has been a spate of car vandalism in the Bohemiaarea. The damage includes attempts to gain entry,broken wing mirrors and scratches across bodywork.Hastings Police Station and PCSO Andy Hubbardare aware of the situation and Bohemia will be sub-ject to increased high visibility patrols and monitoredby CCTV. Clarence Road crack den – cracked! – Policeseized hundreds of pounds worth of drugs andarrested three people (a 32 year old woman, an 18year old man and a 16 year old boy) at an addresson Clarence Road on Wednesday April 28th. Theyfound 32 wraps of crack cocaine and heroin and asubstantial amount of money. The two males whoare from London have been remanded in custodyand the female, who is local, has been bailed whilstforensic investigations are carried out. PC SimonVarden of Hastings Police said: "This is anotherexample of public information given to the policeresulting in a positive outcome."

Firstly the numbers. We made a total of £807.80. Afantastic result. Last year’s total was slightly higherbut that was helped by five books alone making us£200. We did not have that luxury this year so itmakes our total even more of an achievement.When you think that paperbacks were 30p and hard-backs £1 then I estimate we sold in the region of1500 books. We are donating the money as follows:

l £150 to St Peters Church to purchase six tables (toenable us to carry on the Book Fayre).

l £500 has gone to St Michael's Hospice.l £160 to The Pulse School of Dance – many thanksgo out to Marc Hall who runs the Dance Schoolwhose hospitality and help in the run up to, and dur-ing the event contributed to its success. Quite a fewof the Pulse members attended and bought books.I would like to thank all the people who worked very

hard setting it up the night before, serving on the day

Bohemia Book Fayre Held 20th March 2010 – report by Paul Rummery

In Alexandra Park damage to trees and items of park furniture has been caused by people hanging theirdogs from them by their jaws. The misguided owners of the dogs which are, for the most part, StaffordshireBull Terriers and Staff crossbreeds, think this is some form of training. The poor dogs are often taunted andabused or hung from such a height that they are afraid to fall. Obviously after receiving abusive treatmentlike this from their owners, these dogs can become rather aggressive and it is a sad fact that many of themend up in animal rescue centres or are simplydumped because their owners are unable to copewith them. Two park benches (below, left) wererepaired near the Clarence Road entrance after theywere shredded by claws and teeth. Trees next toHarmer's Pond (below, right) have also been badlydamaged. Martin Jenks in the Parks and OpenSpaces Department at Hastings Borough Councilstated this is a problem across Hastings and St.Leonards, and also said that it is the reason whymany swings have been removed from childrens'playgrounds, as the swing seats were also used inthis way. o If you witness this activity you can call theRSPCA's Cruelty Line on 0300 1234 999.

Gus Golding (pic-tured), son ofBohemian businessman, Mark Golding(who had theOrganic Home onKing's Road) is stillin hospital inThailand afterbecoming extremelyill whilst on holidaywith his girlfriendNatalie Evans. Hisholiday insurancecompany EuropAssistance will not pay out and Gus is stuck on KohSamui with what doctors believe to be Churg Straussvasculitis, a disease of the blood which damages thelungs. Gus is receiving treatment, but there is likelyto be an enormous bill. His family have set up aFacebook page (Search: Help for Gus) and a bankaccount for donations towards his treatment. Latest news from Mark is that Gus is out of a coma,

breathing unaided and eating which is a fantasticimprovement. Best wishes to Gus and his familyfrom everyone here.

RUNAWAY HORSE.

DRIVER SERIOUSLY INJURED

A passing tramcar was the cause of a serious

accident yesterday (Friday) afternoon, at St.

Leonards. A fine but restive horse was drawing a

four-wheeled dog cart along Bohemia-road, when

a tram-car frightened the animal, which shied vio-

lently and bolted. It went at a tremendous pace

down Chapel Park-road, kicking furiously. The

driver, Mr. Edwards, one of the best drivers in

Hastings, tried pluckily, but without avail, to con-

trol the horse. He endeavoured to turn it in the

direction of De Cham-road. Opposite Dr.

