    Each year, Victoria welcomes more than 5,000

    guests to the annual Australian International Beer

    Awards and Autumn Beer Festival.The largest brewer in the country is located here

    and the State is home to a growing number of

    innovative microbrewers.

    Microbrewing is a thriving, niche industry leading

    the way in developing innovative, full flavoured,

    premium products which cater for the adventurous

    tastes of the discerning beer drinker.

    The new edition of the Beer Lovers Guide to

    Victorias Microbreweries provides an opportunity

    to focus on the rapid development of the brewing

    sector and to highlight Victorias leading role indeveloping new flavours and tastes.

    Over twenty breweries are featured, with travel

    directions to allow you to explore the range of

    boutique breweries in Victoria and learn about the

    art of brewing the perfect beer. Many also offer

    tours, tastings, accommodation and fine dining.

    The specialist microbrewers have mastered age-old

    methods using all natural ingredients and I join

    them in hoping you will enjoy their range of craft

    brews responsibly.

    For example, a rich,

    pasta or roast whereas acrisp, fresh lager will

    complement a light lunch.

    Spicy meals are best paired

    with an aromatic or pilsner

    style beer but also contrast

    guide to beer terminology

    Ale - Style made with a top fermentingyeast, ales are generally robust and fruity.

    Aroma Hops - Hops rich in oils andchosen for their aroma contribution to the beer.

    Barley - Grain used to produce the maltused in brewing.

    Belgian Lace - The white latticeworkof foam from the head of a beer, left on theglass after a sip has been taken.

    Bitter -A flavour characteristic of beer,contributed by the hops.

    Brown Ale -A top-fermented beer,lightly hopped and flavoured with roastedand caramel malt.

    Body/Mouthfeel - Density of a beer -amount of mouthfeel experienced by the

    drinker.Bottom-fermenting Yeast - Workswell at low temperatures and ferments moresugars. Also called lager yeast.

    Bouquet/Aroma/Nose -Acombination of hops, malt and yeast by-product to create the fragrance of a beer.

    Brew Kettle - One of the vessels usedin the brewing process - to boil the wort -also called a Copper.

    Carbonation - Sparkle caused bycarbon dioxide, created during fermentationor injected at a later stage.

    Cask/ Bottle Conditioned - Yeastis left in the brew to finish the fermentationresulting in its carbonation developingnaturally in the package.

    Conditioning - Warm conditioningdevelops a complex of flavours, cold impartsa clean and rounded taste.

    Craft Beers - Beers produced by small,independent brewers with only traditionalbrewing ingredients such as malt, hops,yeast and water, brewed using a traditionalbrewing processes.

    Cream Ale -A combination of top- andbottom-fermented beers, producing a sweet,lightly hopped brew.

    Draught Beer -Not a beer style, but amethod of dispensing beer.

    Dry Beer - Term for light-bodied brewswith minimal after taste.

    Dry Hopping -Adding extra hops to thebeer during fermentation or conditioning in thekeg to enhance its aroma.

    Esters - Fruity flavours produced by theyeast while fermenting.

    Fermentation - The process of theyeast converting simple sugars in the wort toalcohol and carbon dioxide.

    Filtration - Slightly cloudy afterlagering, beer requires filtering to removeany remaining yeast and other materials.Most Craft beers are non-filtered.

    Grist - Term for milled grains.

    Head - The foam at the top of a beerwhich is the protein pushed out of suspensionby the rising bubbles.

    Hops - The flower of a perennial vine andone of the four key ingredients of beer.

    Infusion - Simplest form of mash - grainssoaked in water.

    Keg - Beer container - usually 50 litres.

    Lager - Bottom fermented beer fermentedat colder temperatures than ales.(From German largen - to store).

    Liquor - Water used in brewing process.

    Malt, Malted Barley - One of thefour key ingredients of beer. Malt is barleywhich has been moistened, allowed togerminate and then dried.

