Where we are today - 15 years on in 2017!
“We thank all of our current and past clients for making us the best lab for alcohol beverage analysis in the US. The first ten years flew by and we now enter our 15th year of operations. We have maintained steady growth throughout and have seen many recent expansions - one in 2011 with a move to new facilities and then in 2013 and 2016 with new hires, expanded internship programs in 2014 (still continuing with Eastern Kentucky University) and significant investments in new state-of-the-art analytical instrumentation. We just took on a new classroom/teaching facility and relocated our offices into adjacent space. Sensory analysis and training started in our new classroom

Visits by clients to the laboratory (for example for hands-on-training) or visits by staff to off-site facilities are billed or charged for at hourly rates and include travel and accommodation reimbursements where necessary. Directly or indirectly we can service every conceivable testing need or provide you with information as to who can best help you. There are few laboratories today that can do everything in house and we are no exception, however, we believe that there is no other fully dedicated laboratory or service geared solely to all branches of potable alcohol production. For highly specialized testing we interface with other nationally recognized laboratories to ensure the most accurate test results available in the industry. Our affiliate laboratories are cognizant of our philosophy regarding outstanding dedication and quality as outlined above. We can also recommend our clients to other consultants in the industry to better serve their needs. From this originates our slogan: “When Quality Matters”
All our tests and services are performed using standardized and approved methods. We work with the latest updates from all the official bodies representing beer, wine and distilled spirits with methods specified when requested. To monitor our own performance we also participate in numerous collaboratives and check-sample service programs and other laboratory proficiency testing programs. SAMPLE QUANTITY REQUIRED, SHIPPING CONDITIONS AND STANDARD PACKAGE SIZES
To avoid the compromise of sample integrity it is best to ship samples in the original container used in the market place. For beer this is typically in the US in 355 mL (12 fl. oz.) sized containers (bottles or cans). For wine and spirits this is 375 to 750 mL (and sometimes 1L or more). For any samples to be distilled a minimum of 500 mL is required. For some samples, and for product not yet in a sealed package, less volume may be needed and we ask you to contact us in such special circumstances. Generally samples packaged in other than standard market-sized containers should be filled (in fully sealable plastic or glass bottles or tubes) leaving only a little headspace. Wort samples and spent grain samples can often be shipped frozen.
For comprehensive package testing a set number of containers will be required and this is indicated in the description for the specific test package. If only a single test is requested then generally the above notice should guide in sample quantity required.
It is best to contact us if you have any doubts about the quantity and desired packaging needed in order to avoid sample compromise, data integrity issues and delays in testing.

CATALOG KEY AND GUIDE
The new catalog combines many key tests that were previously listed under separate Beer, Wine or Spirits headings. Two main sections encompassing all products have been added. Retained are separate sections on Microbiology and Gas Chromatography. A new section on Nutritional Analysis covers the new FDA mandates. Malt, Hops and Water can be found under sections with those respective names in the headings.
To simplify the search and reduce catalog numbers the following key may be used to select for specific tests of relevance for Brewers, Wine makers or Spirits producers. NOTE: A complete revision of sample codes was implemented in 2015. In 2017 we have dropped the middle “0” in test codes. Please use the new numbers going forward.

NOW THE ENFORCEMENT DATE IS TO BE MAY 5th 2017
Nutritional mandate rules are now largely in place. There are still some issues with respect to fats (both total and individual fatty acid profiles). The team at BDAS, LLC has fully investigated and researched the rules and
regulations and we suggest you contact us for the details for your particular products and situations.
New databases are under development and you can be sure that BDAS, LLC is involved in that project.
Many nutritional tests are done at an affiliate laboratory and cannot be done on a rush basis - please allow 12 working days in all cases. Prior planning for the nutritional mandate deadlines or for individual restaurant requirements is essential. Most laboratories testing food and beverage nutritional parameters are still being inundated with requests and many beverage producers have missed the pre-enforcement deadline. While we will do our best to accommodate all requests we cannot be held responsible for delays that may occur in this regard. We do strongly urge you to submit samples as soon as possible and at the latest by the end of March 2017 for your existing products. New products should be tested well in advance of release to the
restaurant or other food establishment.
We recommend calling for information on products other than beer.

