Your bread maker will automatically mix, knead and bake giving you delicious fresh bread with the minimum of fuss. The automatic timer feature of your bread maker means you can have freshly baked bread every morning.

start/stopThis button is used for starting and stopping the selected baking program. To start a program, press the Start/Stop button once. A short beep will sound, the colon (:) in the time display will flash, the start indicator light will illuminate and the program will start. All the other buttons on the control panel will be deactivated except the Start/Stop button when the program has begun.

To stop the program, press and hold the Start/Stop button for approximately two seconds. A beep will sound and the start indicator light will go out indicating that the program has been switched off.

MenuThis button is used to select the different programs. Each time it is pressed a short beep will sound and the selected program will change. If you press and hold the button, the menus will cycle through quickly.

Basic: This program is primarily used for breads that use white flour, although some recipes may include small quantities of whole wheat flour. The bread will be slightly denser than French or Sweet breads, as there are fewer rising cycles and the overall cycle time is shorter.

french: Traditionally, French bread has a crispier crust and lighter texture than basic breads. These recipes do not usually include additional fats or milk.

Whole wheat: This program is used for recipes which contain significant amounts of whole wheat or rye flour, oats or bran. It begins with a rest period during which the flours and grains absorb the liquid - this softens the ingredients and helps them to combine properly. The program also incorporates an additional rise cycle which helps the heavier wheat and grains to expand.

sweet: Suitable for sweet breads such as raisin, cinnamon, apricot, etc.

ultra fast 750g: This program cooks a 750g (1.5lb) loaf in about an hour. The recipes call for very warm water and larger amounts of yeast.

ultra fast 1000g: As above but for a 1000g (2.0lb) loaf

Quick: This is for quick breads that do not use yeast and require only mixing and baking.

european: This program is for dark breads such as pumpernickel.

dough: This program only makes the dough and will not bake the final bread. This dough setting is suitable for pizza bases, doughnuts, etc. Remove the dough to shape and bake in a conventional oven (or, in the case of doughnuts, deep fried)

Bagel dough: As above for the preparation of bagel dough.

Jam: Use this setting to make sweet and savoury jams. The process is a simple case of mixing and heating.

Bake: This setting will use your bread maker’s oven to bake for one hour. Baking can be controlled manually by pressing the start/pause button to stop the function at any time.

colourThe colour button allows you to select the colour of the loaf’s crust. Choose from LIGHT, MEDIUM or DARK. The default crust colour is medium. The selected crust colour will be indicated on the display.

When using programs 1, 2 and 3, you can use the Colour button to select ‘RAPID’. This setting produces a basic, French or wholewheat loaf in less time than the conventional program.

Loaf sizeThis button allows you to choose from a 500g (1.0lb), 750g (1.5lb) or a 1000g (2.0lb) loaf. Note that the total cooking time will vary depending on the size of loaf being cooked. The default setting is 1000g (2.0lb). The selected loaf size will be indicated on the display.

ups, down tThese buttons allow you to select a delay time period if you don’t want your bread maker to start cooking immediately.

Before first use do not immerse the bread maker or power cord and plug in water or any other

liquid.

Before using your bread maker for the first time, wash the inside of the bread pan and kneading paddle with hot, soapy water. Rinse and dry thoroughly.

Using a damp cloth or sponge, wipe the interior of the bread maker, the inside of the lid and the exterior of the bread maker and weighing scales. Use only a mild detergent solution.

Wash the measuring spoon, measuring cup and weighing scale bowl with hot, soapy water, then rinse and dry them thoroughly.

using never exceed the maximum capacity of your bread maker (1000g or �.0lb). Place

your bread maker away from direct sunlight, draughts, or heating appliances and radiators. these can adversely affect the operation of your bread maker and spoil the results.

1. Lift the bread pan out of your bread maker using its handle.

2. Fit the kneading/mixing paddle onto the shaft in the bottom of the bread pan. The shaft has a flattened side to grip the paddle when it is rotating. Align the paddle with the flat on the shaft and press it down.