Ballingall's house, the horse got its hind foot over

the shaft, and the driver was thrown with great

force, and must have been dragged some distance

along the ground, judging from the fact that the

heel of his boot was torn off. The horse broke free

from the harness, and continued its career down

Chapel Park-road. It was unable to turn down St.

John's-road, and crashed into the iron palings

which surround the basement area of 16, St.

John's-road. So great was the force of the collision

that the palings were wrenched clean out, and the

animal crashed into the area, smashing several

flower-pots, which stood on the window ledge, and

breaking the window. It lay bleeding upon broken

glass and the remains of flower-pots, and breath-

ing hard. Edwards had suffered serious injury. His

left leg was grazed and the knee dislocated, whilst

one side of his face was bruised and bleeding. He

was dazed, but, on the whole had a fortunate

escape. Dr. Ballingal was quickly in attendance,

and bandaged the wounded man. He was conveyed

away from the scene of the accident on a stretch-

er, in a four-wheeler.

Meanwhile some men from Skinner's stables had

arrived on the scene. The horse continually lashed

out, but a man held its head down, and eventual-

ly it struggled to its feet. Its left side was found

to be much cut; it was not, however, very serious-

ly injured otherwise. Eventually it struggled out of

the area without further mishap. The dog-cart was

Edward gave uphis work in localgovernment. Thisgave him moretime to concen-trate on his abidinginterest in history,Charles Dickens,and his work as alay preacher. OnApril 6th 1974Elizabeth openedthe 'Oliver TwistTearooms' onBohemia Roadand ran it for sevenyears. As with so many things in their lives, this wasa joint effort with Edward helping out in many ways.Elizabeth supported Edward in his work as secre-

tary of the International Dickens Fellowship, his workas a local historian and his preaching at theIndependent Church in Albany Road. Elizabeth andEdward were a very close and loving couple. Shewas a devoted mother to Kathleen and grandmotherto Samuel and will be sorely missed by her husband,family and many friends throughout the community,of which she was so very much a part. With great regret we report the passing awayon May 5th of Elizabeth Preston, néeWhite, much loved wife, mother, grand-

mother and mother in law of Edward, Kathleen,Samuel and Reg and dearly beloved sister ofThomas. Elizabeth, who lived for more than 36 yearsin Bohemia, was well known for her good works andwas a valued school governor of ChristchurchChurch of England primary school for 12 years until1995. A kindly, understanding person she was recog-nised as having the 'wisdom of words' a spiritual giftwhich helped people in many difficult situations. Elizabeth was a 'douce' or gentle lady as they would

say in her native Scotland, despite being a descen-dant of Rob Roy MacGregor the legendary highlandhero. So what brought her to St Leonards?In her native Kilmarnock, Elizabeth worked as a

young woman in communications at Prestwick air-port, where she came into teleprinter contact with anRAF national serviceman in London called EdwardPreston. This led to pen friendship, severalexchange visits in 1959-60 and marriage in 1961.The couple set up home in Edward's native Chiswickwhere he worked in local government for manyyears, and where Elizabeth gave birth to daughterKathleen in 1966.The family moved to St.Leonards in 1973, when

In partnership with Pallant House Gallery, Chichester, HastingsMuseum & Art Gallery is delighted to present…Outside In , an exhi-

bition showcasing the work of prize-winning outsider and margin-alised artists. Since the early 20th Century, the terms Art Brut or

Outsider Art have been employed to describe individuals who pro-duce art from the edges of society. Typically having little or no con-

tact with the institutions of the mainstream art world, they rarelyreceive any formal recognition, despite the often highly personal

and idiosyncratic characteristics of their artwork.

Outside In is a groundbreaking project which was set up by PallantHouse Gallery in 2006 in an effort to invite debate on the often

overlooked subject of outsider art by providing a platform for artistswho are marginalised due to health, disability or because their workdoes not fit a prescribed norm. A spokesperson for Outside In said:'The goal of the project is to create a level playing field that enables

access to the art world for all who create, however intuitively orunknowingly, and no matter how obscure. The challenge we areembracing is to reconsider how we define who is and is not an

artist and what is and is not artwork in order to change attitudes inthe mainstream art world…'

