2 Vidalia onions, 1 dicedfinely and 1 roughly chopped

3 tablespoons olive oil, divided

1 cup all-purpose flour1 1⁄2 teaspoons baking powder1⁄4 teaspoon salt3⁄4 cup milk1 1⁄2 teaspoons chopped fresh

thyme1 1⁄2 teaspoons chopped fresh

sage2 large carrots, roughly

chopped, about 11⁄2 cups2 cloves garlic, chopped2 tablespoons cornstarch

2 tablespoons flour1⁄4 cup heavy cream6 cups chicken broth1⁄2 cup frozen peas1 rotisserie chicken, meat

pulled, about 3 cups (save the carcass to make stock!)Salt and freshly groundpepper, to taste

In a 6-quart pot, heat 2 table-spoons olive oil over medium heat.Add the finely diced onion and cookuntil tender and just beginning tobrown. With a fork, mix to_getherthe flour, baking powder, salt andmilk into a paste. Fold in the herbsand cooked finely diced onions. Addthe remaining tablespoon of oil tothe pan, then the roughly choppedonions and carrots and cook untilthey begin to soften, about 6-8 min-utes. Add the garlic and cook for 2minutes more. Combine the corn-starch and flour in a small bowl.Slowly add the heavy cream to thecornstarch/flour mixture. Add thechicken broth to the pan and bringto a boil. Whisk the cream mixtureinto the broth and continue cookingand whisking until thickened, about5 minutes. Add the peas and chick-en. Drop spoonfuls of dough into thebroth; you should have about 12.Reduce the heat to maintain a sim-mer, cover and cook for 15 minutes.Season with salt and pepper to taste.

1 9-inch round refrigerated pie crust (from a 15-ounce package)

1⁄4 cup sugar4 teaspoons cornstarch3 cups fresh blueberries1⁄4 cup dried apricots, cut into

1⁄4-inch pieces

Preheat oven to 375° F;lightly butter four 3⁄4-cup (6-ounce) baking cups. Place pas-try flat onto a floured board;invert a baking cup 1⁄2-inchfrom the edge of the pastry;with a small sharp knife, cut outa circle 1⁄2-inch larger than thecup; repeat to make 4 rounds;cut a small hole in the center ofeach. In a medium bowl, com-bine sugar and cornstarch; addblueberries and apricots; toss tocoat; divide equally among thecups. With water, lightly mois-ten the rim of each cup; place apastry round on each; foldunder the edge and crimp.Repeat. Place cups on a bakingsheet.
