Basa Fish in Coconut Sauce
Basa is a mild white fish. This recipe is very quick to make. I serve it with a side of
coconut rice to use up the rest of the coconut milk in the can and the fish is done before
the rice finishes cooking.
4 basa fish filets
3/4 cup coconut milk
2 tsp soy sauce
1/8 tsp hot sauce or chili paste
2 garlic cloves, minced
1/4 tsp salt
1/16 tsp pepper
1 tbsp cornstarch
Cut fish into 3-inch pieces. In a large skillet or wok, mix all ingredients except
cornstarch. Cook on medium-high until fish becomes opaque, approximately 10 minutes.
Stir in cornstarch mixed with a little water to thicken sauce.
Serves 4.
Coconut Rice
1 cup coconut milk
1-1/4 cup water
1 cup basmati rice
1 tsp sugar
In a saucepan with a tight-fitting lid, bring the coconut milk and water to a boil. Stir in
rice and sugar. Cover and simmer for 15-20 minutes. Do not remove lid during first 15
minutes of cooking time.