The response to the first exhibition in 2007 was overwhelminglypositive. This exhibition was first open to artists just living in Sussex

but has been widened to encompass the whole of the South ofEngland. By 2011 the aim is to make the project national to createa much-needed platform for work in this field to be seen and val-ued. For further information please go to www.outsidein.org.uk

Art for Empty Shop s Although Bohemia Road hasseen much improvement over the last few months(and unfortunately the loss of some antique shopsigns in the process), HBC's Grotbusters team stillhas much work to do. The previous pub sign showed only the pub nameunder the ubiquitous Watney's Red Barrel. The North S tarThe North Star was built in the late 1860s by Joseph

Wisden previously a guard on the South CoastRailway. He was granted a licence in 1871 and thepub opened with a new barmaid, Mary Jane Bellfrom Belfast, at £18 a year. She refused Wisden'soffer of marriage and a present of a hat, after whichhe treated her badly and tried to recover the farefrom Belfast. In court she said she wanted to leavethe North Star because 'he has criticised everythingI have done since I arrived'. She must have beenpopular as several customers turned up to supporther. The case went against the landlord and she wasawarded two guineas. Wisden was hissed as he leftthe courtroom and the North Star lost a number ofcustomers and a good barmaid. Before the NewgateEstate was built there were complaints 'of the hawk-ers and others who congregate around the NorthStar and the fairs that takes place there with a gen-eral turmoil of rough music, roundabouts, shootinggalleries, coconut throwing, brawling and shoutingby a lot of worthless vagabonds'.

The Bohemia Bonfire Boys met here in the 1880s.On November 5th they paraded around Bohemiaand into town to join the main procession beforereturning to burn the guy. The processions started at

Bohemia’ s bravest boy

Six year old Kieran Browning of Bohemia Road hada fantastic day with Blue Watch at our local fire sta-tion on 4th of May. Young Kieran had just undergonesix weeks of radiotherapy treatment for a rare andinoperable type of brain tumour (brain stem glioma),but he still managed to dress in full fire kit and helptest the foam and even take charge of the applianceas officer in charge. Whilst in hospital Kieran's par-ents asked him what he would like to do. His firstword was "firemen". After asking whether this is whatKieran wanted to be, he replied - "No, I want to seethe firemen". It was his school friend, whose dadworks on Blue Watch, that started the ball rolling andafter the long weeks of radiotherapy, a date wasarranged for Kieran to spend an afternoon at theBohemia Road Fire Station with his family; mum, dadand 3 year old brother Jayden. Kieran had a won-derful time and left with a great big smile on his face,loads of photos and some very happy memories.

Kieran's family are understandably extremely proudof him and he is an incredibly brave little boy. He hasamazed everyone with his positive attitude and com-plete lack of moaning! Blue Watch were delighted tohave him at the fire station and we join them andindeed the whole of Bohemia in wishing him and hisfamily the very bestfor their future.Young Kieran setsa brilliant exampleto all of us. May weall try to make themost out of everysingle preciousmoment of our livesand those of thepeople that we love.

The BohemiansPhotographer JJ Waller has been working in St

Leonards since the summer of 2007. Better knownfor his commissioned portraits of top comedians likePaul Merton, Julian Clary and Reginald D Hunter hiswork in St Leonards has become an important docu-mentation of a town experiencing significantchanges. He regularly visits from his base in nearbyBrighton and he and his camera have become afamiliar sight on the streets of both Central StLeonards and Bohemia.

I was also in St Peter’s choir in the days ofBishop Andrews, who showed us lantern slides in hisvicarage in Cornfield Terrace, all about his life inChina. The vicar then was Rev Tarrant. In your maga few weeks ago he was not mentioned, but withBishop Andrews you named a man called Stapley.As I recall, Stapley was a sidesman and ran a shoeshop, near the Bohemia Post Office. There must besome oldies in Bohemia like me, who remember RevTarrant. He was well-liked and the ladies loved him;my mother thought he was great and and gave agood sermon. I have many happy memories ofBohemia Road.

