CARNATION HOTELS TO ENTER TIRUCHIRAPPALLI Carnaon Hotels, which operates India's Lemon Tree brand, has signed an agreement to manage a new budget hotel in the city of Tiruchirappalli, Tamil Nadu. Located on the city's Rockins Road, the Red Fox Hotel Tiruchirappalli will offer 70 rooms, and will now undergo a complete refurbishment by the Lemon Tree team, before reopening in October 2016. “Trichy has always been a landmark city in the history of Tamil Nadu,” said Raan Keswani, chairman of Carnaon Hotels. “It aracts a lot of leisure and business travelers. This sweet and silky fish dish, which has been cloned at restaurants all over the world, is fairly simple to make, though it's somewhat me-consuming: Nobu Matsuhisa of the Nobu restaurant empire recommends marinang the black cod in a good deal of the sake-miso marinade for 2 to 3 days. SpiceJet has announced plans to mount addional flights to four Indian desnaons for the summer season. The Delhi- based low-cost carrier will increase the frequency of its service to Dharamshala, in the state of Himachal Pradesh, from seven to 13 weekly flights, while the route to Amritsar, Punjab, will double from seven to 14 weekly flights. SpiceJet will also add six more weekly flights to Dehradun, Uarakhand, taking the total frequency to 20 flights per week, and the airline's Delhi-Bengaluru route will rise from 21 to 25 weekly flights. GLOBAL CUISINE INGREDIENTS 3 tablespoons mirin 3 tablespoons sake 1/2 cup white miso paste 1/3 cup sugar Six 6- to 7-ounce skinless black cod fillets, about 1 1/2 inches thick Vegetable oil, for grilling Pickled ginger, for serving In a small saucepan, bring the mirin and sake to a boil. Whisk in the miso unl dissolved. Add the sugar and cook over moderate heat, whisking, just unl dissolved. Transfer the marinade to a large baking dish and let cool. Add the fish and turn to coat. Cover and refrigerate overnight. Preheat the oven to 400°. Heat a grill pan and oil it. Scrape the marinade off the fish. Add the fish and cook over high heat unl browned, about 2 minutes. Flip the fish onto a heavy rimmed baking sheet and roast for 10 minutes, unl flaky. The Palio di Siena (known locally simply as Il Palio) is a horse race that is held twice each year, on July 2 and August 16, in Siena, Italy. The Palio is a year-long strategic bale culminang in two annual events. Each and every Sienese is involved in the Palio in some way; the result of what may seem like ‘just a horse race’ is in fact glory or despair for those who live here. It has been this way since medieval mes. Ten horses and riders, bareback and dressed in the appropriate colours, represent ten of the seventeen contrade, or city wards. The Palio held on July 2 is named Palio di Provenzano, in honour of the Madonna of Provenzano, a Marian devoon parcular to Siena which developed around an icon from the Terzo Camollia. The Palio held on August 16 is named Palio dell'Assunta, in honour of the Assumpon of Mary. The race itself, in which the jockeys ride bareback, circles the Piazza del Campo, on which a thick layer of dirt has been laid, three mes and usually lasts no more than 90 seconds. It is common for a few of the jockeys to be thrown off their horses while making the treacherous turns in the piazza, and indeed, it is usual to see unmounted horses finishing the race without their jockeys. INTERNATIONAL PICK OF THE MONTH-PALIO DI SIENNA The Puri Rath Yatra fesval is based around the worship of Lord Jagannath (a reincarnaon of Lords Vishnu and Krishna). It commemorates his annual visit to his birthplace, Gundicha Temple, and aunt's home along with his elder brother Balabhadra and sister Subhadra. This year, aer 19 years, the Jagannath Temple idols will be replaced by new ones in a ritual known as Nabakalebar (meaning "new body"). The Rath Yatra commences on July 18 and ends on July 30. Devoonal songs and prayers from the Vedas are chanted connuously outside the area where the new idols are being carved from neem wood. Once they're completed, the new idols are carried inside the inner sanctum of the temple and placed facing the old idols. When the ritual is complete, the new idols are seated on their throne. The old idols are taken to Koili Baikuntha and buried there in a sacred ceremony before dawn. It's said that if anybody sees this ceremony, apart from the priests who perform it, they will die. As a result, the state government orders a full blackout of lights in Puri on the night the ceremony is performed. Aerwards, the temple rituals recommence as normal. Flowers and new garments are given to the deies, food is offered, and pujas (worship) are performed. Unfortunately, due to me constraints, this year devotees won't be allowed inside the temple to see the new idols during the Nabajoubana Darshan. The Delhi-based low-cost carrier will increase the frequency of its service to Dharamshala, in the state of Himachal Pradesh, from seven to 13 weekly flights, while the route to Amritsar, Punjab, will double from seven to 14 weekly flights. SpiceJet will also add six more weekly flights to Dehradun, U�arakhand, taking the total frequency to 20 flights per week, and the airline's Delhi-Bengaluru route will rise from 21 to 25 weekly flights. The Amritsar, Dehradun and Dharamshala flights will be operated by SpiceJet's Bombardier Q400 aircra�, while the Bengaluru route will use a Boeing 737.

