GROTTE DI CASTELLANA (CAVES OFCASTELLANA)

This series of grottoes (40 kilometres southeast ofBari) are the biggest ones in Italy. Altamura Cathedral was founded by EmperorFrederick II of Swabia in 1232. DINING

Pugliese cuisine is usually associated withorecchiette (little-ear shaped) pasta accompaniedby cime di rapa (turnip-tops), but there is muchmore to this region than that one dish. The freshvegetables found here are often prepared with oiland garlic and other specialities include fish,homemade pasta and vegetable and cereal-basedsoups.
