Character trait education is about instilling a

work ethic, learning from failures, developing

leaders, problem solving, having compassion

and giving to others. The students will be

awarded spirit sticks for practicing these

moral traits: Honesty, Integrity, Sportsman-

ship, Respect, Confidence, Responsibility,

Perseverance, Courtesy, & Judgement

Crockpot Chicken

Enchilada Stew

2 lbs chicken breasts

1 yellow onion, chopped

1 green bell pepper, chopped

1 -4oz can of chopped jalepe-

nos

1 –4oz can of chopped green

chiles

2 T coconut oil

1 –14oz can of diced tomatoes

1 –7oz can tomato sauce

3 garlic cloves, minced

1 T cumin

1 T chili powder

2 t dried oregano

Salt and pepper to taste

Optional: Items to garnish—

cilantro, avocado, etc

Optional: Whole wheat tortil-

las

Add the chicken to your crockpot.

Throw in the rest of your ingredi-

ents (except optional items) on top

of the chicken.

Cook on low 8-10 hours or high 6-

8 hours

When it’s done cooking, use two

forks to shred the chicken. Top

with optional garnish. This recipe

can be eaten as stew or made into

delicious shredded chicken tacos!

Try these healthy recipes for your

family this month!

Breakfast Cookies

(glutten, soy and sugar free)

1 cup of almond butter

1 egg

1/4 cup of honey or pure ma-

ple syrup

2 1/2 to 3 cups of mix-ins of

your choice (raisins, coconut,

flax seeds, etc.)

1/2 t vanilla

1/2 t cinnamon

1/2 t baking soda

1/4 t salt

Mix all ingredients well, and drop

by spoonfuls onto a cookie sheet.

Flatten each cookie slightly and

bake for 13 minutes at 350°.

(Because of the stickiness of the

almond butter, it is recommended

to use parchment paper on top of

your cookie sheet)