Merrick House Dear Sir, David Russell's article on Merrick House asa Temperance Pub is interesting, though in a way notsurprising as in the late eighteen hundreds and earlynineteen hundreds, temperance was a big thing.Many churches were involved, running such chil-drens' groups as "The Band of Hope" where childrenhad to sign the pledge to join, also the SalvationArmy fought the battle against the demon drink. Itmust have been world wide as you had prohibition inAmerica, and St. Matthews Church had theTemperance Queen of New Zealand in the early1920's. What would these campaigners have madeof today? As for Merrick House, after being a Policestation it became a print shop, printing souvenirhandkerchiefs and the like. The proprietor was a Mr.Jack Leighton, a highly thought-of councillor.

TWO OF BOHEMIA’S MOST POPULAR LADIESare leaving us as Stephanie Sargent and MariaWilliams (pictured) took early retirement fromNatWest on May 28th. Stephanie has been at theSilverhill branch for about 10 years, and Maria hasdone 15 years in two stints. 'We're like a little com-munity bank, that's the way we like to look at it. Weget to know our customers and you build up a per-sonal relationship over the years. It's always sadwhen one of our customers dies.'

Maria, who is originally from Fulham, started work-ing at NatWest in Holborn Circus in 1971, but movedto Hastings for affordable housing. Steph, who isHastings born and bred, started at the NationalProvincial bank in Robertson Street in 1968 at theage of 16. 'When they merged with the Westminsterbank, I moved to Havelock Road where I met Mariain 1972.' The two colleagues have seen the radicalchanges that have taken place in banking at firsthand, from hand-written ledger entries to today'salmost entirely automated operations.

Did they think that anything had been lost in theprocess? 'People don't start at the bottom in the waythey used to. All the standing orders and vouchersused to be processed in the "machine room" at thebranch. This is all done centrally now. Sometimesyou feel there is a loss of understanding betweendebit and credit because of this.' Fortunately evendigital banking still needs a human interface and formany of us Maria and Stephanie have been that wel-come human face. Always immaculately turned outand well coiffed, they are pleasant and efficient. Butthey do have the humour and the bit of restrainededge you need to deal with all kinds of people on adaily basis.

One of the ladies, not to mention any names, has aparticularly wicked brand of underlying humour.Stephanie on the other hand is more of a worldimprover in her initial approach to any situation, per-haps because of having grown up as a child of par-ents who were community leaders in Hollington,prominent in table tennis, a sport she practises her-self to this day. Stephanie and Maria have helpedraise up to £1000 between them in their top seasonover 10 years of support for Children In Need atSilverhill. So what would be on the agenda once theytook early retirement? 'We will be ladies who lunch,frequently, with lots of gardening thrown in.' they say

The girls celebrated 'The Great Escape' with afarewell party on May 22nd at the Hastings & St.Leonard's Angling Association clubhouse when cus-tomers, colleagues and friends came along for achat, a sing and a dance.

The Silverhill branch will stay open and looks set tobecome even busier with the new ASDA opening,says Stephanie. It will be left in the good hands ofJanet, counter manager at Hastings, Debbie andJenny. 'I've got them all well trained in customerabuse,' says Maria with a grin.

A Scandal in Bohemia Planning and All Souls Convent – a personal view by Bernard McGinley

As a building, thecurious temple-like building at the

top of Cornfield Terrace iscompromised neither byits commercial role, norby the ornateness of theSt Peter's complex along-side. Initially built as sta-bles for the Wheatsheafand subsequently ahome to a succession ofbusinesses reflectingmany decades, itremains simple, versatileand effective.

But achievement can beunlearnt. The string ofbuildings in lowerBohemia, between the village and the Museum, is apersistent disappointment, being little but a succes-sion of brick boxes: n the filling station, n the YMCA, n Lidl supermarket, n the fire station, n the police station, n the magistrates' court, n the register office nearby, n St Mary's school, n the ambulance station, n the swimming pool.n Summerfields Business Centre (which has all the gravitas

of a Portakabin), n the newish housing at the top of De Cham Road,

This necklace of mediocrity is a form of evidence.The buildings seem all to vie with one another forlack of distinction, and Hastings Council approvedthem all. The Councilcould have requiredother designs, orhave kept the sitelargely as it was,when MagdalenTerrace andBohemia Housemade the town-scape. Before therewas the YMCA, therewere St Paul'sSchools. BohemiaFarm preceded theambulance station.Urban flux suggeststhat there has to bechange: the changehowever need not be

so remorselessly dull and lacking in merit.

