INTRODUCTION• Beer is the world’s oldest & most widely
consumed alcoholic beverage.
• The process of making beer is known as
brewing.
• Brewing began around 5400BC in Southern Iraq.
• Brewing involves malting, mashing, boiling of wort with hops, fermentation, storage.
• Beers can be grouped by color, alcohol content, origin and other characteristics.
• The traditional classification was based on fermentation method.
KINDS OF BEERBASICALLY THERE ARE 2 TYPES OF BEER
1. LAGER
2. ALE
LAGER VS ALE LAGER ALE
Relatively new type of beer
Produced by bottom fermenting yeasts such as Saccharomyces uvarum.
Need cooler fermentation temperature.
Longer brew cycle- up to several months.
Lagers are characteristically "smooth, elegant, crisp, and clean.
Thousands of years old
Produced by top fermenting yeasts such as Saccharomyces cervesiae.
Need warmer fermentation temperature.
Quick brew cycle: as little as 7 days.
Ales are usually described as “strong, robusty, hearty ".

DARK PALE BOCK
DARK LAGER• Generally darker in colour.
• The darkness of the beer is due to the presence of roasted malts.
• Lightly hopped despite the colour, not very heavy.
STYLES OF DARK LAGER MUNICH DUNKEL SCHWARZBIER
• Made from Munich malts.• Colour : deep copper to brown.• Low bitterness & malty flavour.
• Commercial examples: Beck’s dark: Braverei beck & co. , Berman. Dark cloud: Mother earth brewing , Capital dark : Capital brewery
• Made from roasted malt.• Opaque black colored.• Low bitterness eith roasted malty
flavor.
• Commercial examples: Samuel Adam’s black lager: Boston beer company Heater Allen schwarz: Heater Allen brewing & co.
PALE LAGER• Light in both colour and body.
• Very pale to golden coloured body with well attenuated body.
• Generally drier and more alcoholic.
• Slightly hoppy and well carbonated.
Lagers were mainly dark until 1840s. Pale lagers were not common until the later part of 19th century when technological advancements made them easier to produce.
STYLES OF PALE LAGERMUNICH HELLES PILSNER AMERICAN LIGHT Pale gold to medium
yellow. Malt: Munich, Pilsner.
Commercial e.g: Victory helles : Victory brewing company heaven or helles: Boston beer company
Pale to golden yellow. Distinct hop aroma and
flavour.
Examples: Pivo hoppy pils: Firestone walker Brewing, Joe’s pils: Avery brewing & co.
Pale straw to pale yellow.
Adjunct aroma and flavour
Examples: Shiner blonde: spoetzl brewery Kingfisher premium lager: United breweries
BOCK• Strong lager of German origin.
• It is rich, complex, malty , low hop type of beer.
• Higher nutritional and alcohol content.
STYLES OF BOCKMAIBOCK DOPPLEBOCK EISBOCK Lighter in colour. Slightly sweet
flavour, moderate to strong malt aroma.
Examples: Summit Maibock: summit brewing company. St. Boisterous: Victory brewing company
Stronger and maltier than maibock
Darker than other bocks. Malty and toasty with
hints of alcohol in aroma & flavour.
Examples: Autumnal fire: Capital brewery St. victorious: Victory brewing company
Much stronger version . Deep copper to dark
brown. Intense aroma with
some fruity notes. Rich and sweet with toasty notes.
Examples: Freeze Ray: strangeways brewing Shiva’s wrath: New Braunfels brewing company

INDIAN PALE ALE PORTER STOUTS
INDIAN PALE ALE• Hoppy beer style.
• Developed in England .
• Hop is the dominant character.
• Tend to be lighter in color.
STYLES OF INDIAN PALE ALE
AMERICAN IPA ENGLISH IPA• Golden amber to light copper
colored.• Uses American hop which provides
high bitterness and aroma.
• Examples: Sierra Nevada celebration: Sierra Nevada brewing & co. Russian river: Russian river brewing company
• Golden amber to light copper.• Similar to American style, with a
weaker hop flavor and lower alcohol content.
• Examples: Blind faith: Magic hat brewing Guinness nitro IPA: Guinness ltd.
PORTER• Very dark coloured as a result of their dark malts.
• Tend to be great sipping beers with dark grainy flavours and
light sweet notes.
• Usually milder than stouts & May include coffee, toffee or
chocolate notes.
• These are precursor to stouts.
STYLES OF PORTERAMERICAN IMPERIAL
ENGLISH BROWN ROBUST PORTER
• Dark in color, lacking in burnt malt taste.
• Presence of malty sweetness and can be complemented by chocolate & coffee flavor
• Examples: Black rhino: The Mussel Inn, Black forest:: Harpoon brewing company
• Dark brown in colour
• Similar to American style. But with lower alcohol content and less malt sweetness
• Examples: Mayflower porter: Mayflower brewing company, Samuel Adam’s honey porter: Boston beer company
• Colour ranges from medium to dark brown.
• Rich dark color with a subtle caramel flavor
• Stronger and more bitter than a brown porter.
• Examples: Anchor porter: anchor brewing company, Great lakes Edmund Fitzgerald’s porter: Great lakes brewing company
STOUTS• Feature noticeable roasted flavour.
• This flavour is created by roasted barley during the brewing process.
• Dry, high alcohol content to hoppy with a low ABV
• Tend to be very dark, though the flavours differ.
STYLES OF STOUTFOREIGN IMPERIAL OATMEAL• Color varies from
dark brown to black.• Have high malt
profile with some chocolate or coffee flavor.
• Hop bitterness is moderate to none and hop flavour is also non-detectable.
• Examples: Lion stout Carlton sheaf stout
• Color ranges from dark brown to jet black.
• Strong stout with a malty flavor & may contain hints of choc. Or coffee flavor.
• Hop flavour is moderate to high with high level oh hop bitterness.
• Examples: Samuel Smith’s IS Bell’s expedition stout
• Brown to black• Flavour consists of
various levels of oatmeal , milk chocolate or creamy coffee.
• Medium hop bitterness and very little hop flavour.
• Examples: Shakespeare oatmeal stout: The rogue Ales Velvet merline: Firestone walker brewing & co.
