W elcome to Gran Castillo Royal vineyards. The wine culture has always been atradition for the people of these lands, in fact the Wine Culture is based on many of thecustoms, festivals and literature from the village of La Mancha.

Castile–La Mancha is located inthe middle of the Iberianpeninsula, occupying the greaterpart of the Submeseta Sur, thevast plain composing thesouthern part of the MesetaCentral.La Mancha is a vast expanse ofland that has a flat terrain,without great heights and withbeautiful red Miocene sedimentsof limestone structure. Theirtemperatures are extreme due toits continental climate, rangingfrom the winter cold of -15 º to45 º from the stifling summer.Dryness is one of its most distinctcharacteristics, since its micro-climate prevents the entry ofmoist winds, presenting a lowrainfall (300 to 400 mm per

farming, although recentrestructuring plans has expandedthe number of drip irrigationfarms. Moreover, our country has3,000 hours of sunshine a year tosear their grapes; hence we offerthe best fruit.

Castile–La Mancha has some ofthe most extensive vineyards inEurope, nearly 700,000 hectares(1,700,000 acres).Our main task along with thepromotion of our wines is theprotection of their quality.Therefore, it is obvious that wehave established quality controlswhich are customary from thevineyards.

Our region has a long tradition of wine, which added to the combination of differentnatural features; produces an excellent grape to give life to a great wine, with differentpeculiar shades. You could say that La Mancha is the ideal area for growing grapes,acquiring a fruit of extraordinary quality, maturity and health.

For example, planting density per hectare in our vineyards conducted "in beaker" willrange between 1,000 and 1,600 strains, with a maximum of 20,000 productive buds,while "in trellis" will be between 1,275 and 3,333 strains, with a maximum of 42,000productive buds.

In addition, the maximum yield of 10,000 kg / ha for plantations conducted "in beaker"(white and red varieties) and "trellis" reach the 13,000 kg / ha. Therefore, when the yield ishigher than allowed, the total output of the plot is not suitable for the processing of winewith DESIGNATION OF ORIGIN - DO in "La Mancha".

Bull & Dragon´s activity consists in design and elaboration of some food and wineproducts of top class quality, exclusively designated to exportation.

Reserva, Crianza and Joven are our red wines. Airen and Verdejo are our whitewines. Five fine wines from our vineyards situated in La Mancha region.

Our Red wines are born from a variety of hand picked and especially selectedCencibel grapes (Tempranillo). Cencibel variety (Tempranillo) is the most important ofthe red grapes in the Designation of origin La Mancha, with the highest reputation forquality at the national level. It is the most used in La Mancha, and we are using it toproduce our red wines with ageing, in its version of single varietal, 100% Tempranillo.

The wine industry of La Mancha, in the last decade has undergone a substantialtransformation in relation to techniques for growing grapes, as well as inwinemaking. This has been possible due to the opening of the economy, theenrichment of knowledge and technological advance that has had access.

Bull & Dragon is combining modern technology with tradicional methods ofwinemaking. Stainless steel deposits and computers are working together withhand picking, oak barrels and time.

This wine, born from a variety of hand picked Cencibel grapes (Tempranillo),remains a minimum of one year in our oak barrels. Harmonizing the elaboratecherry colour, unique taste and aroma, a faint nut, vanilla flavour and touch ofspices originating from the wood.

This wine has DO ( Denominacion de Origen ) designation, certified by numberand controlled by Spanish government. It assures that wine is sourced only fromdesignated area and have met highest criteria and quality standards.

Most of our wines are made in stainless steel tanksfor a better control of fermentation and hygiene,using oak barrels for various purposes: wine tasteacquires new qualities, presenting a better clarityand stability.

From an aromatic point of view new nuancesappear. During storage in casks or barrels, the wineundergoes an important oxygenation because thewood does not completely isolate from the air. Thecolor red loses its vivacity initial and movestowards a less intense red, more orange, recallingthe red-tile.

Our Crianza wine remains twelve months in oakbarrel and rest in bottles.

After the period of twenty four months ofageing in oak barrels, our wine remains in thebottle for his maturation. The penetration ofair into the glass is practically zero, ageingtakes place in reductive atmosphere, which isinverse to oxidation, leading to stability anddevelopment in wines, both aromatic andtaste, pursuing a balance in all the sensations.

The choice of oak is the starting point. Of the more than 150 species of oak, Quercus,are only three which are generally used by the coopers: Quercus petraea, Quercus roburand Quercus alba. The first two correspond to what we know as French oak andAmerican oak last.

Once the oak has been selected, entered a no less important phase: the process of dryingand curing. It can last between 18 and 24 months. At this stage there is a negligiblestabilization in the aromatic composition of oak wood and should do it naturally andcontrolled.