There is plenty of admirable modern architecture:technologically innovative, imaginative, efficient, wellexecuted, beautiful – but not in Hastings. The lack ofgood design in building here since, say, 1945 getssteadily more noticeable. Is that misfortune or isthere another explanation?

Despite the millions of public money spent onregeneration in Hastings, there is little to show for it.The new college on Station Plaza is a bloated andblocky homage to the Peter Jones department storein Chelsea – but without the elegance. In failing toachieve anything worthwhile, the Council and its

advisers also sys-tematically abusewhat is alreadyheld. Hastings'standing as one ofthe finest Victoriantownscapes in thecountry is steadilybeing eroded, bydemolition and ill-judged infill.

In Bohemia, theFarm gave way tothe House, andlater the Mansion.Eventually therewere extensionsand Summer Fieldsschool. In World

War II the Town Hall relocated there, but in 1972 itwas demolished. The fine pine and iron staircasewas taken into Council protective custody – theysoon lost it.

The Councillors may protest that it was not they buttheir predecessors that took these decisions, but thecumulative record is not good, and in law it makes nodifference. (This is the same Council that demol-ished without notice the seafront arch betweenHastings and St Leonards one night in 1895.)

Now they are to decide on the future of All SoulsConvent, Magdalen Road – but what is on offer is notpreservation, but destruction. When the nuns ran it,the Convent was frequently adapted and redefined.Something comparable would be more in the spirit ofthe history of the site. CABE, the Commission forArchitecture and the Built Environment, could pro-vide reputable advice about, say, tenure and eco-housing possibilities. Other local authorities treatthese matters better.

All of the Convent site is within a ConservationArea. That should mean a presumption againstdevelopment – not its salivating opposite. Planningdecisions affecting a Conservation Area should betaken mindful of whether they enhance or preservethe Conservation Area as a whole. Covering theConvent's playing fields with blocks of flats, housesand parking spaces for many hundreds of people, inorder to save a 'Pugin' chapel, does not obviously dothis. Why not save the open spaces instead, inaccordance with the Hastings Local Plan? TheCouncil is clear about this : Trees, gardens, spaces between buildings and other open

spaces (and particularly parks and gardens in conservationareas) which contribute to the character of the area shouldnot be lost. (1)

The policy on Private Open Space is also unam-biguous:Development which would result in the substantial loss of

identified private open space will not be permitted, as theseareas make a valuable contribution to the visual amenity ofthe neighbourhood. (2)

The planning application mentions pleadingly – andirrelevantly – that the language school at theConvent makes no money. However, not manybusinesses operating for roughly one month a yeardo, and language schools aboundlocally. The implication is that thedevelopers should be allowed to treatSt Leonards like the coast of Spain.Tellingly, the planning jargon includes'heritage receptors', but not 'overde-velopment'. Monty Hammond hasbeen in the fairs businessall his life. "I can remem-ber minding a Lucky Dipstall when I was just sixyears old. I'm 63 now".When asked what thetotal value of the whole ofhis fair was, Monty said "Iown nearly all of theequipment at this fair andit’s worth about £1.8mil-lion, but I'd give it all tohave my wife back" KayHammond, also 63, diedin 2008. Monty is a thirdgeneration fair-man. "Iwas born to be a show-man," he says. Monty hastwo sons, Monty Junior(40) and Charles, (34)and a daughter, Tina (41)."I've also got five grand-sons and one grand-daughter. One of my grandsons is also calledMonty". It is usual practice in the fairground commu-nity for names to be passed on through the genera-tions. "My grandfather, Alf Hammond, started the fairbusiness. He had to use horses to move all theequipment around. Later came steam engines.Today, we use articulated lorries."

DODGEMS The fair was well attended when the Village Voice

called – in June last year. "That's because we offersuperb value for money" said Monty. "For a child('child' is someone under 1.2m), the cost is just £5.99to go on as many rides as they like all day".

St Michael's Hospice is helped by the fair. "We dis-tribute 60,000 flyersaround the town includ-ing shops and schools.The Hospice gets 20p forevery flyer returned to usat the fair". Monty calls itthe 'theme park' system:"We've been doing it 5years now."

