7 Steps toMaking a Quesadilla
Heat a nonstick frying pan tomedium-high heat. Add 1/2 tea-spoon of olive or canola oil andspread around frying pan. Whenthe oil is hot, place one whole-wheat tortilla in the pan.
Sprinkle 1/4 cup of your favoritelow-fat shredded cheese, suchas mozzarella, Monterey jack orcheddar, over the top of the tor-tilla, making sure that the cheesedoes not land on the pan.
Add 1/2 cup of protein, suchas canned beans (drained andrinsed), cooked chicken, turkey,shrimp, shredded pork or beef,or tofu.
Add 1/2 cup of veggies for fla-vor, fiber and extra nutrition. Trytomatoes, spinach, mushrooms,bell peppers, corn, onions, avo-cados or your favorite veggie ofchoice. Add cilantro, pineapple,hot sauce, jalapenos, black olivesor salsa for an additional boost offlavor.
Sprinkle 2 tablespoons ofcheese on top of the fillings andplace the other whole-wheat torti-lla on top. Cover pan and cook forapproximately two to four minutesor until cheese begins to melt andtortilla browns.
Using a spatula, carefully flipthe quesadilla over and cook forapproximately two more minutes.
Cut into six pieces and top withguacamole, salsa and low-fat sourcream or plain or Greek yogurt.
