In arid climates, such as Afghanistan or the Beqaa Valley of Lebanon,
harvested cannabis has for centuries been dried and sieved to collect its
cannabinoid-rich gland heads. This collected resin powder is pressed into
hashish. In India, fields of unpollinated female cannabis flowers are cultivated
to produce ganja, a potent marijuana preparation of these dried flowers.
In the 1960s, hippies returning to California from India brought with them
this Indian technique for producing seedless cannabis, dubbing it sinsemilla
(see pages 2223).
In Afghanistan in the early 1970s, the
Brotherhood of Eternal Love, a group of
smugglers comprised of surfers originally
from Huntington Beach, California, employed
the extraction technologies developed back
in California to make ultra-concentrated oil
from Afghan hashish. Hash oil, being more
concentrated, was easier to smuggle than
conventional hashish. Forty years later, this
innovation would spark the dabbing craze

FlowersMany cannabis varieties are harvested outdoors
in California in September and October, and
some tropical varieties do not finish flowering
until the winter solstice. Flowers are harvested
and carefully dried and manicured to remove
extraneous leaf. However, the definition of
extraneous is controversial, since some patients
prefer all leaf to be removed, while others insist
that keeping the leaves intact helps to protect
delicate trichomes. The correct approach
typically depends on whether the cost of keeping
those leaves is an issue. The money-is-no-object
approach keeps the smaller leaves to protect the
flowers. Keeping these leaves intact reduces the
likelihood of rupturing the trichomes on the dried
cannabis flowers, which hastens spoilage.

Female flowers produced with this technique are called sinsemilla, or ganja in South Asia where the approach was developed. The technique of preventing female pollination, which was developed in India in the early nineteenth century, consists of culling any male plants before they release pollen. This approach was brought to the United States in the late 1960s and became more widespread in Western countries by the late 1970s. Today, this technique of producing seedless cannabis is widely used, from the Manali slopes of northern India to GW Pharmaceuticals secure, high-tech greenhouse located in a military research facility in the United Kingdom.

GREEK-STYLE YOGURTSuper-creamy Greek yogurt is much easier to make than you might think. The secret is in the draining. Once made, the yogurt keeps for a week. Whole milk results in rich, creamy yogurt.| In a large saucepan, heat the milk to 110F (43 C). Its a good idea to use a candy-making or other cooking thermometer to determine the exact temperature. Add the yogurt culture or goats milk yogurt and stir well.
| Pour the mixture into a large (preferably oven-safe glass) container or into a pressure cooker. Cook the yogurt for 3 hours in the oven or 8 hours in a pressure cooker (see p. 19).
| Line a fine-mesh sieve with a piece of muslin or similar cloth and set the sieve over a large bowl. Pour the cooked yogurt onto the cloth and let it drain into the bowl. Put the bowl, with the sieve on it, in the fridge for 2 to 4 hours. The yogurt will drain and become thick.
| When the yogurt is as thick as you like it, transfer it to a sealed container or eat it immediately.
| The yogurt will keep for up to a week in the refrigerator.

BUTTERELLAImagine a rich, chocolate spread flavored with hazelnuts. Sure, its almost a sinful explosion of calories, but once tasted, impossible to resist.| Heat the oven to 350F (177 C).
| Spread the hazelnuts in a single layer in a shallow metal pan and roast for about 15 minutes. Remove the pan from the oven and let the nuts cool for about 5 minutes.
| When cool enough to handle, rub the hazelnuts between your fingertips to remove the skins. (You could also rub them with the folds of a clean dish towel to remove the skins.) Transfer the nuts to a food processor or blender and pulse for 2 to 3 minutes or until reduced to a fine powder.
| In a saucepan, heat the chocolate and condensed milk over medium heat until the chocolate melts. Stir occasionally to blend.
| Pour the hot milk mixture over the ground nuts and add the cocoa powder, oil, vanilla and salt. Pulse several times or until the paste is smooth and evenly colored. Spoon the paste into a sterilized 8-ounce jar, seal and refrigerate. (For more on sterilizing jars, see page 140).
| The Butterella will keep for up to 2 weeks.

4 ounces (100 grams) whole unsalted hazelnuts in their skins
4 ounces (100 grams) milk chocolate with hazelnuts, broken into pieces
cup (70 grams) unsweetened condensed milk
1 teaspoon unsweetened cocoa powder
1 teaspoon sunflower or nut oil
teaspoon pure vanilla extract
Pinch of salt

T he life of a soldier during the Civil War, whether Union or Confederate, was brutally hard and tremendously bleak in ways that are difficult to fathom.