"The dodgems are thefamily favourite; anyonecan enjoy them. Thetrack and framework onour dodgems is 55 yearsold, and it's still in excel-

lent condition. The track(built by 'Supercar' ofCoventry) was originallyoperated by Botton Brosof Great Yarmouth andwas a regular at Olympiafor the annual BertramMills Circus and indoorfair each Christmas in the1960's. It was here that in1967 the famous modelTwiggy was pho-tographed on the track bythe Press Association, animage which was one of40 of their iconic imagesdisplayed last year at St.Pancras for the joint140th anniversary of thestation and PA. Thedodgem cars are onlyseven years old. The bestdodgem cars come from

a firm called Barbieri inItaly; they cost about £4,000 each. They are stillserviced by the successors to Supercar now inWarwick. The track can extend to 80 feet, but is usu-ally operated at 40 feet.

PREDATOR One of the exhibits is the 'Waveswinger' – also from

Barbieri. It is one of the most popular rides in thecountry and one of only two in the UK, the otherbeing in a park in Scotland; it's only five years old.

Another machine on the fairground is the Predator.This is a renaming – after the Hollywood film andwith appropriate artwork from Welsh artist ChrisGadd – of the Orbiter. This too is one of only two ofits type travelling, though there are several similar. It

was conceived and builtby Richard Wools, inCanterbury. HONG KONGMonty has taken his fair all over country and all over

the world, including Hong Kong, Mainland China,Dubai, Malaysia and Korea. "In the 90s we spentthree winters in Hong Kong travelling around to eightdifferent venues. And in 1996/7 we went to MainlandChina. I had a partner who'd lived in Hong Kong along time and he helped us get into China. We tookall our equipment to Hong Kong first and then acrossthe border to China. It took 36 hours just to cross thatborder! We were there for six weeks and made agood profit. The Chinese people were fascinated byour fair – they had nothing like it then, although theydo now. We had to build a fence round the fair tokeep the majority of people out and only let in thosewho had any money to spend. They had to pay to getin. They then paid to go on the rides, but in the localcurrency, RMBs, which was worthless outside China.We had to go to the Triads to convert the RMBs intoHong Kong dollars!"

KOREA"In 2002/3, we took the fair to Dubai; we were in a

place called Creek Park for 3 months; it wasn't verygood; we lost money there. No alcohol was allowedof course, but we managed to get a drop."

"In 2006/7 we went to South Korea, to a placecalled Busan. They got in touch with us and invitedus over there. They were supposed to pay our trav-elling expenses there and back, but that never hap-pened." How on earth do you move a whole fair tothe East? "That's easy – all the rides can be packedup onto trailers and you just roll them onto a ship androll them off again at the other end. The floors ofmany rides fold up to form the sides of a trailer. Oncewe've put all our stuff on the ship, we fly out a fewdays before it's due to land and we're there when itarrives. Simple.” Monty's also taken the fair toMalaysia – in Kuala Lumpur. "Everything is roll-onroll-off; it's so simple".

GATWICK Where does Monty buy his rides from? "Well, we

actually make some of them ourselves. We've got asite at Copthorne near Gatwick where we assemblethem. We've built 80 'Twister' rides over the past 24years and we've sold them all over, including the US,Ireland, Scandinavia. They retail at about £200k".

"At my depot, I've got a Kiddies Gallopers, amachine made 120 years ago by a firm calledHalsteads. We don't take it out any more, but it's ingood working order. I last used it a few years ago atClaridges Hotel in London in aid of CancerResearch. I intend to let my grandchildren have aride on it."

Fair spokesmanDes FitzGerald said “The line-up will be prettymuch as last year except that the rides etc. willprobably be enclosed on the Oval with a singleentrance and entry by wristband – there will beconcessions for parents of kids who themselvesaren't going on the rides. This is to maintain thefamily atmosphere and prevent groups (not inter-ested in the fair) using the event as a gatheringplace. This has worked wonders in many parts ofLondon, Kent and Sussex, where the safe familyatmosphere has prevailed and kids cannot gomissing so easilly!”

