We have taken a different approach with our wine l ist. Our select ions are organized by country of or ig in and we have d iv ided the taste profi les into four main categories. Sparkl ing and Champagne, Is lands and Coasts, Mounta ins and Val leys, and The Garden. Below we have expla ined each category to prov ide ins ight into the sty les of wine they produce and what you can look for in each sect ion. On the fo l lowing pages, we hope you wi l l d iscover and enjoy the impact that geography and topography can have on a wine’s taste.
Champagne is often cons idered a gener ic term for wine with bubbles, but b i t by b i t the wor ld is coming around to the French understanding, that Champagne is not just a frothy wine but a p lace. The reg ion, which l ies about 2 hours to the northeast of Par is, has created d ivers i ty in the wine sty le made pr inc ipa l ly from three icon ic grapes, Chardonnay, P inot Noir and Pinot Meunier. A lthough the common thread of effervescence wi l l be found, we bel ieve the pa late of f lavors feature more than f izz but a wine that pa irs except iona l ly wel l with our cu is ine. Whi le Champagne is a geographical p lace, the wor ld over emulates the sty le of product ion. France, Germany, Spain and Ita ly a long with many p laces in the New Wor ld a l l have appel lat ions dedicated to making wine in the same method as the Champenoise. We have chosen some of the best representat ions of those sty les to enjoy as a wonderfu l a l ternat ive to our Champagne se lect ions.

SPARKLING - CHAMPAGNE & THE WORLD
Vegetables from the garden are often some of the most natural ly f lavorful ingredients of the kitchen. They can also be some of the most chal lenging for wine to pair with. The diff iculty l ies in the herbaceous, earthy and often bitter tones that dr ive the i r taste. Market fresh vegetables take center stage in a variety of dishes on our menu so we have chosen a ser ies of wines that wi l l serve to compl iment. These wines come from an array of regions but al l tend to showcase an aromatic and f lavor profi le which wi l l lend themselves to the p leasant savory and b i tter e lements inherent in the produce we offer.
Across the wor ld, the inf luence of coast l ines and oceans a long with the un ique geology of vo lcan ic is lands has a profound im- pact on the taste and sty le of the wines made in these reg ions. From the broad At lant ic Ocean to the ar id, near dessert - l ike c l imates around the Mediterranean Sea, from the fr ig id waters of the great Southern Ocean to Port Phi l ip Bay, from the is lands and coasts of I ta ly, Greece and Spain a l l the way to gorgeous western coast l ine of the United States where the mighty Pacif ic re igns, we have se lected a combi -nat ion of white and red wines that embody the f lavors which transport you to these bucol ic p laces. Cool ocean breezes and sa l in i ty in the a i r lend fresh and v ibrant qual i t ies to the most ly unoaked whites, whi le reds benf i t from the same cool ing inf luence but can often take on more power from the buckets of sunshine that cascade through the v ineyards.
As we move in land, mounta ins burst from the earth on ly to peer down at the val leys they’ve created below, forming dist inct styles of wine un ique to th is sort of geography. Alt i tude a long with steep slopes and thin rocky soi ls mark the terrain of the mountain v ineyards, whi le va l ley f loor geo logy can produce s i tes more r ich in nutrients. Wines from these areas vary distinctly depending upon the part of the wor ld they ha i l f rom and wi l l showcase fresh, r ich power in a mult i tude of sty les.