3. Pour the liquid ingredients into the bread pan. Add the rest of the ingredients to the bread pan in the order listed in the recipe. Weigh all of your ingredients accurately because incorrect measures will produce poor results.

Do not let the yeast come into contact with the salt or water prior to mixing, as this will prevent the dough from rising properly (the water will activate the yeast before the ingredients are properly mixed and kneaded). When using the delay timer, make a small well in the mound of flour and put the dry yeast into it.

4. Fit the bread pan into the oven chamber and push down to lock it into position. Lower the bread pan handle and close the bread maker lid.

5. Plug your bread maker in to the mains supply socket. Your bread maker will beep and select the default program (program 1).

6. Press the Menu button until the required program is selected. If the program permits, select the loaf size and crust colour using the Loaf size and colour buttons.

7. Press the start/stop button. Your bread maker will start to run the selected program. To stop or cancel the program press the Start/Stop button for approximately 2 seconds.

8. At the end of the baking cycle your bread maker will beep. Unplug your bread maker and, using oven gloves, lift the bread pan out of your bread maker.

9. Turn the bread out onto a wire rack and leave it to cool for at least 30 minutes.

10. Clean the bread pan and kneading/mixing paddle immediately after use—see cleaning.

The secret to making successful bread is measuring your ingredients precisely and accurately. It’s vital to measure ingredients properly—never try to guess them. The ingredients must also be added to your bread maker in the order shown in the recipe.

Never use ordinary kitchen teaspoons and tablespoons to measure ingredients.

using your scalesGently place the bowl onto the scales.

Carefully turn the graduated base backwards or forwards until the pointer is aligned with the zero mark on the measuring scale. Don’t press down on your scales while you are doing this.

You can also turn the base through 180º to select either the metric (0 to 2kg) or imperial (0 to 4lb 8oz) measuring scale.

using your measuring spoonYour measuring spoon measures either 1 tablespoon (Tbsp) or 1 teaspoon (Tsp).

3. Add the ingredients using a spoon. Fill your measuring spoon slightly over the top.

4. Use the back of a knife to level off the measured ingredient.

Don’t use your measuring spoon to scoop the ingredient directly out of the packaging. This will compress the ingredient tightly into your measuring spoon and provide a false measure.

The line around the inside of each end of your measuring spoon indicates a half measure.

using your measuring cupYour measuring cup is used for liquid measures. It has three scales:

5. Place your measuring cup onto a flat, horizontal surface and add the ingredient.

6. Check the level against the scale on your measuring cup at eye level. When correct, the ingredient will be directly behind the mark on the scale.

ultra fast bread programThe Ultra Fast programs (5 and 6) can bake a loaf in about 1 hour. Please note that you must use hot water at 45—50ºC. Use a cooking thermometer to measure the temperature. The influence of temperature is very critical to the performance of baking. If the water temperature is too low, the bread will not rise to its expected size. If the water temperature is too high the yeast will be killed before rising.

rapid bakingBesides the two ultra fast baking programs (5 and 6), you can set your bread maker to rapid bake on the first three programs.

Remove the bread pan and add the ingredients. Replace the bread pan and close the bread maker lid.

Using the Menu button, select either program 1, 2 or 3 depending on the type of bread you are baking.

Press the Loaf button to select the size of loaf you are baking.

Press the colour button until ‘RAPID’ is selected.

Press the start/stop button to start baking.

using the delay timer if you are using the bread maker in hot or humid weather with a delay time greater

than � hours, there is a danger of the bread rising too quickly. to prevent this, reduce the liquid by one or two tablespoons, increase the salt ¼ to ⅛ teaspoon and reduce the sugar by up to one half of the amount indicated in the recipe.

don’t use the delay timer for long delay periods if you are using ingredients that do not keep well at room temperatures e.g. milk, eggs, cheese, etc.