The funfair will be held at The Oval, BohemiaRoad, from Fri 11 June to Sat 26 June; open week-ends from 1pm to 10pm and on weekdays from4pm to 10pm. great historical import to Bohemia, being one of thechief draws to the area and at least partly responsi-ble for the name Bohemia itself. Follow either of therecipes below for instant transportation to the glorydays of Olde Bohemia!

v A SYLLABUB UNDER A COW, the traditionaltechnique: having put a bottle of red or white wine,ale or cyder, into a China bowl, sweeten it with sugar,and grate in some nutmeg. Then hold it under thecow, and milk into it until it has a fine froth on the top.Strew over it a handful of currants cleaned, washed,and picked, and plumped before the fire.v THE SLIGHTLY MORE MODERN MRS. BEE-TON, has a different approach:-Ingredient s l 900ml (1½ pints) Milk l 600ml (1

pint) Sherry or White Wine l ½ Grated Nutmeg; lSugar, to taste

Preparation 1. Put the wine into a bowl, with thegrated nutmeg and plenty of caster sugar add themilk and whisk. 2. Clotted creammay be laid on the top, withground cinnamon or nut-meg and sugar. 3. A littlebrandy may be added to thewine before the milk is put in.In some counties, cider is sub-stituted for the wine. When thisis used, brandy must always beadded. 4. Warm milk may bepoured on from a spouted jug orteapot, but it must be held veryhigh. Sufficient for 5/6 per-sons. Seasonable at anytime.

Ingredient s

l 2-3 medium to large redbeets (about 1 pound)

l water l 2 medium cucum-

bers l 2 scallions or chives l 2 hard-boiled eggs l 1 cup sour cream l 4 cups buttermilk

(kefyras)l fresh dill l salt

Preparation1. Clean, trim and peel beets, cover with water and

boil until tender.

While the beets are boiling:

2. peel cucumbers and chop into small cubes (about1/2 inch);

3. peel shells from hard-boiled eggs and separatethe whites from the yolks. Chop the whites veryfinely.

4. Chop the scallions and mash with egg yolks and1/4 teaspoon salt to release the onion flavor.

5. When the beets have finished boiling, removethem from the water and reserve the liquid.

6. Cool the boiled beets under cold running water (orpop them into the refrigerator to cool for about anhour).

7. When beets have cooled, grate them coarsely.

8. In large mixing bowl, add buttermilk to the beetwater and blend in sour cream; then add beets,cucumbers, egg whites, egg yolks and onions. Stiruntil well blended.

8. Place in refrigerator to chill. Serve with choppeddill as garnish.

Martha was devoted to her husband

Jack, aircraft pilot and minister of

the Houston branch of the Church of the

Credulous Brethren. After four short, bliss-

fully happy years of marriage, God 'called'

Martha to him and she died after just ten

days. Her deathbed promise was to get in

touch with Jack somehow.

She kept her word. She told him she'd

built a church in the sky: 'Martha's Chapel'

and invited everyone to come and pray

there. A month later, a happy and excited

band of true believers packed into Jack's

private jet for the journey of a lifetime. They

were off to Europe to see Le Crazy Horse

show in Paris with a special stopover at

Martha's Chapel.

At 35,000 ft, about mid-way across the

Atlantic ocean, they could all see the bril-

liant white stone chapel through the port-

side windows. Jack brought the plane to a

halt, cut the engines and opened the door.

Everyone except co-pilot Chuck Johnson,

streamed out of the plane and across the

short path to the chapel door. It was truly

beautiful inside and soon everyone was

kneeling down listening to minister Jack's

moving words of thanks for God's miracle.

When six-year-old Isobel woke up she was

horrified to see her ma and pa and all their

friends kneeling in mid-air with their hands

clasped and their eyes closed. She looked

down and saw nothing but clear air all the

way down to the ocean blue. She screamed

and tried to 'run' back to the plane, but

there was nothing on which to run. She

plummeted down, arms flailing, followed

quickly by every single one of the Credulous

Brethren. Chuck watched in horror as his

friends fell to Earth. He restarted the plane

and found himself wondering how he was

going to explain the loss of all 27

passengers.