In a small saucepan, bring the mirin and sake to a boil. Whisk in the miso un�l dissolved. Add the sugar and cook over moderate heat, whisking, just un�l dissolved. Transfer the marinade to a large baking dish and let cool. Add the fish and turn to coat. Cover and refrigerate overnight. Preheat the oven to 400°. Heat a grill pan and oil it. Scrape the marinade off the fish. Add the fish and cook over high heat un�l browned, about 2 minutes. Flip the fish onto a heavy rimmed baking sheet and roast for 10 minutes, un�l flaky. The Palio di Siena (known locally simply as Il Palio) is a horse race that is held twice each year, on July 2 and August 16, in Siena, Italy. The Palio is a year-long strategic ba�le culmina�ng in two annual events. Each and every Sienese is involved in the Palio in some way; the result of what may seem like ‘just a horse race’ is in fact glory or despair for those who live here. It has been this way since medieval �mes.

Ten horses and riders, bareback and dressed in the appropriate colours, represent ten of the seventeen contrade, or city wards. The Palio held on July 2 is named Palio di Provenzano, in honour of the Madonna of Provenzano, a Marian devo�on par�cular to Siena which developed around an icon from the Terzo Camollia. The Palio held on August 16 is named Palio dell'Assunta, in honour of the Assump�on of Mary. The race itself, in which the jockeys ride bareback, circles the Piazza del Campo, on which a thick layer of dirt has been laid, three �mes and usually lasts no more than 90 seconds. It is common for a few of the jockeys to be thrown off their horses while making the treacherous turns in the piazza, and indeed, it is usual to see unmounted horses finishing the race without their jockeys.

INTERNATIONAL PICK OF THE MONTH-PALIO DI SIENNA

The Puri Rath Yatra fes�val is based around the worship of Lord Jagannath (a reincarna�on of Lords Vishnu and Krishna). It commemorates his annual visit to his birthplace, Gundicha Temple, and aunt's home along with his elder brother Balabhadra and sister Subhadra. This year, a�er 19 years, the Jagannath Temple idols will be replaced by new ones in a ritual known as Nabakalebar (meaning "new body"). The Rath Yatra commences on July 18 and ends on July 30. Devo�onal songs and prayers from the Vedas are chanted con�nuously outside the area where the new idols are being carved from neem wood. Once they're completed, the new idols are carried inside the inner sanctum of the temple and placed facing the old idols. When the ritual is complete, the new idols are seated on their throne. The old idols are taken to Koili Baikuntha and buried there in a sacred ceremony before dawn. It's said that if anybody sees this ceremony, apart from the priests who perform it, they will die. As a result, the state government orders a full blackout of lights in Puri on the night the ceremony is performed. A�erwards, the temple rituals recommence as normal. Flowers and new garments are given to the dei�es, food is offered, and pujas (worship) are performed. Unfortunately, due to �me constraints, this year devotees won't be allowed inside the temple to see the new idols during the Nabajoubana Darshan. They must wait for them to be taken out in the Rath Yatra procession.