Your bread maker has a built in timer that allows you to delay operation for up to 13 hours. The delay timer cannot be used on certain programs such as the Ultra Fast, Jam, Bake, etc.

1. Prepare your bread maker and add the ingredients as previously described.

2. Make the required settings for program, loaf size and crust colour.

3. Set the timer. Press the st buttons until the required time is displayed.

For example, if the time is 8:30 p.m. and you want the bread to be ready at 7.00 a.m., you need to set the timer for a 10 hour 30 minute delay. Press s or t until 10:30 appears on the display.

4. When the timer is set, press the Start/Stop button. The display will start to count down the time to completion. The bread maker will automatically start and your bread will be ready at the desired time. Once you have pressed the Start/Stop button you cannot alter the timer. If you forget to press the Start/Stop button, the timer will not work.

Keep warm functionThe automatic keep warm function prevents the bread from getting soggy by keeping the baked bread warm for up to one hour after the program has ended. The function stops when the Start/Stop button is pressed or the bread maker is unplugged from the supply socket.

add ingredient alertIf you are baking bread which requires the addition of other ingredients, such as dried fruit or nuts, a beep will sound at the appropriate point in the cycle. This will occur during programs 1, 3, 4 and 10 only.

hints and tiPs

generalAlways add the ingredients in the order shown in the recipe. It’s important to keep the yeast away from the liquids. Use the ingredients at room temperature (20º to 25ºC). The temperature can affect yeast activity and will affect the quality of the bread.

dough consistencyThe characteristics of flour will vary from season to season and be affected by how it is stored and the humidity in the air. Flour absorbs moisture and so each batch is different because it will have been exposed to different conditions. Check your dough after 10 minutes kneading. If it appears too sticky add more flour, 1 tablespoon at a time. If your dough appears too dry or too firm add more water 1 teaspoon at a time. Well-balanced bread dough will look smooth and elastic and should be soft to the touch.

LiquidsFill the spoon or cup provided to the level indicated. Check your cup measurements by placing the measuring cup on a flat surface and reading the measurement at eye level.

solid fatsWhen using butter and margarine it is important to chop the ingredients into cubes before adding to the bread pan. Butter and margarine should be added at room temperature. Use unsalted butter or margarine.

adding fruit and nutsFruit and nuts are added towards the end of the kneading cycle. The machine will beep to let you know it is time to add fruit or nuts. If they are added before this warning beep, the fruit will be pureed due to excessive kneading.

freshnessEnsure all ingredients are fresh and used before the specified use-by date. Avoid using perishable ingredients such as milk, yoghurt, eggs or cheese with the time delay function. Store dry ingredients in airtight containers, to prevent drying out.

slicing BreadFor best results, wait at least 10 minutes before slicing, as the bread needs time to cool. Place the bread on its side and cut it in a sawing motion with a serrated bread knife. For easy and even slicing we recommend using a Breville electric knife.

freezing BreadMake sure the bread has completely cooled. Slice and wrap the bread in plastic before freezing.

toppingsIngredients such as herbs, sesame seeds and chopped bacon can be added to the top of the bread during the baking stage. Open the lid of your bread maker, gently brush the top of the loaf with a little milk or egg yolk and sprinkle with topping (do not allow ingredients to fall between the pan and the inside wall of your bread maker). Close the lid and allow baking to continue.

this step needs to be done quickly to prevent the bread from sinking. your bread maker gets very hot during baking so always use caution to prevent injury.

using Bread improverThe use of bread improver is recommended to achieve optimum results, but is not an essential ingredient. Bread improver will increase the gluten content of the flour mix. It will also influence the structure, size and texture of the bread, so that it does not collapse when baking.

yeastYeast is a vital ingredient when bread making, without it the bread will not rise. Your bread maker maintains the optimum temperature for the yeast to take effect, during the bread making process.

Only use instant or fast acting yeast - sometimes called easy bake.

