Hot Scoops™ is ideal in a configuration that allows customers to scoop, sprinkle, drizzle, and top their own mashed potatoes. Whether you offer it every day, or just on special occasions, here are some thought-starters.

Bar location? The Mashed Potato Bar can be part of your existing line or salad bar, a free-standing setup, or a combination of both. Also consider serving the mashed potatoes both regular or flavored from your regular buffet line, and then let customers add toppings at another station.

Hot or cold toppings?A bin filled with ice will keep cheeses and sour cream cold, while steamtable pans keep toppings like gravy and chili hot. But also think about easy room-temperature ingredients such as sunflower seeds, chives, or olive oil. Setup Tip: To avoid unappetizing spills, don’t place sauces and other toppings behind the pans of potatoes.

Employee responsibilities? Maintain your Mashed Potato Bar the same way you’d take care of a salad bar. Employees can use our suggestions (see illustrations) to set up the bar with recommended signage.

Directions

1. Heat oven to 350°F. (Convection oven to 325°F.) Spray two half-size steamtable pans with nonstick cooking spray.

2. In large stockpot over medium heat, heat butter until melted. Add onions. Cook, stirring occasionally, 5 minutes or until tender.

3. Stir in soup base and water. Bring to a boil. Whisk in seasoning packets.

4. Stir in potatoes. Bring to a boil. Reduce heat and simmer 15 minutes. Remove from heat, cool slightly.

5. Beat eggs and sour cream until frothy. Stir in green onion. Stir into potato mixture. Portion half of potato mixture into steamtable pans.

6. Sprinkle each pan with 2 cups salmon. Top with remaining potato mixture. Bake 50 to 60 minutes or until set. Remove from oven, let sit 5 minutes. Sprinkle with remaining salmon.

1. Place beef in stockpot just large enough to hold roast. Add next 2 ingredients, turning beef to cover all sides. Heat to low simmer; cover. Slowly simmer 1-½ to 3 hours until very tender, depending upon size of roast.

2. Allow roast to cool until easy to handle. Remove from sauce and shred or chop beef. Reduce enchilada sauce mixture to equal 1 quart; stir into shredded beef.

3. Add water to beans. Cover and hold 25 minutes.

4. Warm tortillas by placing in steamtable pan on heated steamtable. Cover and keep warm.

5. Top each tortilla with ¼ cup beans, ¼ cup rice, 2 to 3 ounces beef mixture, 2 table-spoons sour cream, and 1 tablespoon green onion. Serve immediately.
