You’ll need 3 eggs and 150g spreadable butter

InstructionsPreheat the oven to 170°C and line your cupcake tray with cake cases

1) Place the softened butter in a bowl and beat well with a wooden spoon or electric whisk.

2) Gradually add the cake mix to the butter, making sure it is thoroughly mixed in.

3) Break the 3 eggs into a jug or bowl and add bit by bit to the cake mix until you have a smooth batter.

4) Spoon the mixture into your cake cases.

5) Place in oven and leave for between 18 - 20 minutes. To check the cakes are ready, place a skewer in the middle of the sponge, it should come out clean.

6) Let cakes cool on a wire rack and when completely cool decorate with icing.
