One hopes that these data reached the sponsors of events before this months kickoff for breast cancer awareness as they plan out their main fare, which hopefully will be plant based (bean dips, veggie sticks, rice and fruit dishes), rather than the typical, mostly animal based, dishes (barbeques, roasts, ice cream etc). QUESTION:

ANSWER: Forks over Knives has a great FAQS page giving information about the basic nutritional requirements and whether they are met in a mostly-plant-based diet. For example, the first FAQ was about whether a plant based diet supplies sufficient amounts of vitamin B12. B12 is also called cobalamin, which may be someones alliteration of cobalt and vitamin, since B12 does contain cobalt. So here is a short discourse on B12 (modified from Wikipedia). B12 is water-soluble, which means it is NOT stored by the body. It is particularly important for the brain and nervous system and for blood cell formation but is important for metabolism in every cell, especially affecting DNA synthesis and regulation (here is where epigenetics plays a role) but also in fatty acid synthesis and energy production. Neither humans, nor most animals, can synthesize B12.

"Vitamin B12 consists of a class of chemically related compounds (vitamers), all of which have vitamin activity" The pre-vitamin (hydroxocobalamin) can be synthesized by bacteria, which animals can then turn into different active forms of B12. Hydroxocobalamin, methylcobalamin, and adenosylcobalamin can be found in more expensive pharmacological products and food supplements. B12 deficiencies are not limited to vegetarians, but can be present even in those who eat meat. Plants allegedly contain no B12 of themselves, but tiny bits of bacteria and soil remaining on tubers and roots can provide sufficient B12.

If soil bacteria are the only source of precursors of B12, we consume them secondarily by eating animal products (the animals first having eaten the soil and conserved the B12).

I would add, that it is also likely that some chemically treated soils might not have enough soil bacteria, but food grown in organic soils (with lots of bacteria) would increase the opportunity for obtaining B12 naturally.

The comments here from "wholevegan.com" seem very rational. "If you want to get vitamin B12 from plants, get organic root vegetables, wash them to get the dirt off, but do not brush the skin, and do not peel – then cook/eat. The dark spots in the plant skin due to contact to soil contains those bacteria that have vitamin B12".

If you only know winter squash as the boiled and mashed side dish served at Thanksgiving...... begins the text for this recipe in The Pink Ribbon Diet book

How true it is that we pidgeon-hole highly nutritious and easy to prepare foods into categories that revolve around holidays while leaving them out of our culinary arsenal the rest of the year. Winter squash is generally very nutritious, and filled with complex carbs, fiber, vitamins A, C, B1 (thiamin), B6 (pyridoxine), B3 (niacin) and B5 (pantothenic acid) and B9 (folic acid and folate -- see diagram on right). The latter is particular relevant to epigenetics, and the human body needs folate to synthesize DNA, help with repair DNA, and methylate DNA as well as to act as a cofactor in certain biological reactions. If DNA synthesis and repair are impaired, this can lead to cancer. Folate is especially important in rapidly growing cells (infancy and pregnancy). Squashs usually have plenty of copper, tryptophan and iron too. As with many foods, the darker the skin is, the higher the beneficial phytochemicals the content.

oPreheat oven to 450 F. Combine squash, onion, thyme, salt, pepper, nutmeg in pan. Add olive oil and toss to coat. Roast, turning the squash a few times, for 20-25 minutes, until cooked through and slightly browned. 4 servings, 180 calories each.

Edible summer and winter squash are high in vitamins A and C, a great source of potassium,

magnesium, iron, calcium, are fantastic for weight loss, have a low glycemic index and