    Mash -A key step in the brewing process,malt is ground and blended with hot water toconvert the starch of the malt to sugar.

    Milling - First step in the brewingprocess. Barley malt is crushed betweenpairs of rollers, separating the husk from themeal body. The meal body is fractured,preparing the malt for mashing.

    Original Gravity - Density of thewort prior to fermentation - a measureof the amount of sugar and solids withinthe wort.

    Pale Ale -Amber or copper-coloured,top-fermented beer brewed using pale malts.

    Pilsner - Term for pale, golden-hued,highly hopped, bottom-fermented beers.

    Pitching -Adding yeast to the wort.

    Porter - Very dark, top-fermented beerfirst brewed in London in 1722. Not asdark as a stout.

    Roasted Malt - Specialty maltsaffecting both the colour and flavour of beer.

    Specific Gravity -A measure of thedensity of a liquid or solid, as compared withthat of water.

    Stout - Very dark, heavy, top-fermentedbeer made from pale malt, roasted unmaltedbarley and often, caramel malt.

    Tannins - Organic compounds containedin some cereal grains and hops. Creates adry sensation on the tongue.

    Top-fermenting Yeast - Works wellat warm temperatures (typically 20 degreescelsius). Unable to ferment some sugars buttolerates higher alcohol concentrations thanbottom-fermenting yeast.

    Water - One of the four key ingredientsof beer. The water must be pure for a crisp,fresh taste.

    Wheat Beer - Beer containing a highproportion of malted wheat.

    Wort - The name given to the sugarextract produced from the malted barleyduring the mashing process.

    Yeast - One of the four key ingredients ofbeer. Yeast is a single cell organism whichconverts the sugars contained in the wortinto alcohol and carbon dioxide.

    Zymurgy - The science of beer brewing.

    An integral part of this quality offering is

    Beechworth Brewery which was first established in

    1855 at the height of the Gold Rush.

    The original Beechworth Brewery (right) operated

    until 1873. Production then ceased and the

    brewerys pioneering spirit lay dormant for 130

    years. In 2003 lifelong brewer Garry Wallace

    brought Beechworth Brewery back to life.

    He wanted to create some living history.

    Beechworth Brewery makes Real Beer. Real Beer is

    natural beer with no added chemicals, preservatives,

    colourings or heading agents. It is not filtered or

    pasteurised and uses local spring water, malted

    grains, hops and yeast. Real Beers are ALIVE and

    bottle conditioned. Expect to find a sediment

    gold miners certainly did!The range of hand-crafted, full-flavoured ales and

    lagers offer a delicious taste of history. Beechworth

    has a long and diverse history of brewing. Come

    and experience the delicious aromas, rich full

    flavours, smooth textures, and long aftertastes that

    are all characteristic of Real Beer.Inspections of the new brewery in the Nicholas

    Hotel are most welcome at any time. Tastings and

    sales are available at the hotel in normal opening

    hours, and through other quality licensed outlets.

    Come and have a few real beers, and then dont let

    the facts get in the way of a good story. Enjoy!

    Of course, the hotel itself dates

    back a little further than that ~

    Bill Bell, the publican, was

    actually born within its walls!

    The brewery is built in the

    traditional style of copper and

    wood, and features the use of

    brickwork from the original Carlton and United

    Brewery (CUB) chimney.

    Bill and head brewer Paul Arthur encourage you to

    try before you buy with tasting trays available.

    A leisurely walk from Melbournes CBD, Bells

    Hotel and Brewery invites you to accompany your

    beer tasting with something from the menu.

    Tours of the showpiece brewery (a far cry from the

    old bath Bill made his first beer in!) are available

    by arrangement and offer a great opportunity to

    enhance your appreciation! Keep an eye out for the

    antique bottling machine.

    Bells Hotel and Brewery has developed an

    assortment of brews. Their infamous Black Ban

    Bitter is so named following the black-listing of the

    pub during the Albert Park protests.

