70 kilometres from the centre of Bari, this uniquemedieval manor house stands on top of a hill inthe Apulian Murgia, 540 metres above sea leveland 18 kilometres from Andria. It was probablybuilt as a hunting residence by Frederick IIbetween 1229 and 1249 and is today a nationalmonument.

GROTTE DI CASTELLANA (CAVES OFCASTELLANA)

This series of grottoes (40 kilometres southeast ofBari) are the biggest ones in Italy. Altamura Cathedral was founded by EmperorFrederick II of Swabia in 1232. Pugliese cuisine is usually associated withorecchiette (little-ear shaped) pasta accompaniedby cime di rapa (turnip-tops), but there is muchmore to this region than that one dish. The freshvegetables found here are often prepared with oiland garlic and other specialities include fish,homemade pasta and vegetable and cereal-basedsoups. Most dishes are served with very goodbread or taralli (similar to breadsticks). The burrata(mozzarella cheese with a cream centre) shouldnot be missed. Pugliese cuisine with its delicateflavours is generally considered to be amongst thebest in Italy.

Apéritivo venues tend to open late, at around 8pm-9 pm, because in Bari people usually eatdinner at around 9.30 pm-10 pm, and if you arriveearlier you will probably find a lot of empty seats.People generally eat outside because it’s almostnever cold. Bari’s people like to chill-out and chatin Piazza del Ferrarese or along the old walls.