In the traditional process of construction of the barrel includes heating the same in orderto break more easily staves. A few pieces of debris burning oak planted on the floor andin the center of the barrels, placed vertically, applying heat to the boards arranged toform a barrel. The flame reaches the walls of the barrel, roasting unevenly. This roastproduces a series of chemical transformations that alter the substance of wood gives thewine during its ageing.

The roasting time is more delicate since it is the time that will produce more changes inthe timber. The technique of toasting braziers barrel is a valid technique for theextraction of aromatic compounds of the timber. There are different roast profiles toobtain different wines but above all profiles must be chosen by the winemaker toproduce the desired wine.

Our winemakers keep their secret techniques for obtaining the multiple nuances of ourwines aged.

Jo v e nA good wine came from good grapes, picked at its peak of ripeness, with meticulouscare, with no heavy loads, enduring the rigors of summer and selecting its entry intowinery to produce the product more in line with the type of grape received.

In our effort to obtain the most quality in the bottling, we are obligated to select thebest grapes from our vineyards, to obtain must with the utmost care, to ferment slowlyto extract the genuine taste and aroma, to not fatigue with movements, clarification andfiltration unnecessary.

Our young wine (Joven), is made out of the same grape as our Crianza and Reserva butwithout ageing process, preserving the essential and original qualities of Tempranillogrape.

Our company counts with numerous wineyards situated inthe same region with the same characteristics of the soil andclimate. As a results of that our annual production ofTempranillo wine reaches two millions of litters.

Air é n V e r d e j oIt is the most characteristic white grape in the Southern Plateau and one of the mostabundant in Spain (32%), being located mainly in Castilla-La Mancha. In other regions, itcan find the names of Lair, Manchego, and Forcayat valdepeñero. This variety is veryproductive and of great adaptation to extremely dry and hot climates. It require shortpruning, and produces a large cluster, loose, yellow, with grapes that have medium thickskin, soft flesh and colorless juice. Airen variety produces wines with good flavor andmoderate acidity, with great qualities for young and traditional wines.

Gran Castillo Royal Airén is a fresh wine, pale yellow withgreen notes. Its delicious taste and fragance of freshly cutgrass are stressed. Ideal to accompany all kind of fish,seafood, rice, white meat, sushi and tapas.

Ve r d e j oEarly maturing white grape with horizontal size and vigorous trunk. It is considered oneof the best varieties of our country and gives rise to a fully composed aromatic and softwine. It is also known for their freshness, acidity and creaminess, having a verypersistent and pleasant aftertaste. Although its beginning has been recent in La Mancha,it has grown exponentially.

Gran Castillo Royal Verdejo is bright yellow wine withgreen tones. Its aromas are reminiscent of peppermint, whileaniseed and tropical notes adding complexity. In the broadsample taste, sweet, slightly acidic and balanced.

Virgen ExtraPremium

Bull & Dragon´s works with the most modern technology to obtain our Gran Castillo Royalolive oil Virgen Extra Premium; that guarantees the highest quality cold extraction, and thelatest technological advances in the process of decanting and storage in order to preservethe maximum organoleptic qualities and flavors of its oil.

Receiving olivesThe reception of the olive is a key process for high obtaining quality oils. We have ahopper front to avoid going over it and falling impurities such as dirt or debris that couldbring the vehicles. Then, the received olives are cleaned from leaves and stem andpolished in a stainless steel washer.Before proceeding with the storage bins, the olives are weighed continuously. The storagebins allow us to classify the different groups of olives according to their degree of maturityand variety.

MillingOur goal is to grind daily all the olives received the same day. For this we have excesscapacity that allows us to grind more than 150,000 kg in twenty-four hours. We haveduplicated lines in order to ensure the cold extraction of our oil thus enhancing theirorganoleptic values.

DecantingWe opted for the natural settling of a battery of three stainless steel tanks where the oilstays twentyfour hours before going to the oil cellar.

Oil cellarWe have 20 stainless steel tanks and associated pipes that allow us to classify the differentoils produced and we maintain our cellar at a temperatures between 18 and 24º C.

Virgen ExtraPremium

Oil high intensity "fruity". It has a "fruity" markedly "green" where the characteristics of"leaf" predominate over those of "grass". On the nose the first thing heard is thecombination of "tomato" and "artichoke" that print freshness in the sensory assessmentby direct route.

The palate presents daily average "bitter" and "spicy". It enhances the positive attributesperceived to be evaluated by nose after nose. Present with high intensity attributes"almond" and "green banana", the latter having a great persistence. This oil makes thisproduct extremely balanced and complex.