    Bill has recently opened a wonderfully refurbished

    dining room which is attracting a vibrant lunchtime

    crowd come and see for yourself!

    They are more fruity than typical

    Australian beers and most imported

    (high volume brands).

    Because we get more of the grain fruitcharacters in our beers they are

    generally less hop driven and therefore

    not as bitter or harsh, this makes

    them great with food.

    The beers are not sweet in terms of

    residual sugar but are sweet because we getrichness from the grain during the mashing

    process. We are a microbrewery and not a

    boutique brewery ~ i.e. our beers are well made,

    clean and consistent.

    Bintara Brewery is situated on Fraser Road,

    halfway between Wodonga and Rutherglen on theMurray Valley Highway. The brand new brewery

    and caf is an ideal place to enjoy tasting the beers

    of Bintara, discuss the natural hand-crafted brews

    and view the brewing process. The caf is open for

    breakfast and lunch from Friday to Monday with

    tapas and beer tasting platters available.

    Come and enjoy a sit down tasting or just visit to

    see how we craft our brews.

    What do you do if you have a winery,

    a caf, a garden terrace ~ with

    sensational views of Mt. Buffalo and

    the Ovens Valley ~ and a hugenumber of visitors? Naturallyyou

    introduce BEER!

    Boyntons Winery, established by Kel

    Boynton in the late 80s, produces

    wines which are enjoyed both in

    Australia and overseas but Kel alwayshad a burning passion to create a Boyntons Ale.

    So, in 2002 Kel and his wife Janelle decided that it

    would be a good time to embark on introducing a

    Porepunkah Ale and Pilsner ~ to be enjoyed as

    a cleansing drop at the end (or even the beginning)

    of wine tasting sessions.Whilst currently contracting out the brewing,

    Boyntons conduct cellar door sales of the packaged

    beer alongside their range of wines. You can also

    enjoy the brews with a meal at Boyntons Global

    Mezza caf, open from December to Easter.

    Every January as part of the Alpine food and Winefestival, Boyntons have hosted a specialist

    microbrewery festival. A great occasion to sit,

    enjoy the garden, listen to live music and, of

    course, taste several of Victorias finest craft-brews.

    Take the time to drop in, Kel can always be

    convinced to have a wee Ale at the end of a hardday in the Vineyard! Boyntons look forward to

    Bridge Road Brewers found its origins

    in Innsbruck Austria. Brewer/owner

    Ben Kraus, originally from

    Beechworth, learnt his art in theAustrian Alps, where he met his

    partner Maria, who brings her

    Tyrolean flair to the brewery and

    its kitchen.

    Located in the historic Tanswells

    Coach House, in the heart of

    Beechworth, the brewery boasts a largetasting facility and dining area. Bridge Road

    Brewers produce a big range of ten ales, all of which

    are available for sampling from the brewery bar.

    The Austrian influenced kitchen produces the best

    pretzel this side of Munich, as well as a well

    matched lunch and pizza menu. In Summer the

    Brewery utilises its beer garden for moonlightcinema and live music events. Beechworth

    Oktoberfest is held at the brewery in the first week

    of October each year.

    The brewery is very interactive and enjoys the

    opportunity to provide visitors with an insight into

    how the beer is made, partake in a sample or two and

    sometimes be involved in the crafting process itself.

    Bridge Road Brewers aims to produce beers that are

    full bodied and true to style, using the highest

    quality ingredients we can lay our hands on,

    including living yeast strains sourced from some of

    the worlds most famous breweries.

    The infamous Ned Kelly features on the label.An icon of the north-east, having spent much time

    in Beechworth, he was tried in the Beechworth

    Courthouse and then held in the local prison.

    So, in late 2001 when Buckleys Beers

    was conceived, it was considered by

    its founders to have Buckleys chance

    of really making it. A few years onand the Yarra Valley brewery is going

    from strength to strength.

