Overview• The aim is to complete a square Spring wicker basket.• A cake or covered dummy is required.• Given time constraints we will aim to produce the flowers in one colour, so choose the colour of your

flower - yellow, pink, red or blue.• I have piped grass out of light green royal icing onto the board - you can do this at home as the

finishing touch.• Please colour up all paste beforehand to save time.• All paste quantities are approximate - bring a little extra paste just in case.

Requirements• 6” square dummy• 9” square board• Small paintbrush for glue• White flora in container (I use the very small glass jam jars)• Sugar glue (melted sugarpaste) in container (I use the very small glass jam jars)• Dusting powder in bags (I tend to use icing sugar in linen)• Large and small rolling pin • JEM handy holder OR formers OR foam shapes OR circles of kitchen towel / paper• PME primrose cutter set• 480g sugarpaste (300g for the base covering in white and for the cushion - 120g cream, 20g dark green

and 40g light green)• 220g flower paste (80g red, blue, pink or light yellow (for the flowers), 10g dark yellow (for centres),

40g dark green (for leaves), 30g light green (for bows and calyx) and 60g cream (for bows)• 500g Wilton rolled fondant (250g for the handle and edging in mid brown and 200g for the side panels

in light brown)• PME cutting tool• PME mexican hat foam pad• PME ribbed and basket weave roller• PME butterfly cutter• JEM large hydrangea leaf cutter• 22g wire (two lengths - for the handle)• Cocktail sticks (for the handle and flowers)• Paste colours as required• Formers or foam shape or circles of kitchen towel / paper• Kitchen towel / paper or tissue• Light green royal icing for the grass • Piping bag and star nozzle• Box• Some small plastic bags (just incase)• Small scissors• Nimble fingers

Gary Chapman has influenced many cake decorators and is a true cake designer with his own very distinct style. Gary was the originator of the modern technique of fabric effects and gave demonstrations and classes all over the UK and the USA to share his skills. He has also published books and magazines and is a contributor to Cake Craft & Decoration Magazine. Gary Chapman first developed an interest in sugarcraft in the early 1990s when he worked for Merehurst, who at the time had built up a worldwide reputation as the leading publisher of cake decorating books. Invigorated by this exciting edible art medium he invented the new technique of fabric effects in sugar, published his own book and gave demonstrations and classes all over the UK and the USA. Later he launched and was Editor of the first ever mass-market cake decorating magazine. He also produced Iced and Easy, a beginners cake book for WH Smith and provided display pieces for exhibitions of edible art called ‘A Taste of Art’. He also became one of the top 10 wedding cake makers in London. More recently, he left London for a quieter life in the Cotswolds but continues to teach and experiment.