Some yeast may require the use of a bread improver. A bread improver will provide additional gluten to the flour to produce a better loaf. If the weather is hot and humid, try reducing the amount of yeast by ¼ teaspoon to prevent the dough from over rising.

flourIn order for the bread to rise, the flour you use has to have a sufficiently high protein content. We recommend the use of a good quality strong plain flour or bread flour.

LiquidsWhen liquids are mixed with flour, gluten is formed. Gluten is necessary for the bread to rise. Most recipes use dry milk and water, but other liquids such as fresh milk and fruit juice can be used.

saltIn small amounts, salt adds flavour and controls yeast action. Too much salt will inhibit the yeast and the bread will not rise properly.

When adding ingredients to the bread pan, yeast and salt should be kept separate.

always ensure your bread maker is switched off, has cooled down and is unplugged from the mains supply before cleaning. do not immerse your bread maker or power cord and plug in water or any other liquid.

Warning! do not use abrasive cleaning materials (e.g. steel wool) or cleaning agents, to clean any part of your bread maker.

exteriorWipe the body of your bread maker with a damp cloth and dry thoroughly.

interiorAfter use, ensure the interior has cooled and use a damp cloth to wipe out any crumbs or flour.

Bread panWipe the bread pan with a damp cloth, then dry thoroughly.

If necessary fill the bread pan with warm, soapy water and leave it to soak for an hour. Rinse and dry thoroughly.

Alternatively, wash the bread pan and kneading paddle in the dishwasher.

Measuring cup and spoonTo make cleaning easier, rinse the measuring spoon and cup in warm, soapy water immediately after use.

Weighing scalesWipe the exterior of the weiging scales with a damp cloth and dry thoroughly.

Clean the bowl with warm soapy water. Dry thoroughly.

ABOUT QUICK BREADS

Quick breads are made with baking powder and baking soda that are

activated by moisture and heat. For perfect quick breads, it is suggested

that all liquids be placed in the bottom of the bread pan . with the dry

ingredients on the top . During the initial mixing of quick bread batters , dry

ingredients may collect in the corners of the pan . It may be necessary to

mix, using a rubber spatula to avoid flour clumps .

ABOUT ULTRA FAST PROGRAM MENU

The bread maker can bake a loaf in less than an hour. Using the ultra fast

menu 2. you can bake bread in 58 minutes, but the bread will be a little

denser in texture . The hot water should be in the range of 48-50°C.

Always use fast rising yeast, do not use active dry yeast for this program

menu.

Proceed as follows:

Wash the fresh ripe fruit you are going to use, peel hard peeled fruit

such as apples, peaches or pears.

Always use the recommended quantities. as these are optimised for

the MARMALADE program . Otherwise the marmalade may boil too

early, or spill over.

Weigh the fruit, cut into small pieces (max 1cm) or add the 2:1 jellifying

sugar in the specified quantities. Do not use normal sugar or 1:1 jellifying

sugar, as the jam will not be thick enough.

Mix the fruit with the sugar and start the program .

When the unit beeps, pour the marmalade into glass jars and fit lids

securely.

22. Strawberry Jam Washed and cleaned fresh strawberries, either cut into pieces or pureed 900g 2: i jellifying sugar 500g Lemon juice 1 tbsp

Mix all the ingredients in the container with a plastic scraper. Select the JAM program and start. Remove the sugar remains on the side of the container with a spatula. When the unit beeps, remove the container using oven gloves. Pour the manmalade into glass jars and fit lids securely.

23. Berry Jam Thawed deep-frozen berries 2 1 jellifying sugar Lemon juice

Mix all the ingredients in the container. Select the JAM program and start. Remove the sugar remains on the side of the container with a spatula. When the unit beeps, remove the container using oven gloves.

• Pour the marmalade into glass jars and fit lids securely.

24. Orange Jam Peeled and thinly diced oranges Peeled and thinly diced lemons 2:1 jellifying sugar

Peel the oranges and lemons and chop into small pieces. Add the sugar and mix all the ingredients in the container. Select the JAM program and start. Remove the sugar remains on the side of the contaJner with a spatula