    Making the most of older

    equipment and a 15 Hectolitre

    brewing length, Buckleys Beers

    creates an exciting range of award-winning pilsners, ales and the dark, and serious,

    Buckleys Bitter.

    One philosophy behind the brews is, as the

    founders themselves say, Buckleys is not a beer

    for wimps! The distinctive bitterness and strength

    can be recognised across the range ~ the full-bodied, well-balanced, hoppy flavours will

    definitely hit the spot.

    Add to this the opportunity to observe and assist in

    the brewing process (most Saturdays by

    Mountain Goat started out in Daves

    backyard in the mid 90s as a hobby

    that was verging on obsessive.

    Seven years on, Dave and Cam have

    Our micro-brewery is just a quack

    and waddle from Lake Purrumbete.

    The crystal clear waters are stocked

    with salmon and trout, and are afavourite home for a variety of

    water birds, such as kingfishers,

    teals, musk ducks, grebes,

    cormorants, pelicans and

    occasionally, Australian Shelducks,

    with their distinctive red chests.The brewery is situated in a renovated old dairy ~

    part of Purrumbete Homestead, a Heritage listed

    property. The first pioneers in the Western District

    chose to settle here in 1838, and we believe we

    have taken up some of that pioneering spirit.

    Our traditional styled ales are made from allnatural ingredients, nothing artificial, nothing to get

    in the way of real flavours and aromas. We start

    with fresh rainwater, add malt, hops and yeast.

    Then we fret like a mother duck, until the beer

    turns out just right. Our beers are unfiltered, and

    naturally carbonated in the bottle, which means its

    real beer.

    The Red Hill Brewery is unique, having

    established its own hop yard where

    organically grown hops are nurtured

    Red Hill Brewery offers three main beer

    All are hand-crafted using only water, the finest malt,

    specialties such as the Belgian Abbey style Christmas

    Company the magic has been

    tapped into and from it a

    selection of superb beers hasbeen conjured; the smooth,

    honey coloured 3 Ravens

    Blond, the clearly impressive

    3 Ravens White, the

    oatmeal stout known as

    3 Ravens Black. Also totempt the palate is 3 Ravens Bronze, a traditional

    English style Pale Ale. All beers are available, the

    bronze from cask at the Lambsgo Bar ~ quite the

    beer nerds treat.

    The magical process which produces these brews

    occurs at the rear of Thornbury engineering

    company ~ Zektin. Housed within the premises is a

    fully operational, semi-automated, stainless steel

    12 hectolitre microbrewery.

    3 Ravens pride themselves on the quality of their

    operation and the finished product, which is

    currently available on tap and at specialty outlets.

    Should you hear the ravens calling, small groups

    are welcome to tour the plant, with brewery door

    sales available, on Friday afternoons.

    1200 litre batches and is

    located over three levels.The easily viewed,

    polished copper brewhouse

    is featured inside the

    Scottish Chiefs Tavern

    Brewery and is adjacent to the bluestone beer

    garden, part of the original three storey malthouse.

    Brewer Damian Nippard brews an English inspired

    Pale Ale, a malt driven full bodied Amber Ale and

    a luscious Porter. His beers are brewed with no

    added chemicals, preservatives or added sugar or

    animal derived substances.

    The Scottish Chiefs Tavern Brewery is located in

    Geelong, the gateway to South West Victoria and

    the Great Ocean Road. This National Trust

    classified pub-brewery operates on the oldest

    working brewery site on mainland Australia. It

    occupies a great location close to the recently

    renovated stunning Geelong waterfront. It is close

    to the National Wool Museum and other majortourist attractions in the heart of central Geelong

    and is within walking distance of the Geelong

    Railway Station. The Tavern Brewery offers an

    excellent bistro menu.

    The Tavern first opened in 1848 alongside the

    original Volum Brewery. Later it became thebrewers place of residence until the 1980s when a

    multi-million dollar renovation and brewery

    installation catapulted it to being one of Geelongs

    premium hotels.
