and approved. Ella Osterbur gave
the treasurer’s report. Pennies for friendship was collected in
the amount of $7.03. The $25 received from the county for
having the most new members was also received.
Marge reported that a nice selections of donations was
received to be given to Children’s Hospital.
The lesson that we missed in January due to cancellation
was passed out. The title was “Responding to color as you
Age”.
The books for January 1, 2019-December, 2019 Were
filled out.
Marge Bluhm gave the lesson, “Cooking for one or Two”.
A discussion was held and several people gave suggestions
for things they do.
The March meeting will be held at the home of June
Osterbur with Erna Amerman as co-hostess. The lesson will
be “Saving Money on Food Costs. June Osterbur
SAVOY UNIT Our December meeting was attended by most members
and we had a great time at Silver Creek Restaurant. Our
January meeting was cancelled due the bad weather. We are
finally getting around to having a regular meeting in
February. The meeting was called to order at the Tolono
Library at 1:00 pm, on February 20th. We discussed making
decorations for annual meeting and international meeting
with the theme Around The World With HCE. We filled out
our yearly planning book. We decide who would take what
lessons. We had 8 people in attendance: Carolyn, Rebecca,
Joan, Bonnie, Marjorie, Opal, Jan, and a guest, Joyce Conley. Bonnie gave the lesson on color. We discussed the
importance of colorful foods in your diet. Joan gave the
lesson on cooking for one or two. We talked about the
recipes. We told some of our likes and dislikes about freezing
and canning foods. Rebecca served tea and chocolate
peppermint cookies, crème puffs, and nuts for desserts. The Treasurer’s report was $197.47 after the dues were
received. Dimes were collected for the State Project of Zero
Hunger Challenge. Carolyn will be sending the money in
after the meeting. Rebecca Gatewood-Secretary
ST JOSEPH UNIT
Carolyn Corn called the St. Joseph HCE meeting to order
on February 7th. The Pledge and Aim were stated by all
present. The minutes were read by Carolyn Corn and
approved. The treasurer, Nancy Aders, gave a report. The
funds from the Christmas tree that Dorothy Hewerdine and
Barbara Hill made will go our fund.
We filled out our CCHCE books with all participating.
Dorothy Hewerdine demonstrated on cake decorating, by
making a Valentine cake and the demo was done in front of
our group and questions were answered. Then we got to eat
cake. Dorothy H. and Barbara Hill served dessert. Eneryone
enjoyed the demo about how to make multi colored roses for
the cake.
Doris Marsh gave info on India, our county of study.
Penny’s for mission were collected as well as the dimes in
H2O bottles. Happy Valentine Day. Barbara Lane
STALEY UNIT
Staley Unit was called to order by Ceil Costello on Friday,
February 15, 2019, at Good Shepherd Lutheran Church in
Champaign. Twenty-four members and no guests were
present. Two birthday cards with a $10 Walmart gift card
were sent to Jordan House DSC residents that have birthdays
in February.
Eileen Miller explained the ACWW Zero Hunger
Challenge and collected the water bottles of dimes that
members collected. The collection jar for DSC Jordan House
was passed since there were two birthdays this month.
Marie Reeves was absent so Ceil thanked our hostesses
Ethelyeen Holy, Pat Lacey, Eileen Miller, and Jolie Trautman
for the roses and Valentine table decorations and wonderful
refreshments of hot cocoa, heart shaped brownies and rice
crispy treats, chocolate cupcakes, nuts, pretzels and candies.
Francis Simpson introduced Joanne Cahill and Nancy
Benz to give the program on Saving Money on
Food. Planning meals, when to buy food, food delivery,
using coupons for groceries and restaurants was
discussed. Much discussion followed.
Mary McGuire reported Staley has 39 members and a new
membership list will be out soon.

Linda Boehm gave a report on how 4-H is organized and
explained the clubs are not all farm related.
Pat Lacy gave a short talk on India which is the 7th largest
country in the world.
Alice Espenschied is arranging a lunch and visit to the Idea
Store. A list of items that can be donated to the store was
passed out.
The next meeting will be Friday, March 15, 2019, at Good
Shepherd Lutheran Church. Hostesses will be Linda Boehm,
Jean Cornell, Mary McGuire, and Francis Simpson.

MARCH 2019
Blanche’s pink dessert 1 can Eagle brand milk
1 can cherry pie filling
1/4 c Realemon
3/4 c crushed pineapple, drained
1/4 t almond extract
Mix all together well in a large bowl. Set aside.
Mix 2 pkgs. Dream Whip according to pkg. directions.
FOLD into creamy mixture. Pour into a 9 X 13 pan, cover
and freeze at least overnight. To serve, thaw slightly and
cut into 12 squares. Eve Springer, Dewey/Fisher Unit
Cinnamon Apple Crumb Cake
Cinnamon Streusel crumb: 1 1/2 C. Flour
1/2 tsp. salt
1/2 C. melted butter
1/2 C. brown sugar
1 tsp cinnamon
1/2 tsp vanilla
1/4 C granulate sugar
1/4 tsp nutmeg
1 large or 2 small apples peeled & chopped
For cake:
4 T butter
1/2 C granulated sugar
1 egg
1 tsp vanilla
1/4 tsp baking soda
1/2 C sour cream
1 C flour
1/4 tsp salt
1/2 tsp baking soda
Apple Cider glaze:
1/2 C powdered sugar
1 1/2 - 2 T apple cider
Preheat oven to 350 degrees. Grease 8 inch spring form
pan and line the bottom with parchment paper. Set aside. To make streusel crumb: whisk together dry ingredients.
Then add melted butter and vanilla. Stir until mixture is
evenly moist, set aside.
To make cake: In a large bowl cream together butter with
sugar until light and fluffy. Add egg and beat well. Finally
add vanilla and sour cream and beat again.
In another bowl stir together flour, baking soda, salt and
baking powder. Add to the butter mixture and stir until
just combined.
Spread half the batter at the bottom of the pan. It will be a
very thin layer. Spread the apple chucks evenly over the
batter. Sprinkle about 1 cup of the cinnamon streusel
crumbs over the apples. Spread the remaining batter over
the crumbs. On top spread the rest of the cinnamon
streusel.
BAKE 35 to 40 minutes or until a tester inserted in the
center comes out clean.
BEFORE removing the ring of the spring form pan, run a
knife around the cake.
To make the glaze, whisk together powdered sugar with
apple cider and drizzle of the cake.

(Boarding at 11:00 a.m) to the
Goodfield Barn III Theatre.
We will enjoy a Delicious Brunch

cinnamon rolls. At 12:30 p.m., we will
enjoy live entertainment even maybe
some dancing, and we are invited to be
included in the “Hat Contest”. Person
wearing the “Best Hat” will win a special
Mother’s Day Surprise. This is optional.