Prices and Turnaround:
Prices are inclusive, where relevant, of our own processing and shipping fees. Depending on tests, volume demands and outsourcing we usually provide a 7-10 day turnaround. For any samples we send off-site the aim is to attain no more than 15 working days for turnaround time in most instances. Rush fees for two days in-house testing when possible are charged at one and a half times (1.5x) the list price. Please call ahead to discuss how best
we can accommodate your rush requests.
Reports & Confidentiality:
All reports and records concerning your sample results are maintained with the strictest confidence. Unless you indicate otherwise, this also applies to any of the samples we field to our affiliate laboratories [look for the †, symbol in our catalog listings]. You are always welcome to call us with questions related to your own requested test results. We understand the significance of all test results with respect to the fermentation industries and can thus help you understand the consequences related to the data and show you how to interpret and implement the findings in improving your beverage production capabilities. On a consulting fee basis more involved questions, extensive discussions and problem solving or troubleshooting inquiries can be handled as
needed (see below).
Consulting and Project Fees:
While we can supply information regarding your test results in order to honor our obligations to testing samples for existing clients we do need to offer extended consultations based on a fee basis. If discussions will take longer than 10 minutes a credit card payment can commence to cover our time commitment. Consulting fees start at our hourly rate of $150. Site visits, where
a client visits the lab to learn methods or to oversee sample testing, are also charged for at normal hourly rates. When we are travelling for consultation or audits, reasonable accommodation and meal costs are also to be borne by the client. Non-disclosure and confidentiality agreements can be in place as necessary. We can also direct you to expert consultants for issues beyond our capabilities.
Project fees may be involved for specific requests that go beyond our usual testing capabilities. Set up costs and ongoing project fees start at $100 per hour per staff person involved and will also include items needed and purchased by us for the project request. These fees and costs will be discussed with and approved by you before we commence any of the work or continue after preliminary investigations are complete. Further details, catalog numbers and potential retainer fees
may be found on page 4.
Shipping Samples:
Seasoned clients generally know how best to package samples for safe shipment but, sometimes, there are mishaps. New clients might like to contact us first in order that we may provide guidance in the best packaging techniques and to inform as to the best, most economical and the safest way of shipping samples to us. UPS, FEDEX and DHL should be your first choices in the US. All shipments should be marked “Samples for Analysis Only – Not for Human Consumption”. Clearly mark them “Fragile” and “This side up”. AN ORDER FORM MUST ACCOMPANY ALL SAMPLES BEFORE WORK CAN COMMENCE - NO EXCEPTIONS! We cannot start service work unless and until we know specifically and exactly what is being requested of us and completed forms act as a contract of work requested. Shipments from abroad are best packaged in wooden crates/sturdy cardboard boxes (crown-cap boxes work well) and can be handled through

an import-export agency. Please call for our advice as to which companies can best handle samples from your own country (DHL may be an option). Our company does, however, have an Import Permit for “Alcoholic Samples for Analysis Only” and this usually means direct shipping is possible. Foreign samples (as food products) must now be registered with the Federal Food and Drug Administration (the FDA) and this can be achieved by registering for an Account number and code clearance (for each shipment) via the FDA web site. Recent changes may mean we need obtain a
COLA waiver for you.

Report Delivery:
In our attempts to maintain costs and to reduce paper we issue reports electronically in the form of PDF’s. In 2016 we started to attach reports directly within the body of our invoice Emails. This allows for digital payments if preferred and for both client and our tracking of expenses and reports. Should you require the hard copies please indicate so on the Sample Submission Form. Single copies will be mailed if required using normal mailing times. Rush mailing may carry extra costs to offset our expenses. Multiple copies of reports will be charged for at $20.00/additional copy. See page 4 for additional charges involved in our testing and
reporting.
We are happy to prepare reports in any of several languages and can issue you template or example copies to streamline the process. Simple Notary certificates (for State to State official purposes) to full Apostilles are possible. Some additional mailing/processing costs may be involved - see page 4 and also
the “Reports” section above.

Payment and Terms:
BDAS accepts credit card payments through our Accounting Software - a secure line. Currently no fees for using a credit card are passed along to you though this may change. The option to pay via bank transfer is also available. A unique link is also available to prepay and first time clients are asked to prepay at least 50% of their first order request if costs are over $1000 until “credit” is established. Each invoice carries a unique and specific link pertaining to the tests requested - this can be used to pay on line for ongoing non-initial orders. We do also accept checks, purchase orders and provide for direct billing.
Our terms are net 15 days from your receipt of the E-mailed invoice and attached report(s) of your results. Results are issued immediately upon test completion via scanned signed
PDF’s.
ANEXOS, COAs and Apostilles:
BDAS, LLC is a triple certified TTB Laboratory. As such we handle many Certificates of analysis and ANEXO export documents. These are usually Notarized and sometimes forwarded to TTB for final approval. Each country may request different tests so please check with your authorities and with the country for export to confirm what they need and consult with us for specifics. We are specifically recognized by Brazilian authorities where many of our ANEXO certificate reports
are sent.

Contract Projects and Research:
Brewing and Distilling Analytical Services has been involved in a number of specific and private contract projects with major companies involved in the raw materials, packaging, and beverage industries over the past fourteen years. We have provided test confirmation services and sensory project advice and we look forward to many other such contracts with our clients. We are also working on refining chemical methods and especially in simplifying those tests so that they may be more readily applied directly and easily in our clients’ own laboratories. Collaborations are welcomed. As discussed above project costs start at $100/hr plus materials required. Call for full details as each

BDAS, LLC staff are also called upon to help clients start or grow their own laboratory facilities. Such consulting then also incurs

Eastern Kentucky University - Partners in Education
Brewing and Distilling Analytical Services has been involved in discussions with Professor Darrin Smith at Eastern Kentucky University in Richmond, KY (EKU) regarding extended internships, research projects and possibly joint laboratory and teaching ventures. In November 2015 we convened a group of alcohol experts who now regularly communicate on matters of analytical investigation of beverages and provide a high level of expertise for us all to draw upon. Plans are still in the works for our building a
new laboratory facility in Richmond, KY.
Classroom Facilities at Red Mile Road
We recently acquired some space and fitted this out as a 20 person classroom for teaching of Sensory evaluation and to hold key meetings of interest to brewers, distillers and wine makers. We will use and encourage others to offer classes, courses and instruction in this new space which is also to serve as our new
sensory evaluation room.
