William Despard The Bretzel Trading Company Ltd. is a modern day artisan bakery steeped in tradition. Opened on Lennox Street, Dublin in 1870, the bakery has a historical significance in the area and in particular with generations of the Dublin Jewish community. In 2000 William Despard took over the bakery and re-established its Kosher status. Since then, he has overseen the development some of their most successful products, including sourdough, granary and focaccia. In 2013 the business expanded their baking space by opening a world class bakery in Greenmount Industrial Estate, which features five stone lined deck ovens allowing the business to return to its roots and bake directly on the sole of the oven.

Alan Mc Kenna is currently director in the new tech start up Climote. Climote recently secured a €10 million contract with UK utility company Scottish Power in a real “David and Goliath” story. The business is now one of Europe’s leading companies in a new industry known as “the internet of things.” Previously Alan spent 8 years in the electronics industry with Quantum in Dundalk. In 2000, Alan moved into the construction sector where he built the 3th largest Timber Frame business in Ireland with over 100 employees, only to see the “property crash” and revenues in the business collapse by 95%. That was 7 years ago now but can Climote be his next success story?

Vincent Kieran A member of the Armagh & Monaghan Beekeepers’ Association Vincent has kept his own hives for many years. There are estimated to be 2,200 beekeepers (mostly hobbyists) in Ireland maintaining approximately 24,000 hives. The motivation for keeping bees can varied – the love of honey, aiding pollination, health benefits, stress relief, education and even entertainment, but very few are producing honey on a commercial basis in Ireland.

TITLE: “Putting the buzz back into life”In Ireland there is a growing interest in keeping bees, with associations experiencing an increase in membership and interest in courses. Due to the Irish climate, honey production can be strongly influenced by the weather. Irish honey production can be up to an estimated 250 tonnes per annum with an estimated farm gate value of €2.75 million – but it’s still not enough to meet with consumer demand. Vincent will give a flavour of what’s involved in beekeeping.
